    The practical experience at Temakeria Teichi during the supervised internship provided an experience in Asian cuisine and food service management. During this period, several essential tasks were completed, such as inspecting received products, which followed strict criteria of quality and hygiene, and the pre-preparation of food, which included cleaning, cutting, and portioning to ensure uniformity and safety in food. Furthermore, assisting customers highlighted the importance of communication and group collaboration to ensure the effectiveness of the service. The temakeria has different sectors, including the dining area and pantry, and employs nineteen employees who work in shifts, following a 6x1 schedule. The practice acquired not only added theoretical knowledge, but also enhanced essential skills for dealing with challenges in the job market, contributing to academic formation and professional progression in the fields of gastronomy and management.

    The growing number of Japanese food restaurants in the northern part of the city of Recife, the breaking of paradigms regarding the taste of this gastronomic specificity, as well as its relationship with the consumption and eating habits of diners justifies the elaboration of this work, which aims to study the fads and food adaptations present in the habits of the population, related to the consumption of Japanese food, whether they really appreciate it or whether theyare influenced by marketing and culinary fads. In order to carry out data collection, the questionnaire was used, in addition to unsystematic and non-participant personal observation, based on these analyzes and for categorizing the data, graphs and tables were elaborated that enabled the results and discussions to be made feasible. . It was noted that there is a total adaptation of taste by Japanese food consumers and that there are also other factors that are associated with this frequency in restaurants. Another fact to be highlighted is the total possibility of the presence of a Home Economics professional working in the studied markets, with broad and active training in this area of research.

    The present business plan aims to analyze the viability of commercialization of the frozen Niguiri in the supermarkets of the State of Pernambuco. As a methodology was carried out a field survey being necessary to consider the market of fish and salmon processing, Japanese cooking and the consumption of frozen by Brazilian consumers. The study brought a general business plan considering from its legal description, to the operational, the marketing and financial plan, analyzing the viability of the business. A study of the scenarios and strategic evaluation of the proposed business was also carried out. In the study carried out on working capital for the opening of Niguiri Express, it was verified that the company can count on an average period of inventories of 8 days, an average term of receipt of 21 days and average term of payment of 19 days. The company's Net Working Capital was verified at R $ 503,282.00, with a 29-day operating cycle and a 19-day cash cycle, with a Working Capital Requirement of R $ 31,600.00. working capital and third-party capital through financing and long-term loans with banks. The results demonstrated that the venture is economically and financially viable, with a profitability of 83.09%, a net margin of 22.50% and a payback of 1.23 years, a time of return on investment that is positive for the proposed business. From the cash flow projected for Niguiri Express and considering the SELIC rate of 6.5%, the calculated EVA was R$ 3,819.87. The calculated IRR for Niguiri Express was 9%, which demonstrated the viability of this venture.
