    Aproveitamento integral do fruto da passiflora: o maracujá em suas diversas possibilidades de consumo

    O maracujá (gênero passiflora) é um tipo de trepadeira sublenhosa cuja fruta é utilizada em diversas preparações da gastronomia brasileira e as flores e frutos são utilizadas na produção de fármacos e cosméticos. A Passiflora spp está amplamente distribuída no Brasil, região do globo considerado um dos principais centros de diversidade do gênero botânico, o que explica o amplo uso alimentar e farmacológico na cultura brasileira. O objetivo deste trabalho é explorar as diversas formas de realizar o aproveitamento integral desta espécie botânica, planta de nome científico Passiflora. Para tanto desenvolveu-se pesquisa de fontes bibliográficas e de mídia digital, e a produção de alimentos a partir do fruto desta planta, investigando as diferentes formas e receitas para o aproveitamento das diferentes partes da composição do fruto da planta, por fim são apresentadas várias formas de aproveitamento das seguintes partes da planta do maracujá: casca, sementes, polpa, arilo carnoso, entre outros. Tanto a revisão bibliográfica quanto a execução prática das produções demonstrou a versatilidade e grande possibilidade de aproveitamento desta fruta, para além do uso tradicional, em produtos como: geleia, farinha da casca, farinha das sementes, compota da casca do maracujá, Arílo Carnoso a milanesa, chá de casca de maracujá que serão descritos e apresentados ao longo deste trabalho baseados em observações, achados e substanciado por descrição da literatura científica relacionados ao tema Passiflora e suas diferentes espécies.

    Sobras de alimento à luz da Lei 14.016/2020: se sobra, para onde vai?

    No Brasil, a alimentação é um direito constitucional e fundamental à vida, tendo os estados e municípios papel fundamental na segurança da alimentação da população. Nesse sentido, como forma de dar um destino mais adequado às sobras alimentares em restaurantes e similares, foi promulgada em junho de 2020, pelo Governo Federal, a Lei nº 14.016, que trata do combate ao desperdício de alimentos, com a promoção de doações dos excedentes alimentícios para o consumo humano. Com base nessa lei, e compreendendo ser a fome um problema mundial, busca-se com esse trabalho verificar as políticas de destino dessas sobras alimentares em restaurantes e similares na Região Metropolitana do Recife/PE, gerando dados que possam ser utilizados para adoção de medidas no combate ao desperdício e no destino mais adequado e de forma segura desses alimentos. Foi utilizado, para isso, um questionário com perguntas acerca do que trata a Lei nº 14.016/2020, ajudando desta forma também a divulgá-la. Os dados obtidos demonstram que há desperdício de alimentos in natura em 32,3% dos restaurantes, produtos industrializados vencidos em 6,5% e/ou sobras de refeições prontas para consumo em 60% dos restaurantes pesquisados, sendo o lixo o destino prioritário destes alimentos. Ainda, notou-se a falta de conhecimento de tal lei, bem como da cartilha da ABRASEL por grande parte dos restaurantes, fatores que influenciam diretamente na doação dos alimentos. Dessa forma, percebe-se que a destinação de alimentos e sobras alimentares no Recife e Região Metropolitana ainda encontra-se em um cenário preocupante, gerando grande quantidade de lixo e deixando de contribuir para programas que visam a garantia da segurança alimentar.

    Análise de condições de comercialização de peixes nos principais mercados públicos de Recife

    In the global context, fish are a crucial source of animal protein for millions of people, with the fishing industry playing a significant role in the economies of various countries, especially in coastal regions. However, global fish production faces challenges such as overfishing, environmental degradation, and the need for sustainable practices. In Brazil, fishing is also a highly relevant activity, with emphasis on the North and Northeast regions, which have vast coastal areas and a rich diversity of marine and freshwater species. The country ranks as one of the largest fish producers in the world, with Brazil being a major exporter of fish products, in addition to meeting the growing domestic demand. However, challenges related to the management of fishery resources, sustainability, and product quality still need to be improved. Recife fits into this context, with a significant fishing economy, both for internal consumption and for the trade of fresh and frozen fish. The Cais de Santa Rita and other local public markets play essential roles in the distribution and sale of these products. However, the city faces structural and operational difficulties regarding the handling and preservation of fish, which directly affects the quality of the products sold and, consequently, public health. This study aims to gather information from the main public markets in Recife and analyze which areas need improvement in the sale of these fish.

