Análise das verificações oficiais de elementos de controle in loco realizadas pela ADAGRO na Região Metropolitana do Recife

O Estágio Supervisionado Obrigatório (ESO) é a disciplina obrigatória do décimo primeiro período do curso de bacharelado em Medicina Veterinária da Universidade Federal Rural de Pernambuco (UFRPE). Tem por base a vivência prática de 420 horas, em determinada área da medicina veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de médico veterinário. Neste sentido, o presente relatório tem como objetivo principal demonstrar as principais atividades exercidas pela discente Louise Ebrahim Teixeira na Agência de Defesa e Fiscalização Agropecuária de Pernambuco (ADAGRO), sob orientação e supervisão, respectivamente, da professora Drª Maria Betânia de Queiroz Rolim e do Fiscal Estadual Agropecuário Flávio de Oliveira Silva; e como objetivo secundário, analisar, através de um levantamento de dados oficiais, as não conformidades mais frequentes observadas durante as VOECs in loco, realizadas pela ADAGRO na Região Metropolitana do Recife, durante o período do estágio. O ESO ocorreu no período de 14 de abril de 2025 a 02 de julho de 2025, na ADAGRO, órgão responsável pela execução das políticas de defesa agropecuária no Estado. A experiência do estágio proporcionou uma visão mais ampla acerca da importância do profissional médico veterinário na área de inspeção de produtos de origem animal, ao mesmo tempo que permitiu uma compreensão detalhada das atribuições e prerrogativas inerentes à atuação dos Fiscais Estaduais Agropecuários, bem como das competências designadas à ADAGRO no estado de Pernambuco, além do arcabouço legislativo que rege estas operações. A imersão nessa rotina foi fundamental, pois possibilitou uma percepção direta da realidade dos estabelecimentos inspecionados no território pernambucano, evidenciando os desafios intrínsecos enfrentados por estes e destacando o papel crucial das ações de regulamentação e fiscalização empreendidas por este órgão na garantia da segurança dos alimentos e, assim, da saúde pública.

O Estágio Supervisionado Obrigatório (ESO) é a disciplina final e obrigatória do décimo primeiro período do curso de bacharelado em Medicina Veterinária da Universidade Federal Rural de Pernambuco (UFRPE). Essa etapa curricular consiste em uma vivência prática de 420 horas em uma subárea específica da medicina veterinária, com o objetivo de promover a imersão do estudante na área desejada e prepará-lo para o exercício profissional e a obtenção do título de médico-veterinário. Neste contexto, o presente relatório teve como propósito apresentar as atividades desenvolvidas pela estudante Eduarda Pimentel Gomes, sob orientação da professora Dra. Maria Betânia de Queiroz Rolim e supervisão dos médicos-veterinários Flávio Oliveira Silva e Tatiane Ribeiro Freire. O objetivo secundário foi descrever a experiência no beneficiamento de lagostas inteiras congeladas destinadas ao mercado externo, abordando os principais perigos e defeitos encontrados. O ESO foi realizado no período de 14 de abril a 25 de maio de 2025, na Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO), em Recife, PE; e de 28 de maio a 2 de julho de 2025, na Carapitanga Indústria de Pescados LTDA, no município de Jaboatão dos Guararapes, em Pernambuco. O estágio permitiu compreender a relevância do médico-veterinário na inspeção de alimentos de origem animal e na saúde pública, destacar o impacto das boas práticas de fabricação e do fluxo higiênico-sanitário na inocuidade dos alimentos obtidos de animais, e reforçar o papel do médico-veterinário como responsável técnico em estabelecimentos alimentícios.

