Item Propostas gastronômicas para melhoria da aceitabilidade alimentar em pessoas com transtorno do espectro autista(2025-03-18) Oliveira, Stefano Diego de; Siqueira, Amanda de Morais Oliveira; http://lattes.cnpq.br/0925121801904264; http://lattes.cnpq.br/1145259319860488Crianças com Transtorno do Espectro Autista (TEA) frequentemente apresentam seletividade alimentar e hipersensibilidade sensorial. Assim, este estágio supervisionado obrigatório teve como objetivo identificar tendências de seletividade alimentar de crianças portadoras do TEA e propor intervenções gastronômicas aplicáveis à melhoria da aceitabilidade alimentar. A pesquisa envolveu 45 crianças com TEA, cujos responsáveis responderam a questionários estruturados abordando aspectos demográficos e alimentares. Foram avaliadas as seletividades em relação a marcas, temperaturas, cores, odores, sabores, texturas e tipos de alimentos, como carnes e vegetais. Os resultados foram categorizados em baixa, moderada, alta, muito alta e extrema prevalência de seletividade, permitindo identificar áreas críticas para intervenção. Observou-se que 73,33% das crianças eram do gênero masculino, alinhado à literatura sobre a prevalência maior de TEA em meninos. A maioria das crianças tinha entre 3 e 10 anos (51,11%), faixa etária vital para intervenções terapêuticas precoces. Ressalta-se a existência de uma forte preferência por alimentos de marcas específicas (42,22%), indicando a busca por segurança sensorial através da padronização dos alimentos. A rejeição a odores fortes (64,4%) e sabores amargos e azedos (57,78% e 53,33%, respectivamente) foi significativa, refletindo a hipersensibilidade sensorial. Em termos de texturas, houve menor seletividade para alimentos secos (40,00%), crocantes (35,56%) e liquidificados (37,78%), enquanto texturas molhadas (44,44%) e macias (48,89) obtiveram maiores índices de seletividade. A seletividade a vegetais foi classificada como de alta prevalência para vegetais crus e cozidos (57,78%), e muito alta prevalência para temperos verdes (73,33%), destacando a dificuldade em incorporar esses alimentos na dieta. Baseado nesses dados foi desenvolvido um guia de aconselhamento gastronômico que foi distribuído entre as famílias participantes buscando colaborar com a inserção de novas formas de apresentação dos alimentos a essas crianças. Concluindo, o estudo evidencia que a seletividade alimentar em crianças com TEA é complexa e influenciada por fatores sensoriais. A aplicação de técnicas gastronômicas adaptadas, como a introdução gradual de novos sabores e texturas, a utilização de apresentações atrativas e a combinação de alimentos preferidos com novos ingredientes ser uma alternativa para melhorar a aceitação alimentar.Item Templo da gastronomia recifense: Mercado público de Casa Amarela(2025-03-20) Martins, Adriana Fernandes; Shinohara, Neide Kazue Sakugawa; http://lattes.cnpq.br/7105928729564845Este trabalho buscou compreender os aspectos históricos, culturais e alimentares encontrados no Mercado Público de Casa Amarela, em Recife-PE e a relação com a gastronomia pernambucana. Através de pesquisas bibliográficas e visitas ao local, o trabalho conta a história do mercado e do bairro em que está inserido, caracterizando sua estrutura, seus insumos e pratos característicos. Foram analisados os boxes do mercado que comercializam carnes, queijos, ovos e condimentos. Os restaurantes localizados na área externa atendem o público do bairro e pessoas em trânsito do entorno do mercado, que oferecem pratos étnicos da gastronomia pernambucana. Através da análise realizada nessa pesquisa, foi possível constatar que o Mercado exerce a função de um dos templos da gastronomia pernambucana, pois é um espaço de congregação, principalmente para a população local que o frequenta diariamente, buscando pratos típicos como cozido bovino com legumes, galinha e costela guisada, bife bovino e galinha assada. Destacou-se também a forte presença de insumos como ingredientes para confecção de empratados e doces a nível doméstico (carne de sol, queijo coalho, jerimum, coco seco e cheiro verde), preservando tradições e costumes da cultura alimentar pernambucana.Item Diversidade de besouros escarabeíneos (Coleoptera: Scarabaeidae: Scarabaeinae) da Universidade Federal Rural de Pernambuco UFRPE/Sede(2024-10-04) Assis Júnior, José Fernando de; Liberal, Carolina Nunes; http://lattes.cnpq.br/7390869942259612; http://lattes.cnpq.br/8327288458916924Scarab beetles are called "dung beetles", this name was given due to the peculiar behavior of some individuals, these beetles modulate and roll some balls made with the feces of other animals. In Brazil, 786 species included in 69 genera are recorded, and in the state of Pernambuco, 16 species distributed in 8 genera are found. The consequences of the behavior and life cycle of these individuals include several environmental services, such