    The sale of crustaceans and molluscs in Recife's public markets plays a fundamental role in the local economy, especially considering the city's strategic position as one of the main fishing centers in northeastern Brazil. These products are widely consumed by the population and, in addition to their gastronomic importance, represent a significant source of income for fishermen and traders in the region. However, the sale of these foods in public markets faces specific challenges related to the preservation of quality and food safety, requiring some special attention to handling practices and hygienic conditions. The lack of hygienic standardization, infrastructure and supervision in these markets can cause several problems for consumers. Therefore, this work aims to observe and analyze the conditions of fish marketing, mainly crustaceans and molluscs in the main public markets in Recife.

    In the global context, fish are a crucial source of animal protein for millions of people, with the fishing industry playing a significant role in the economies of various countries, especially in coastal regions. However, global fish production faces challenges such as overfishing, environmental degradation, and the need for sustainable practices. In Brazil, fishing is also a highly relevant activity, with emphasis on the North and Northeast regions, which have vast coastal areas and a rich diversity of marine and freshwater species. The country ranks as one of the largest fish producers in the world, with Brazil being a major exporter of fish products, in addition to meeting the growing domestic demand. However, challenges related to the management of fishery resources, sustainability, and product quality still need to be improved. Recife fits into this context, with a significant fishing economy, both for internal consumption and for the trade of fresh and frozen fish. The Cais de Santa Rita and other local public markets play essential roles in the distribution and sale of these products. However, the city faces structural and operational difficulties regarding the handling and preservation of fish, which directly affects the quality of the products sold and, consequently, public health. This study aims to gather information from the main public markets in Recife and analyze which areas need improvement in the sale of these fish.

    The fish commercialization has great relevance in the local economic scenario, including in the metropolitan area of Recife, as it is a coastal city surrounded by large rivers and the sea, which makes it possible to obtain \ generation of fish, also having a wide range of breeding and producers of this means of production in the surroundings areas. Such products are usually sold in supermarkets, fairs and public markets and may present different hygienic\sanitary conditions that directly interfere with the health of the consumer. In order to evaluate these conditions in the hygienic and sanitary scope, as well as the quality of the products made available to society as a whole, a bibliographic review was carried out using research and academic publications carried out in recent years as a theoretical basis, as a subsidy and framework for this production. The criteria taken into account were the handling, hygiene care of the product, storage location, treatment and organization of establishments that sell these fish.

    At the Metropolitan Region of Recife the commercialization of molluscs and crustaceans is quite frequent and it is concentrated at supermarkets, smal markets and public fairs. This work intends to acssess the hygienic-sanitary conditions and price progression of those establishments. Unscheduled visits were made in ten different locations during the months of July and September in order to collect informations. Among those visited, seven of them were within the requirements established by the legislation, but three made several mistakes regarding sanitary conditions, being two of them being totally careless in relation to the involved high hygiene practices, presenting food without refrigeration, with foreign matter inside the packaging, product deformed colours, and presence of odors that denoted the deterioration of the food sold. At the establishments that were in accordance with what the standards recommend, there has a greater volume of products offered and a greater security of finding the necessary quality to guarantee health and people's well-being. Regarding prices, most products did not change during the survey period, except for one that had an increase of 14%.

    The growth of the human population has led to the search for productive maximization in several food production chains. Among the proteins of animal origin fish have excellent biological value and are easily digested by the human body. On the other hand fish have biochemical characteristics that facilitate their colonization by microorganisms with pathogenic potential, thus making it necessary to adopt measures to combat the spread of Foodborne Diseases (DTA's). Seeking to verify the conditions of commercialization of fish in establishments at Metropolitan Region of Recife unscheduled visits were made between the months of July and September 2022, at 11 different market places. There, were carried out observing the practices related to the handling, storage and progression of fish. fish prices as well as the sanitary conditions of the environment where they were marketed. The places that were classified as fairs or public markets had the worst sanitary conditions, having several products with clear signs of deterioration, in addition to inappropriate environments for food handling. The establishments that were supermarkets met the legal requirements for the commercialization of fish, except in specific situations.

    Avaliação das condições higiênico-sanitárias e da qualidade do pescado nos mercados públicos localizados no município de Recife

    The present work aims to analyze and evaluate the hygienic-sanitary conditions of the fish trading boxes in the main public markets of Recife-PE through visual inspection and data collection through checklists and questionnaires, identifying possible risks to public health. six public markets and a free fair were visited in the city of Recife-PE, in a total of 14 fish boxes. The aspects related to the hygiene and sanitary conditions of the establishments were observed, followed by equipment, utensils and handlers, presence of pests. and animals, as well as the mode of conservation and storage of the products that were exposed for sale. The checklists were prepared based on RDC Resolution No. 216 of September 15, 2004 by the National Health Surveillance Agency, containing a total of 17 questions grouped into 3 sections: 1- Hygiene of market facilities and equipment; 2- Hygiene of the handlers; 3- Quality of fish storage and exposure. The profile of consumers who frequent and buy products at the site was composed of five questions, identifying gender, age, education, frequency of going to the market and finally the reason to buy fish locally, in total were 102 interviewed. After verifying the results, 43% of the employees had clothing according to the activity, it was found that 100% of the boxes had cold chain or storage equipment, but major non-conformities were found in section 2, where only 40 % of the boxes attended requirements. In the constumers questionnaires 53.93 % were women, and most consumers (54, 91%) were in the age group of over 50 years. Most buyers bought fish from the markets because they were closer to their home and visited the market at least once a week. It is concluded that despite the hygienic-sanitary problems in fairs and markets, one of the biggest causes that can interfere with the quality of fish is the mishandling of food by employees and traders in public markets.
