    This report aims to describe the experiences and activities developed during the Mandatory Supervised Internship (ESO), carried out from November 1, 2024, to January 22, 2025, under the orientation of Prof. Dr. Elizabeth Sampaio de Medeiros and co-orientation of Prof. Dr. Maria Betânia de Queiroz Rolim. The internship was conducted at the Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO) and a Fish Processing Unit (FPU), both located in Recife-PE. At ADAGRO, under the supervision of veterinary Dr. Flávio de Oliveira Silva, activities included periodic visits, permanent inspections, preliminary assessments, and sample collection for laboratory analysis in various establishments across the Recife Metropolitan Region. At the FPU, under the supervision of veterinary specialist Ana Magna de Carvalho Almeida Lins, tasks involved reading and studying the Self-Control Programs (SCP), filling out technical spreadsheets, monitoring the processes of receiving and shipping products and evaluating raw materials. The internship reinforced the importance of veterinary professionals in promoting public health and ensuring the quality of animal products, highlighting their contribution both as inspectors in the public sector and as quality control agents in the industry.

    Fish consumption in Brazil has great socioeconomic and nutritional importance for the Brazilian population. Its commercial fish farming activity plays a fundamental role in generating employment and income, also used as a subsistence activity promoting the growth and expansion of the fish trade, in addition to being a healthy and nutritious food that has quality protein sources. vitamins and a variety of nutrients. Therefore, the present work aims to analyze and verify the conditions and facilities of sanitary environments and the change in fish prices in supermarkets and public markets in the metropolitan region of Recife. In view of this, unscheduled visits were carried out in different locations, carried out between the months of October and January 2024, aiming to observe and investigate the hygienic conditions of the stored products. Twelve supermarkets were visited, plus the Boa Viagem public market and the drowned market. The public market had the worst sanitary conditions, and the fish sold there is essentially saltwater, with higher prices. Salmon is the most expensive fish, and overall this work points to an inflation scenario above IPCA forecasts.

    Análise pós-pandemia das condições de comercialização de crustáceos e moluscos em mercados públicos e supermercados na região metropolitana do Recife.

    Molluscs and crustaceans are widely traded and consumed in the coastal region of Pernambuco, being part of the region's tourist profile as a gourmet tradition, generating income in a wide range of products in the metropolitan region of Recife. Taking these aspects into account, the present work addresses the conditions of infrastructure and commercialization of crustaceans and molluscs in some neighborhood supermarkets, markets and public fairs in the Metropolitan Region of Recife (RMR), in a post-pandemic scenario, and draws a comparison with some data from the pandemic period (COVID SARS 19). After collecting and analyzing data, a comparison was made of prices and installation conditions in places previously visited during the pandemic period. Visits were carried out to some establishments in the metropolitan region of Recife, to determine which were in adequate hygienic and sanitary conditions, in accordance with legislation, also observing the infrastructure, and also analyzing the price differences between the establishments visited. The research was carried out in 11 establishments, between October 2023 and January 2024, which coincides with the high tourist season in the region (summer). Regarding prices, it is clear that the prices of these types of fish have increased in relation to the pandemic period. There was also an expansion in the way they were offered, with emphasis on paella, which became more common in establishments. Regarding supply/refrigeration conditions, old defects still persist in the market, especially in public markets. It is safer to purchase these items in supermarkets.

    Academic monitoring is the teaching-learning process, which develops the autonomy and full training of monitors, encouraging integration between students and teachers, where it was possible to experience a little of what the word teaching means. During the theoretical and practical classes, he was able to experience and learn about this division of patent existing in the educational institution, known as student and teacher. The monitor-student contact is of great importance for the transfer of knowledge acquired about the discipline in which he acted as monitor, the entire process was of great importance for opening future actions of the student in the professional training phase. The discipline of Integral Use of Fish aims to transfer theoretical and practical knowledge in the best way, so that it is absorbed by the student with the highest level of learning. The theoretical classes were held in the classroom, located in the CEGOE block (Obra-School Graduation Teaching Center) at the Federal Rural University of Pernambuco, after each theoretical class, a practical class was held in the fish processing sector. is located in the same institution, at the Professor Johei Koike Fisheries and Aquaculture Base, where all the previous theoretical subject taught in the classroom by the professor responsible for the discipline, Professor Paulo Roberto, was put into practice. The Fish Technology Laboratory (Latpesc) is located in the Department of Fisheries and Aquaculture, where students learned about and experienced the use of technological equipment used to produce fish by-products and derivatives. From monitoring, I was able to participate in events that contributed to the growth and knowledge of my academic curriculum, where I taught the Technical Workshop on Filleting and Preparation of Breaded, at the XVIII Meeting of Organic Producers of the Northeast, held in the Marreco community, located in the city of Lagoa de Itaenga, Zona da Mata, North of Pernambuco, events like this, which contributed to my academic and professional growth.