as increased nutrient cycling rate in the environment, soil fertilization and aeration, reduced transmission of some vertebrate parasites by killing larvae and eggs, secondary seed dispersal and contribution of biomass to higher trophic levels. However, environmental disturbances can drastically alter the structure of the community, decrease diversity and lead to the loss of ecosystem functions of scarab beetles. The present study aimed to understand the diversity of scarab beetles at the Federal Rural University of Pernambuco. With approximately 147 hectares of extension, the UFRPE Main Campus has areas composed of vegetation from the Atlantic Forest biome. Three collections were carried out in each season, two collections in August and October 2023, in addition to four collections in the months of January, March, April and May 2024, totaling six collections. To capture scarab beetles, 10 points were delimited at the Federal Rural University of Pernambuco, with a minimum distance between points of 100 m. The area was mapped using the AlpineQuest program and at each of the points a set of two pitfall traps was installed, 3 m apart from each other, totaling 20 traps in the study area. Due to the fall of trees and opening of the canopy, the vegetation structure was modified, making it necessary to change some points for collection during the rainy months. For the ecological analysis, we used the Rényi Diversity Profile, the Shapiro-Wilk test, the Levene test and the Tukey test to complement the results of the Analysis of Variance. Analyzing the baits and seasons, we observed that species diversity was higher in the feces pitfalls and in the rainy season. Different combinations of these characteristics confer different competitive capabilities between species, which can reduce direct competition and allow the coexistence of different species. The impoverishment of dung beetle communities implies a disruption in the important ecological services they offer. Thus, the present study aimed to analyze the functional diversity of the dung beetle community at the Estação Ecológica do Tapacurá, PE. Specifically, identify the functional groups present in the community according to functional traits: biomass, food preference and resource allocation. For this, two collections were carried out in 2023, one in February (dry season) and another in March (rainy season), at ten points, distributed to form a transect, with a minimum distance between points of 100m. At each point, a set of two pitfall traps were installed, baited with human feces and rotted bovine spleen and exposed for 48 hours/collection. A total of 940 beetles were collected, 763 from meat baits (352 in the dry season and 411 in the rainy season) and 177 in the feces baits (90 in the dry season and 87 in the rainy season). 19 species were identified, belonging to eight genera: Anomiopus, Ateuchus, Canthidium, Canthon, Coprophanaeus, Deltochilum, Dichotomius and Eurysternus. Beetles were classified into functional groups based on size according to biomass (large and small), resource allocation and food preference. The study showed that the community is mainly composed of small beetles, paracoprids or telecoprids, generalists or scavengers, while endocoprids and coprophages were represented by a single species each. The lower number of beetles in the feces bait suggests a low abundance of mammals in the region, its main source of resources. Highlighting the functional diversity present among dung beetles in the region and the importance of continuing to monitor these communities to understand their role in ecosystems.Item Os números da obesidade no Brasil: uma reflexão sobre causas, impactos e enfrentamento(2024-03-08) Freitas, Ana Beatriz Maia de; Souza, Andréa Carla Mendonça de; http://lattes.cnpq.br/7930636205116799Obesity, a multifactorial chronic disease, is defined as an accumulation of abnormal or excessive fat that can be harmful to health, affecting people of all social groups and ages. It is contemporary, being spread in developed and developing countries around the world. Its occurrence causes, in addition to the consequences of obesity itself on quality of life and health, the development of other comorbidities that are associated with it. Heart disease, high cholesterol, type 2 diabetes, sleep apnea, osteoarthritis, cancer and mental illnesses are triggered or worsened by the presence of obesity. Among the causes of the pathology are the increase in the rate of sedentary lifestyle and the maintenance of eating habits increasingly rich in ultra-processed foods with high levels of sugar, fat and sodium. Likewise, the analysis of the social determinants of obesity is addressed, which contributes to the development of reflections and promotion of the identification of effective solutions to issues that refer to gender, race, level of education, economic