Lagosta para exportação: uma revisão de literatura(2023-09-15) Costa, João Paulo Brito da; Medeiros, Elizabeth Sampaio de; http://lattes.cnpq.br/5998863169551704; http://lattes.cnpq.br/7636748535896702The Estágio Supervisionado Obrigatório (ESO) is a discipline of the eleventh period of the Bachelor of Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE), with a workload of 420 hours. During the internship, the student João Paulo Brito da Costa, did na internship at the company Carapitanga Indústria de Pescados LTDA, under the guidance of Doctor Elizabeth Sampaio de Medeiros and supervision of Veterinary Doctor Tatiane Ribeiro de Freire. The activities took place from May 30 to August 11, 2023, with a workload of 40 hours per week in the Quality Control sector. The objective of the internship was to acquire practical knowledge in the inspection of food of animal origin, especially fish, with a focus on the Quality Control sector. Several activities such as laboratory analysis, temperature control, control of chemical residues, evaluation of organoleptic properties, etc. were carried out, collaborating to consolidate the importance of knowledge in quality control that the veterinarian must have.
