Two types of saramunete protein concentrate (CPS) were developed, type A and type B, which can be differentiated by color and odor, evaluating yield, pH, water activity, chromatic coordinates, volatile nitrogen bases, humidity, protein, fat and ash.. The type A saramunete protein concentrate showed lower yield, despite being more acidic (lower pH) and higher L* value (brightness), lower a* value (red/green) and higher b* value (yellow/blue) than CPS type B. The water activity, moisture percentage and volatile nitrogen bases of CPS were low and with no difference between treatments. CPS type A had a higher percentage of protein, indicating better protein quality. Furthermore, it presented a lower amount of lipids, indicating that it is less susceptible to lipid oxidation.