    Experiências vividas com a agricultura urbana e a alimentação saudável na periferia do Recife

    This memorial aims to bring together the experiences experienced during the Bachelor's Degree in Agroecology with an emphasis on Peasantry and Popular Education (Bacep). My starting point for writing was my memories, reviews of work and immersions carried out, as well as consultations with texts and books. Urban agroecology has several challenges, but it is necessary to act immediately, as it is necessary to seek strategies together with the whole society to improve our world. This work brings my trajectory in urban agriculture and shows that it is possible to produce efficiently using alternative technologies with the aim of promoting food and nutritional security for people living in urban environments, especially on the outskirts of Recife. Agroecology is carried out by several hands and the struggle of social groups shows that unity is strong, always seeking to strengthen the peasantry and popular education. Thus, this memorial not only records my personal experiences, but also celebrates the possibility of making meaningful changes in our relationship with food, the earth and, ultimately, the planet. May each step taken towards urban agriculture and healthy eating inspire others to follow similar paths, guided by the commitment to preserving the health of our planet and ourselves.

    Educação ambiental para sustentabilidade e o consumo de alimentos agroecológicos no município de Bonito-PE

    The present project was developed in a municipal school in the North Strait of Bonito - PE, articulated with the major action of the Technological Incubator of Popular Cooperatives of UFRPE (INCUBACOOP), which has been developing action in the county since 2016. The centrality of actions developed are related to the preservation of natural agroecosystems, as well as to the consumption of healthy and agroecological foods based on agroecology, education for environmental sustainability and solidarity economy. The general objective of the present proposal is to develop environmental education actions in a rural school, in the county of Bonito-PE, considering its socio-environmental characteristics and the work already developed in county by INCUBACOOP / UFRPE, aiming at raising the awareness of teachers, students and school community for the consumption of healthy food and for the agroecological transition on the farmer’s properties / participants in the school community. The proposal was developed through a partnership with the county of Bonito, with the support of the respective secretariats of the Environment and Education, and Coletivo Aimirim. This extension project had a qualitative and participatory methodological basis, and was guided by action research references (THIOLLENT, 1985), (BRANDÃO, 1985), (MORIN, 2004) among others and tools - application of a questionnaire with teachers and students, meeting with student families, exchange and practical activities at school. As a final result, we obtained as a result a greater involvement of youth in themes related to the environment, as well as a broader process of raising awareness among farming families regarding the reduction, or even elimination of the use of pesticides, preserving for food and nutritional sovereignty and security of the region, as well as, a basic formation of the ecological processes of good practices in the social and political praxis, valuing its territory and its local agrobiodiversity.

    Relatório de Estágio Supervisionado (ESO), realizado na Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco - ADAGRO e na Vigilância em Saúde do município de Olinda - PE

    As a curricular competence for the undergraduate degree in Veterinary Medicine, the ESO's essence is to provide the student with practical experience in one or more specific areas concerning the area of preventive veterinary medicine. In this work, the activities carried out in monitoring the ADAGRO-PE and VISA inspectors of the municipality of Olinda were reported, which provided the technical knowledge of the way of acting and the prerogatives of the two bodies in relation to public health. The ESO was experienced at two different times, namely, from February 14 to March 28, 2022, at the Agricultural Defense and Inspection Agency of the State of Pernambuco, covering 210 hours, the remaining 210 hours were completed in the field activities with the Health Surveillance of the municipality of Olinda, from March 29 to May 6 of this year, thus making a total of 420 hours of practical activities. From the numerous activities monitored, the approach to the PACs that were supervised by the ADAGRO team in establishments of animal products in the state of Pernambuco can be highlighted as the second chapter of this work. PAC are a set of good practice procedures with the objective of guaranteeing the production of safe and quality food, being a management tool that will involve the elaboration, application, registration, verification and review of processes carried out by the company. Thus, the focus on this theme was to address the tools that the Inspection uses to audit establishments of products of animal origin, ensuring their safety, paying attention to the main non-conformities of the inspected PACs, so that a profile of these establishments was drawn, showing the four Self-control programs that were repeated in more than one establishment inspected with non-conformities, in addition to showing the close relationship that self-control programs have between them and the control tools, not being possible to observe them in isolation, as well as their importance in production of products of animal origin.