The Estágio Supervisionado Obrigatório (ESO) is the compulsory subject of the eleventh period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE), which aims to increase the student's insertion in professional practice. It is based on the practical experience of 420 hours, in a certain subarea of veterinary medicine, whose focus is to make the student able to perform his/her function, through the acquisition of the title of generalist veterinarian. In this sense, the main objective of this report is to demonstrate the main activities carried out by the student Alexandre Corrêa de Castro Júnior, under the guidance of the professor Maria Betânia de Queiroz Rolim and supervision by Veterinary Doctors Glenda Mônica Luna de Holanda and Maria Betânia de Queiroz Rolim; and as a secondary objective, to evaluate the updates by Regulations for Industrial and Sanitary Inspection of Products of Animal Origin (RIISPOA), through a study between the most significant rules of Decree 10.468/2022 and previous decrees, systematizing them as different in the various sectors of Brazilian industrial agribusiness. The ESO took place from October 5th to December 10th, 2021, at the Agência de Fiscalização e Defesa Agropecuária do Estado de Pernambuco and from May 30th to June 8th, 2022, at the Laboratório de Inspeção de Carne e Leite - LICAL, in a remote. The internship allowed to experience in loco, the work of the veterinarian as an agricultural inspector and supervisory agent and complying with specific legislation on the inspection of products of animal origin, whether meat or dairy, among others. But it also allowed to experience, in a remote way, the scope of bibliographic research, where both areas contributed in a majestic way, to the veterinary medical training of the student.

The Mandatory Supervised Internship (ESO) is a required element for the Bachelor's Degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It consists in a 420 hours internship in a specific field of veterinary medicine. It allows the student to perform their role in a supervised environment, as a final step in to become a veterinarian. This report aims to demonstrate the main activities developed by the student Roberta Vieira de Queiroz at the Pernambuco Agricultural Defense and Inspection Agency (ADAGRO), under the guidance of Professor Dr. Maria Betânia de Queiroz Rolim, supervision of the State Agricultural Inspector Dr. Glenda Mônica Luna de Holanda and Co-Supervision of Dr. Flávio de Oliveira Silva. This document also aims to describe procedures and methods applied during inspection actions performed by ADAGRO. The monitoring of water supplies will be emphasized due to its importance in food preparation and direct consumption by the population. The ESO took place from July 4, 2022 to September 15, 2022 at ADAGRO, an institution responsible for promoting agricultural defense, inspection and inspection. ADAGRO is an important institution in the inspection and regulation of establishments that produce, process, classify, store, transport or sell agricultural products. The internship allowed monitoring actions of Pernambuco’s inspection service in monitoring, inspecting, initial registration, registration renewing, collection of samples in addition to analysis of sketches of the establishments. Thus, with this practical experience, it was possible to verify and understand the importance of the veterinarian in food industry, either from the perspective of a state agricultural inspector or with the attributions of the Technical Responsible (RT), in order to ensure that safe and high quality animal products are made available to consumers.

Tem por base a vivência prática de 420 horas, em determinada área da medicina veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de médico veterinário. Neste sentido, o presente relatório teve como objetivo principal demonstrar as principais atividades exercidas pela discente Ingrid Cavalcanti do Nascimento Batista, sob orientação e supervisão, respectivamente, da professora Drª Maria Betânia de Queiroz Rolim; da médica-veterinária e responsável técnica Tatiane Ribeiro Freire e da médica-veterinária Kallyane Lira de Araújo. Apresenta como objetivo secundário relatar sobre a elaboração do queijo de coalho e suas análises. O ESO ocorreu no período de 14 de abril de 2025 a 22 de maio de 2025, na Carapitanga Indústria de Pescado do Brasil Ltda., localizada no município de Jaboatão dos Guararapes-PE, e no período de 26 de maio de 2025 a 04 de julho de 2025 na Indústria de Laticínios Bomtempo LTDA (Frutigutti), localizada na Rodovia AL-220, S/N, Lote 19, Quadra B, Polo multisetorial, Distrito Pé leve, Limoeiro de Anadia-AL. O estágio obrigatório permitiu conhecer o papel do médico veterinário no controle de qualidade e na responsabilidade técnica, de forma prática, na área de inspeção de produtos de origem animal.