inequality and other situations, given that the intensity of chronic non-communicable diseases such as obesity varies according to certain contexts. Based on the aspects mentioned, the objective of this study is to carry out a bibliographical review addressing the main definitions, numbers, projections, causes, impacts and treatment measures available to combat obesity in the country. This is a literature review with searches in online databases such as Google Scholar, PubMed and SciELO, as well as websites of the World Health Organization, Pan American Health Organization and Ministry of Health. The selection criteria were scientific productions with freely available texts, in English and Portuguese and with the time frame of the most accessed publications in recent years. It can be concluded that so far, it is not possible to observe a decrease in the numbers of overweight and obesity in the country. The social determinants of obesity such as gender, social class, income and educational level, for example, must be debated in order to establish strategies to combat the pathology in the population. State intervention with the development of public policies is crucial in the advancement and promotion of a society with healthy habits and which has as one of its pillars the quality of life and effective reduction in obesity rates and its associated diseases.Item Educação alimentar e alimentação escolar: um diálogo entre as políticas públicas e as práticas educativas de uma escola municipal do Recife(2019-12-18) Oliveira, Marta Raquel do Nascimento; Faria, Andréa Alice da Cunha; http://lattes.cnpq.br/9061416520602275; http://lattes.cnpq.br/3637510999034508This monograph aims to investigate the eating practices and educational practices of the Early Years of Elementary School of a School of the Recife Municipal Network, in order to contribute to the articulation of actions of Food and Nutrition Education to school practices. School lunches are one of the actions of EAN in schools and should be linked to classroom teaching, considering the relevance of healthy eating to learning. Thus, to meet the objective of the research, an Action Research was performed, since it enables the participation of the research subjects to the identified problem, in order to elaborate strategies of EAN to school practices. For this, the students' eating habits were identified during the lunch and break interval; the course of menu elaboration, production and distribution of the meals until the school; Food Education practices were identified in the classroom curriculum, and analysis of the legal frameworks that justify and subsidize the actions of Food and Nutrition Education in educational institutions, and the curriculum of the Municipal Network. Two semi-structured interviews were conducted with the lunch girl and the school coordinator. They have a varied feeding habit, in general they can feed on feces (coprophages), decaying meat (necrophages) or decaying fruits (saprophages), or even on more than one type (generalist). Besides that, they play a very important role as bioindicators, as they are highly sensitive to environmental changes, undergoing changes in the structure of their community. Deforestation and fragmentation of forest environments are some of the most damaging disturbances to biodiversity by which scarab beetles are heavily affected. The Atlantic Forest is one of the Brazilian biomes in the most critical state of degradation, listed as one of the 36 biodiversity hotspots. The objective of this work was to know the diversity and period of activity of scarab beetles in the Atlantic Forest fragment of Tapacurá Ecological Station (8° 02′ 27.8″S and 35° 11′ 46.3″W), located in the municipality of São Lourenço da Mata, Pernambuco. Two samples were carried between the months of february and march, and march and april, where ten points were determined, distributed in order to form a transect. At each point, a set of two pitfall traps was installed, totaling 20 traps per area. Pitfalls were baited with fresh human feces and rotten bovine spleen. A total of 940 individuals distributed in five tribes, seven genera and 18 species of Scarabaeinae were captured. The most abundant species were Canthon terciae (34.47%), Deltochilum kolbei (23.40%) and Dichotomius guaribensis (14.47%). Of the 18 species collected, only 12 occurred in sufficient numbers to be classified in trophic guilds. Among these, seven were considered necrophagous , five generalists, and none were coprophagous. As for the period of activity, four species showed diurnal activity, four showed nocturnal activity, and another four species were considered of continuous activity. Rényi’s diversity profiles showed that the carrion bait had a greater diversity of species taking into account the most abundant species, and the feces bait was more diverse considering the rarest species.
