Estudo das principais causas de condenações de carcaças de frangos de corte em abatedouro sob SIF na Região Metropolitana do Recife(2021-12-10) Santos, Ana Cristina de Ávila; Moura, Andrea Paiva Botelho Lapenda de; http://lattes.cnpq.br/6414540974581675Through the completion of the Mandatory Supervised Internship of the Bachelor of Veterinary Medicine course, the objective was to monitor the performance of the Agricultural Federal Tax Auditor, trained in Veterinary Medicine, from the Federal Inspection Service, in an establishment under permanent inspection, a poultry slaughterhouse in Pernambuco, with a focus in the ante-mortem and post-mortem inspection. The internship period was from August 30, 2021 to December 10, 2021, with a total workload of 420 hours. According to Internal Standard DIPOA/SDA Nº 01/2017, SIF's activities include traditional inspection and official verification of self-controls. Traditional inspection encompasses, but is not limited to, ante-mortem, post-mortem, sample collection and fiscal action procedures, which must comply with current legislation. Ante-mortem and post-mortem activities were the focus of the professional learning process, as they are stages in which the sanitary status of the broiler to be slaughtered is verified and the occurrence of lesions arising from some localized or systemic change is observed, promoting the correct judgment and disposal of carcasses, preventing carcasses with injuries from being distributed to the consumer market, ensuring protection to the population. In this way, the study of the main causes of broiler carcasses condemnation in slaughterhouse in metropolitan region of Recife was carried out. The results obtained were 0.15% mortality rate and the most common causes of total convictions were repugnant aspect (38.20%), cachexia (25.13%), technological failures (21.91%) and gastrointestinal contamination and biliary (8.41%). A set of actions in the abattoir is necessary to minimize the changes that occur in the poultry and which lead to convictions, as well as the implementation of procedures for better use of carcasses, when conditional use or industrial destination is allowed. Therefore, the importance of the Federal Inspection Service in the poultry slaughterhouse is evident, as it guarantees the supply of innocuous and quality animal products to the consumer, in compliance with the precepts governed by legislation. The completion of the mandatory supervised internship allowed me to live daily with the reality of sanitary inspection in a slaughterhouse for poultry and the perception of the veterinarian in his performance, essential activities for consolidating all the knowledge acquired during the course.