The Estágio Supevisionado Obrigatório (ESO) is the compulsory subject of the eleventh period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). Through this it is possible to apply the knowledge obtained during the course in the practical performance of the professional area chosen by the student. It is based on the practical experience of 420 hours, in a certain sub-area of veterinary medicine, whose purpose is to make the student able to perform his/her function, by acquiring the title of veterinarian. In this sense, the main objective of this report is to demonstrate the activities carried out by the student in monitoring the laboratory routine corresponding to the Federal inspection programs of products of animal origin required by the Ministério da Agricultura, Pecuária e Abastecimento (MAPA) and carried out by the Laboratório Federal de Defesa Agropecuária (LFDA), experiencing procedures such as microbiological analyses, packaging of samples under analysis, quantitative evaluations, issuing reports and the disposal and cleaning of some materials, under the guidance and supervision, respectively, of Professor Dr. Maria Betânia de Queiroz Rolim and Federal Agricultural Tax Auditor and Technical Responsible of the Laboratório de Microbiologia dos Alimentos of the LFDA, Dr. Katarina Mendonça Ribeiro; and as a secondary objective, to investigate the prevalence of Salmonella spp. in chicken carcass in the Programa Nacional de Controle de Patógenos – PNCP/MAPA. The ESO took place from February 14 to May 26, 2022, in the Microbiologia dos Alimentos sector of the LFDA/PE, which is one of the six laboratories accredited to the national network linked to the Secretaria de Defesa Agropecuária, through the Coordenação-Geral de Laboratórios Agropecuários – CGAL/DTEC/SDA. The internship made it possible to acquire knowledge of current norms in the federal inspection of products of animal origin, both for the purpose of export and for consumption in the domestic market, and also measured the prevalence of an important pathogen in chicken carcass during the period that the Internship.

It is based on the practical experience of 420 hours, in a certain area of veterinary medicine, whose focus is to make the student able to perform their function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report was tocarry out monitoring of sanitary and industrial inspections in establishments of products of animal origin, in the Metropolitan Region of Recife, registered with the state inspection service; the specific objective was to report on the preparation of an educational folder on the importance of inspecting products of animal origin for unique health. The ESO was carried out at the Agencia de Defesae FiscalizaçãoAgropecuáriado Estado de Pernambuco (ADAGRO), under the guidance of professor Dr. Maria Betânia de Queiroz Rolim and supervision of the State Agricultural Inspector Dr. Glenda Mônica Luna de Holanda. The corresponding period was from may29th to august 9th, 2023. With the experience of ESO, professional and personal growth is notorious, whose experiences occurred in the practice of veterinary medicine theorized in important disciplines in the long years of graduation, as well as of citizenship in teaching and learning actions with people.

The Mandatory Supervised Internship (ESO) is a compulsory course in the eleventh period of the Veterinary Medicine bachelor's program at the Federal Rural University of Pernambuco (UFRPE). It is based on 420 hours of practical experience in a specific subfield of veterinary medicine, aiming to make the student capable of performing their duties upon acquiring the title of veterinarian. In this context, the main objective of this report is to demonstrate the primary activities carried out by the student Amisterdam Roque da Silva Filho, under the guidance and supervision of Dr. Maria Betânia de Queiroz Rolim, veterinarian Pedro Generino da Silva Júnior, and veterinarian Márcia Maria de Souza Belo. The secondary objective is to report on the inspection of vacuum-packed beef in a supermarket distribution center. The ESO took place from April 1 to May 10, 2024, at the company Noronha Pescados, and from May 13 to June 14, 2024, at the Arco-mix supermarket distribution center. The internship provided practical learning of the skills necessary for proficiency in the profession as a technical supervisor.

The Estágio Supervisionado Obrigatório (ESO) is a mandatory subject of the 11º period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). Its aim is to provide 420 hours of practical experience in a specific area of veterinary medicine, focusing on making the student capable of performing their role by obtaining the title of veterinarian. In this sense, the main objective of this report was to demonstrate the main activities carried out by the student Andreza Carmen de Souza Santos França de Moura under the guidance and co-guidance respectively of the professor Dr. Daniel Friguglietti Brandespim and the professor Dr. Maria Betânia de Queiroz Rolim; and as a secondary objective, to characterize the profile of complaints in food establishments and the actions of the health surveillance of Sanitary District V in the city of Recife-PE, from November 2023 to April 2024. The ESO took place from April 1, 2024, to June 14, 2024, initially at the Health Surveillance in DS V of the Recife city, under the supervision of veterinarian Dr. Raissa Ivna Alquete de Arreguy Baptista and co-supervision of nurse Ilma Cristina Silva do Nascimento; and the second part at Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO) located in Recife, under the supervision of Agricultural State Inspector Dr. Glenda Mônica Luna de Holanda and co-supervisors the Agricultural State Inspectors Marcus Antônio de Souza Medeiros and Roberto de Albuquerque Wanderley. In this way, the internship highlighted, in both parts, the importance of the veterinarian as a health professional to promote food safety and public health.

