The objective of this study was to describe the physicochemical and microbiological analyzes for whole milk submitted to the ultra high temperature treatment (UAT) and to follow all stages of the Minas frescal cheese production. The activities took place from April 18, 2018 to July 5, 2018, at the Laboratory of Inspection of Meat and Milk (LICAL) of UFRPE, located in Recife (PE), under the supervision of Professor Drª. Maria Betânia de Queiroz Rolim; and in the dairy D'Italia Indústria e Comércio, located in Cabo de Santo Agostinho (PE), under the supervision of general manager and owner Rosa Di Francesco. All activities were carried out during the course 08525 - Compulsory Supervised Internship of the Bachelor's Degree in Veterinary Medicine, Federal Rural University of Pernambuco, supervised by teacher Maria Betânia de Queiroz Rolim. The internship provided a technical and practical knowledge of the routine of an analysis laboratory and also an experience about the routine of the operation of a cheese production industry.