    The Estágio Supervisionado Obrigatório (ESO) is a discipline of the eleventh period of the Bachelor of Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE), with a workload of 420 hours. During the internship, the student João Paulo Brito da Costa, did na internship at the company Carapitanga Indústria de Pescados LTDA, under the guidance of Doctor Elizabeth Sampaio de Medeiros and supervision of Veterinary Doctor Tatiane Ribeiro de Freire. The activities took place from May 30 to August 11, 2023, with a workload of 40 hours per week in the Quality Control sector. The objective of the internship was to acquire practical knowledge in the inspection of food of animal origin, especially fish, with a focus on the Quality Control sector. Several activities such as laboratory analysis, temperature control, control of chemical residues, evaluation of organoleptic properties, etc. were carried out, collaborating to consolidate the importance of knowledge in quality control that the veterinarian must have.

    Relato de experiência: importância dos procedimentos operacionais padronizados no combate e prevenção de pragas

    The Estágio Supervisionado Obrigatório (ESO) is the obligatory discipline of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE) and aims to describe all the activities of the student, lived in the experience of the internship of 420 hours. The ESO was held at Carapitanga Indústria de Pescado do Brasil LTDA, located in Jaboatão do Guararapes - PE. At the company, the steps taken were: product deglazing; receipt of fish; improvement; packaging; transport and processing, complying with the provisions of its HACCP (hazard analysis and critical control points); and temperature control throughout the production process. All actions were monitored by Carapitanga's Quality Control (CQ) team. ESO supervision was carried out by Veterinary Doctor Tatiane Ribeiro Freire, QC Coordinator. The activities were carried out from November 8, 2022 to March 3, 2023, during the Mandatory Supervised Internship discipline, under the guidance of professor Dr Maria Betânia de Queiroz Rolim. The internship is of great importance, as it provides technical experience in the face of the responsibility of the responsible technician, a veterinarian, in the fish processing industry, under the control of the Federal Inspection Service.

    The present work has as general objective to report the period experienced in the fulfillment of the subject 08525 - Compulsory Supervised Internship (ESO) of the Bachelor's Degree in Veterinary Medicine and as specific objective to describe the activities and procedures performed by the quality control team in the production sector at Carapitanga Indústria de Pescados Brasil. The ESO took place from April 05, 2021 to June 17, 2021, at Carapitanga Indústria de Pescados Brasil LTDA, located in Jaboatão dos Guararapes (PE), under the supervision of the Veterinarian Tatiane Ribeiro Freire. All the activities were performed during the course 08525 - Compulsory Supervised Internship of the Veterinary Medicine Course of the Federal Rural University of Pernambuco (UFRPE), under the supervision of Professor Elizabeth Sampaio de Medeiros. The ESO provided ample technical knowledge about fish inspection, from the means of cultivation to the shipment of the final product; of the methods of action employed by the quality control team in all the stages related to good manufacturing practices. In this context, it was possible to understand the importance of the Veterinarian acting as technical responsible, being the main responsible for the implementation of the Autocontrol Programs and the fulfillment of the Good Manufacturing Practices - GMP, in a fish processing industry, under the control of the Federal Inspection Service - SIF.

    In the food industry, especially seafood, it is extremely important to identify marine species through the production cycle and product processing. Therefore, it is necessary that the processing companies are qualified to guarantee the consumer a safe, quality food without fraud. Consequently, the Mandatory Supervised Internship was carried out at Carapitanga Indústria de Pescados do Brasil LTDA, with the objective of enabling the experience of the routine of the quality control sector of a fish processing establishment, promoting the acquisition of experience in the industrial environment and placing in practice knowledge acquired during graduation. Food security is a fundamental issue, not only related to the identification of species, but to all stages of the production chain. Above all, the contribution of food safety and quality control programs to the improvement of establishments that process animal products it’s of high importance.

    The Compulsory Supervised Internship is part of curriculum of the Bachelor of Veterinary Medicine course at Federal Rural University of Pernambuco (UFRPE). This was held at Carapitanga Indústria de Pescados do Brasil LTDA., located in the municipality of Jaboatão dos Guararapes-PE during the period from August 31 to November 16, 2020. The activities of assisting employees in the fish recepcion sector and the quality control laboratory (QC); monitor the physical chemical analyzes of raw materials and water; monitor the production, packaging and shipping sector. In view of the challenges inherent to the pandemic of the new coronavírus (SARS-CoV-2) that started in Brazil in February, 2020 the present work had the general objective of describing the place ond activities developed in the internship period; and, as a specific objective, to report research on SARS-CoV-2 in the packaging, master box and procesed fish. The internship was extremely importante for professional and personal grownt. Through is execution, it was possible to acquire experience in the area of inspection of products of animal origin.