O Estágio Supervisionado Obrigatório (ESO) é a disciplina obrigatória do décimo primeiro período do curso de bacharelado em Medicina Veterinária da Universidade Federal Rural de Pernambuco (UFRPE). Tem por base a vivência prática de 420 horas, em determinada área da medicina veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de médico veterinário. Neste sentido, o presente relatório tem como objetivo principal demonstrar as principais atividades exercidas pela discente Rebeca Lourenço Joaquim da Silva, sob orientação e supervisão, respectivamente, da docente Drª Maria Betânia de Queiroz Rolim e da médica veterinária Tatiane Ribeiro Freire; e como objetivo secundário, relatar o processo de beneficiamento de atum para exportação. O ESO ocorreu no período de 30 de agosto de 2021 a 16 de novembro de 2021, na Carapitanga Indústria de Pescados do Brasil LTDA, indústria de pescados especializada em camarões. A unidade de beneficiamento de pescados e produtos de pescados está registrada no Serviço de Inspeção Federal (SIF), nº 1905 e está localizada no município de Jaboatão dos Guararapes, PE. O estágio permitiu adquirir conhecimento técnico e prático acerca dos processos tecnológicos e de inspeção do pescado e seus produtos, implantação e execução das Boas Práticas de Fabricação (BPF) e Análise de Perigos e Pontos Críticos de Controle (APPCC); o acompanhamento das atividades exercidas pelo Controle de Qualidade (CQ), que vão desde o momento da recepção do produto ate sua expedição, exercendo um papel fundamental em todas as etapas de produção; e dimensionou a importância do papel do médico veterinário, na indústria de alimentos, na forma de RT (responsável técnico), para garantia de um alimento de qualidade e acima de tudo, seguro.

In this sense, the main objective of this report was to demonstrate the main activities carried out by the student Jozibias da Mata Pimentel at the Agência de Defesa e Fiscalização Agropecuária de Pernambuco (ADAGRO), under the guidance, supervision and co-supervision, respectively, of the professor Dra Maria Betânia de Queiroz Rolim, state Agricultural Inspector Drº Roberto Albuquerque Wanderley and State Agricultural Inspectors Marcus Antonio de Souza Medeiros and Flavio de Oliveira Silva, and as secondary objective, and as a secondary objective, to carry out an experience report on state agricultural inspection in poultry establishment, located on rural properties with a family farming system, in the Metropolitan Region of Recife-PE. The ESO took place from April 1th to July 17th of the year 2024, At this stage, it was possible to understand the role of the veterinarian in the area of inspection of products of animal origin, the responsibilities and competencies of the State Agricultural Inspectors of ADAGRO, the related legislation and its applicability, as well as the inspection of food faced in the State and the importance of the actions carried out in this area by the Agency.

The Estágio Supervisionado Obrigatório (ESO) is the obligatory discipline of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE) and aims to describe all the activities of the student, lived in the experience of the internship of 420 hours. The ESO was held at Carapitanga Indústria de Pescado do Brasil LTDA, located in Jaboatão do Guararapes - PE. At the company, the steps taken were: product deglazing; receipt of fish; improvement; packaging; transport and processing, complying with the provisions of its HACCP (hazard analysis and critical control points); and temperature control throughout the production process. All actions were monitored by Carapitanga's Quality Control (CQ) team. ESO supervision was carried out by Veterinary Doctor Tatiane Ribeiro Freire, QC Coordinator. The activities were carried out from November 8, 2022 to March 3, 2023, during the Mandatory Supervised Internship discipline, under the guidance of professor Dr Maria Betânia de Queiroz Rolim. The internship is of great importance, as it provides technical experience in the face of the responsibility of the responsible technician, a veterinarian, in the fish processing industry, under the control of the Federal Inspection Service.

