Item Experiências vividas com a agricultura urbana e a alimentação saudável na periferia do Recife(2024-03-07) Nunes, Gilberto Manoel da Silva; Silva, Maria Zênia Tavares da; http://lattes.cnpq.br/6150329073394875; http://lattes.cnpq.br/4035928624986569This memorial aims to bring together the experiences experienced during the Bachelor's Degree in Agroecology with an emphasis on Peasantry and Popular Education (Bacep). My starting point for writing was my memories, reviews of work and immersions carried out, as well as consultations with texts and books. Urban agroecology has several challenges, but it is necessary to act immediately, as it is necessary to seek strategies together with the whole society to improve our world. This work brings my trajectory in urban agriculture and shows that it is possible to produce efficiently using alternative technologies with the aim of promoting food and nutritional security for people living in urban environments, especially on the outskirts of Recife. Agroecology is carried out by several hands and the struggle of social groups shows that unity is strong, always seeking to strengthen the peasantry and popular education. Thus, this memorial not only records my personal experiences, but also celebrates the possibility of making meaningful changes in our relationship with food, the earth and, ultimately, the planet. May each step taken towards urban agriculture and healthy eating inspire others to follow similar paths, guided by the commitment to preserving the health of our planet and ourselves.Item Utilização de ômega 3 e 6 na alimentação de cães(2020-11-05) Silva, Izadora Emanuelle Oliveira da; Lima, Tayara Soares de; http://lattes.cnpq.br/3100045021780173; http://lattes.cnpq.br/0216194620740503The absence of essentials nutrients in the future brings diseases that can compromise not only the health, but the life of the animals. Fatty acids (AG) are lipid components and are distributed in all tissues, mainly in cell membranes and fat cells. Among these, those classified as essential as the polyunsaturated fatty acids n-3 and n-6. The fetus and even the puppies after the first days of birth are not able to synthesize long-chain polyunsaturated fatty acids (ômega 3 and 6), and their need is met by the placenta and the dog's milk if supplemented. Growing puppies need a percentage of 0.08% alphalinolenic acid. Maintenance dogs need a lower percentage. The omega 3 and 6 fatty acids act in the supply of concentrated energy, energy reserve in the animal organism, source of essential fatty acids, important for the nervous system, natural insulator to the environment. Its absence can cause, reduced growth, worse feeding efficiency, dry skin, dermatitis, hair loss, delayed sexual maturity, less fertility, accumulation of fat in the liver, less recovery in periods of convalescence, low resistance to various diseases such as coronary and cancer. These acids have unsaturations separated by a methylene carbon and listed from the final methyl group, and can also be listed from the carboxyl according to the delta designation using the nutritional designation n. Acids can also influence triglyceride and cholesterol levels. These are also responsible for the production of eicosanoids and prostaglandins. The objective was to carry out a bibliographic review on the use of fatty acids in the nutrition of dogs, seeking to document the development of research in relation to this essential nutrient. Item Representações sociais dos pais e/ou responsáveis pelas crianças e pelos/as adolescentes do projeto ações socioeducativas sobre alimentos, nutrição, hábitos alimentares e alimentação saudável(2019) Araújo, Vitor Daniel Santos; Saraiva, Joseana Maria; Silva Júnior, Marcony Edson da; http://lattes.cnpq.br/2170347292305027; http://lattes.cnpq.br/2009197399132834; http://lattes.cnpq.br/5341820602000111This study shows the results of the Compulsory Supervised Internship (ESO), an indispensable component of the Curriculum Matrix of the Bachelor Degree in Home Economics, developed at the Center for Studies and Research on Public Policy for Children and Adolescents -NEPIAD / Department of Domestic Sciences (DCD). / UFRPE, in which the Socioeducational Actions Project for Elementary School Children and Adolescents in public schools of the Recife-PE municipal school is developed. The ESO was developed from August to December 2018 and included a total workload of 360 hours. The object of study of the Compulsory Curricular Internship was constituted of the research entitled "Social representations of the parents and/or guardiansfor the children and adolescents of the project socioeducative actions on food, nutrition, eating habits and healthy eating". Studies consider that food choices and consumption are influenced by individual and collective determinants. Individuals refer to subjectivity, to the knowledge that the individual has about food, nutrition, healthy eating and healthy eating, and those of collective order refer to economic, social and cultural factors. It is understood that in order to promote healthy eating habits, it is necessary for parents (or guardians) to have theoretical and practical knowledge about food, nutrition, healthy eating and other correlated ones, based on the principles of prevention and promotion of health and nutrition. In this direction, assessing the level of vision about food, nutrition, eating habits and healthy eating of the parents and/or those guardiansfor the children and adolescents participating in this project becomes essential in order to intervene in reality and transform it. It is a case study of an explanatory nature and a qualiquantapproach. Data collection was carried out at NEPIAD, based on the application of an interview form containing open and closed questions, concretized with 14 parents and guardiansfor the children and adolescents participating in the project. The results show, through the analysis andunderstanding of the social representations of the interviewees, that, almost all of them do not have theoretical and practical knowledge about food, nutrition, eating habits and healthy eating, and do not even imagine the importance of knowledge on thesesubjects for everyday life, disease prevention and health promotion. The results reflect an empiricist and common-sense view on food, nutrition, eating habits and healthy eating. This may explain why other studies have shown that the consumption and eating patterns of Brazilians in recent decades have undergone significant changes, influenced by social, economic and cultural factors that directly reflect access, choice and consumption of food, therefore, in unhealthy eating behavior. It is suggested that Food and Nutrition Education combined with the development of healthy food practices and the improvement of the economic and social conditions of the less favored populations, should be seen as an effective technique for the development of eating habits and, therefore, promotion of healthy eating.Item A importância do treinamento continuado em uma unidade de alimentação e nutrição(2019) Pereira, Maria da Conceição Silva; Silva, Celiane Gomes Maia da; Silva Júnior, Marcony Edson da; http://lattes.cnpq.br/2170347292305027; http://lattes.cnpq.br/3760947810306402The Daily Dialogue on Safety and Quality (DDSQ) underscores the importance of food hygiene and hazards that can be prevented and / or prevented. In addition to contributing to the adequacy of food processing and handling to avoid outbreaks by food poisoning, eliminating risks to the health of diners, providing the support of qualified, satisfied and stable staff, minimizing the operational costs of the Food and Nutrition Unit(UAN). DDSQ is a very effective tool for reducing outbreaks caused by Foodborne Diseases. Given the above, this studyaimed to evaluate the importance of continuing training applied to employees of a UAN, as well as to evaluate the methodology used for continuing training and identify strengths and weaknesses of the applied training, and propose improvements and updates for better use. of the activities. This was a qualitative observational and descriptive case study, conducted in a Food and Nutrition Unit (UAN) located in a University Restaurant (UK) in the city of Recife. The training took place through lectures and dialogues, with the direct participation of the handlers. The methodology was divided into 3 stages, first held in weekly daily meetings and a questionnaire was applied to know the socioeconomic profile. In the second moment, the reading of the DDSQ was performed and in the third, the topic was debated presenting and evaluating the learning of the collaborators. They were applied to 37 food handlers, of which 42.2% were female and 56.7% male. The average age was 31.2 years, ranging from 19 to 54 years for men and 39.3 years for women ranging from 29 to 52 years. The handlers consider the DDSQ as an important training instrument (78.3%). Reading the DDSQ is a strong point at UAN because of its importance in contributing to the prevention of food contamination during the different stages of preparation. Through this work it has been confirmed that it is undisputed that training programs (DDSQ) are recommendable and effective means to impart knowledge and promote attitude changes in food handlers.
