(2022-10-05) Amorim, Elaine Feitosa de; Silva, Celiane Gomes Maia da; http://lattes.cnpq.br/3760947810306402; http://lattes.cnpq.br/3373039552410108
Since the beginning of the 20th century, profound changes have taken place in contemporary society. In order for the population to have a nutritious and quality diet, strict control is necessary through the legislation developed by the National Health Surveillance Agency (ANVISA) in the environments of the Food and Nutrition Units (UAN). The objective of the present work was to analyze the hygienic-sanitary conditions of a university restaurant located in the city of Recife/PE, taking as reference two checklists: the one of the Resolution of the Collegiate Board of Directors (RDC) nº 275, of October 21, 2002 and a prepared by the establishment itself. The methodology was a case study, with exploratory and descriptive purposes in a food production sector of a university restaurant, with operational procedures being evaluated from the observation "in loco". It was verified as main demands the emerging increase in the physical arrangement and the necessary improvement of the handlers for the zeal for hygienic care. Both checklists achieved a similar score, classifying the establishment in group 1, whose index demonstrates greater compliance with the verification items.

    Moda all size
(2021-07-06) Tani, Marianna Megumi; Melo, Jaqueline Ferreira Holanda de; http://lattes.cnpq.br/0639256942534141; http://lattes.cnpq.br/6502755641753802
This work was prepared with the general objective of reflecting on beauty and body and dressing, taking into account body diversity, especially drawing attention to the need to consider fat people and their tastes and desires, as well as reflections on all size terminologies and plus size in the fashion-clothing field. The themes Beauty and Body were approached so that the first category was understood as a historical-cultural construction, while the second as the variety of female silhouettes. For reflections on plus size and all size markings in the field of clothing fashion, the production of content on digital social networks was also considered, in which the discussion has been frequent. Aiming to achieve the proposed objective, we proceeded: bibliographical study; survey of secondary data on digital social networks about the themes; capture of primary data through the application of an online form via the Google Forms platform, on the categories studied, which totaled a participation of 188 respondents, so with the online form it was possible to reach women who declared to wear the PP + P sizes (62/33%), M + G (82 / 44%), GG + XG (32 / 17%), and XG+ (12 / 6%). Regarding the results, the willingness of the women who participated in the study to change something in their bodies was almost unanimous, something related to weight being generally considered ugly. Regarding Fashion-Clothing, most respondents show interest in Fashion, expect to feel that their clothes represent them, and that they are comfortable. With regard to the term all size itself, it is still little talked about, although it is already possible to find some brands that produce in line with the idea. Regarding the respondents, regardless of the size they wear, most of them prefer clothes to have a greater range of sizes instead of segregating them into “fashion” and “fashion plus size”.

Among the consequences of certain consumption behaviors, over-indebtedness has been presented as one of the main dilemmas for Brazilians in these first two decades of the 21st century. Therefore, the general objective of this work was to understand the financial lives of consumers who are or have been in over-indebtedness. Regarding the methodological procedures, the present work has an exploratory-descriptive character of a qualitative nature. For the collection of primary data, on-site observation was carried out and a form was made available on the Google Forms platform. Based on what was observed, we can consider that schooling is not synonymous with financial education, income, its source and amount, together with the number of people who live together, despite not being determining factors in over-indebtedness, can help to worsen both default and quality of life. We hope that this work will contribute to the creation of effective programs to prevent over-indebtedness, protection and consumer education, with a view to influencing financial health and, consequently, improving the quality of life of citizens.

Chronic disease is a long-standing problem for WHO (World Health Organization), and to tackle this problem the production of food with functional properties is a considerable option. Functional foods are those that provide some health benefit. The presence of bioactive compounds, responsible for promoting functional properties in fruit, has made researchers increasingly targeted. The objective of this study is to select the best formulation of encapsulating agentes through atomization, mixed acerola and ciriguela juice. For the preparation of the injector emulsion, with 30% total solids, a factorial planning 22 was carried out with 4 central points, where the independent variables were the wall material used (100% Arabic gum; 50% Arabian gum and 50% Maltodextrin (10DE); 100% Maltodextrin (10DE)) and the concentration of Xanthan gum (0.1%; 0,2%; 0,3%). Ascorbic acid content, total carotenoids, phenolic compounds and analysis of antioxidant potential were adopted as dependent variables. A Mini Spray Dryer model MSD 1.0 atomizer from LABMAQ Brazil was used for processing the mixed juice of acerola and ciriguela powder, which operated at an inlet temperature of 140 ° C, flow of liquid 0,60 L/h using 1.2 mm diameter injector nozzle, 30 m3/h airflow and 0.6 bar air pressure. As a result, arabic gum and maltodextrin did not significantly influence the preservation of ascorbic acid and carotenoids. The negative effect of xanthan gum on the content of phenolic compounds was also obtained. Before the analyses performed the wall, material composed of maltodextrin with concentration of 0.1% of xanthan gum proved to be the best condition for it by atomizing the mixed pulp of acerola and ciriguela.

In this context, the fat body is generally associated only with the disease and people with such characteristics are not considered potentially consumers, mainly in the Fashion market.