The Mandatory Supervised Internship (ESO) is an essential subject of the Bachelor's Degree in Veterinary Medicine and is mandatory for the eleventh period. It is based on the student's practical experience, carried out in 420 hours, focusing on a subarea of veterinary medicine. In this direction, the main objective of this report is to demonstrate the main activities carried out in the dairy and dairy products industry of the Agreste Meridional - Fazenda Polilac, by the student Kilma Vicente Nunes, under the guidance and supervision, respectively, of Professor Drª Maria Betânia de Queiroz Rolim and the veterinarian and technical manager George Pires. The report describes the structure, operation, casuistry and activities carried out during the ESO, from February 14, 2022 to May 4, 2022, in the area of inspection of milk and dairy products. An experience report on the certification process of Fazenda Polilac for the production of A2 milk was also described. It was possible to monitor the production of dairy products, milk processing, as well as the implementation of a new Self-Control Program (PAC), in addition to monitoring the company's certification process for the production of A2 milk. The internship provided a unique professional experience in the area of inspection of milk and dairy products, showing the way that the veterinarian acts in the control of the quality of the products produced by the company and as a technical responsible.
Relatório de Estágio Supervisionado Obrigatório (ESO), realizado na Masterboi Ltda e no LICAL - UFRPE, no município de Recife - PE/Brasil: avaliação qualitativa da eficiência de peróxido de hidrogênio como medida de sanitização na indústria

The present work aims to characterize the routine and activities carried out during the period referring to the Mandatory Supervised Internship (ESO), which took place between June 19, 2023 and August 31 of the same year. The internship was carried out under the supervision of veterinarian Kattarina Keylla Monteiro Borges de Oliveira and under the guidance and supervision of Prof. Dr. Elizabeth Sampaio de Medeiros, at the Meat and Milk Inspection Laboratory of the Federal Rural University of Pernambuco (LICAL/UFRPE) and at the Masterboi LTDA distribution center, both located in the city of Recife - PE. At LICAL, the laboratory routine was monitored, organization and verification of available culture media, preparation of materials used in research, in addition to microbiological analysis carried out on site. Among the activities carried out, there was monitoring of the daily activities of the industry, from the reception and analysis of raw materials, collection of samples for microbiological tests, monitoring of the manufacturing process of by-products and guaranteeing food quality, support in self-control procedures, inspection of meat products and storage chambers. The characteristics relating to the locations where the ESO took place are reported in this document, as well as a description of the activities carried out during the internship period. Subsequently, there is a study on the evaluation of the effectiveness of hydrogen peroxide as a sanitization measure in industry. The internship period made it possible to align theoretical knowledge with practical knowledge, through practical experience, thus getting to know the routine in the area of Food Inspection of Animal Origin and Industrial Quality Assurance.

The present work had as general objective to report the period experienced to the fulfillment of the discipline 08525 - Mandatory Supervised Internship (ESO) of the Bachelor's Degree in Veterinary Medicine; and as a specific objective to describe the quality control flowchart in the fish industry. The ESO took place during the period from August 17 to October 30, 2020, at Noronha Pescados LTDA, located in an industrial complex in the neighborhood of Várzea, Recife, PE. Under the supervision of the technical and veterinary officer Simone Maria Floro dos Anjos, and under the guidance of Professor Elizabeth Sampaio de Medeiros. ESO made it possible to acquire technical and practical knowledge of the fish industry, showing the importance of self-control programs. Among the activities carried out during the internship was the receipt of fish, processing, packaging, storage and shipping, and it is also possible to understand the role of the Veterinary Doctor in the fish industry.

During the completion of the Mandatory Supervised Internship to complete the Bachelor's Degree in Veterinary Medicine, carried out under the guidance of Professor Dr. Andrea Paiva Botelho Lapenda de Moura and supervision of the Veterinary Doctor Plínio Rodolfo Goberto Marinho, where the objective was to monitor the routine of the quality team and food safety providing consultancy in 22 supermarkets located in Recife, Jaboatão dos Guararapes, Moreno, Ipojuca, Olinda and Gravatá, carrying out technical visits and preparing photographic reports according to observation of the production sectors, instructing employees, filling out documents for self-control spreadsheets and follow Good Manufacturing Practices in accordance with current legislation. Based on the experience during ESO, the literature review highlights the veterinarian as a professional active in single health, such as his role in inspecting establishments that produce, handle and sell products of animal origin. Among the responsibilities of the veterinarian as Technical Manager, the need for technical and legislative knowledge stands out, which must be updated as needed, guiding employees during routine and periodic training, using Good Veterinary Practices as a basis for their actions. Manufacturing, production and management systems such as Hazard Analysis and Critical Control Points, carrying out corrective measures that reduce contamination of the production process, also reducing the occurrence of DTA.

The Estágio Supervisionado Obrigatório (ESO) is a discipline of the eleventh period of the Bachelor of Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE), with a workload of 420 hours. During the internship, the student João Paulo Brito da Costa, did na internship at the company Carapitanga Indústria de Pescados LTDA, under the guidance of Doctor Elizabeth Sampaio de Medeiros and supervision of Veterinary Doctor Tatiane Ribeiro de Freire. The activities took place from May 30 to August 11, 2023, with a workload of 40 hours per week in the Quality Control sector. The objective of the internship was to acquire practical knowledge in the inspection of food of animal origin, especially fish, with a focus on the Quality Control sector. Several activities such as laboratory analysis, temperature control, control of chemical residues, evaluation of organoleptic properties, etc. were carried out, collaborating to consolidate the importance of knowledge in quality control that the veterinarian must have.

O presente relatório descreve as atividades desenvolvidas durante o Estágio Supervisionado Obrigatório realizado na Gerência Estadual de Inspeção Animal (GEIA), vinculada à Agência de Defesa e Fiscalização Agropecuária de Pernambuco (ADAGRO), totalizando uma carga horária de 420 horas. O estágio teve como objetivo proporcionar a vivência prática da atuação do médico veterinário na área de inspeção e fiscalização de produtos de origem animal, abrangendo rotinas técnicas relacionadas ao controle de qualidade, biossegurança, análise de risco, aplicação da legislação sanitária e promoção da saúde pública. As atividades incluíram visitas técnicas a estabelecimentos processadores de alimentos de origem animal, coleta e acondicionamento de amostras, preenchimento de documentos oficiais e participação em análises sanitárias. A experiência permitiu a aplicação dos conhecimentos teóricos adquiridos ao longo da graduação, promovendo o desenvolvimento de competências profissionais, senso crítico e responsabilidade ética. Ressalta-se a relevância do estágio como elo entre a formação acadêmica e o mercado de trabalho, contribuindo significativamente para a formação de um profissional capacitado, comprometido com a segurança alimentar e a saúde coletiva.

The Mandatory Supervised Internship (ESO in Portuguese) is the compulsory subject of the eleventh period of the bachelor's degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE), fundamental for the formation of the student. It is based on practical experience of 420 hours, in a specific area of veterinary medicine, whose focus is to make the student be able to perform his/her function, by acquiring the title of a veterinarian. In this sense, the leading objective of this report is to demonstrate the main activities carried out by the student Luísa Barreto Pimentel, under the guidance and supervision, respectively, of the professor Drª Maria Betânia de Queiroz Rolim and Ana Erundina de Luna Moraes Leite, veterinary doctor and technical responsibilities a secondary objective, to report on the processing and analysis of “requeijão cremoso”. From February 14 to May 5, 2022, the ESO took place at Dairy Products Industry Leta Ltda. The company is located at Avenida Projetada, 20 - Parque Industrial, in Bom Conselho - PE, a city in the Brazilian semi-arid region. The internship allowed the observation and understanding of the role of the veterinarian as a technical responsible, as well as its importance, together with the Official Inspection Systems in guaranteeing the safety and quality of dairy products intended for human consumption.

The Estágio Supervisionado Obrigatório (ESO) is the mandatory discipline of the eleventh period of the Bachelor-s Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on the practical experience of 420 hours, in a certain sub- area of veterinary medicine, whose focus is to make the student able to perform their function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report was to demonstrate the main activities carried out by the student Alydyanny Waleska Rodrigues de Araújo Cavalcanti, under the guidance and supervision, respectively, of the professor Dr Maria Betânia de Queiroz Rolim and of the veterinarians and technicians in charge Felipe Pereira de Melo and Raquel de Araújo Vieira; and as a secondary objective, to report the elaboration of mozzarella cheese in a dairy processing unit with registration in the Sistema Brasileiro de Inspeção de Produtos de Origem Animal (SISBI-POA). The ESO took place from July 1, 2023 to August 1, 2023, at ValeLac Indústria de Laticínios Eireli located in Pedra-PE, and from August 3, 2023 to August 16, 2023 at the company Nutreat Consultoria Nutricional, located on commercial room in the district of Setúbal, Recife, PE. The internship allowed the practical experience of the performance of the veterinarian, as a technician in charge, in a unit for the processing of milk and dairy products with registration in the SISBI-POA, as well as his performance in a supermarket, putting into practice the manual of good practices.
