    The compulsory supervised internship is a mandatory subject in the eleventh semester of the Veterinary Medicine Bachelor's program at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on 420 hours of practical experience in a specific subarea of veterinary medicine, with the goal of preparing students to perform their duties upon obtaining the title of veterinarian. This report aims to demonstrate the activities carried out during the internship period, which took place from October 29, 2024, to January 17, 2025, under the supervision of veterinarian Plínio Marinho and guidance of Professor Dr. Maria Betânia de Queiroz Rolim. This work has, as a secondary objective, of reporting an experience in applying Good Manufacturing Practices in a large supermarket chain in Pernambuco, serviced by the company Plínio Marinho Consultoria, in the cities of Carpina, Arcoverde and Ouricuri. The internship provided an opportunity to better understand the theoretical foundations received during the course on Animal Products and Technical Responsibility, as well as to gain further insight into current sanitary legislation, sanitary flow, and hazard analysis and critical control points (HACCP).

    The Mandatory Supervised Internship (ESO), an integral part of the Veterinary Medicine course at the Federal Rural University of Pernambuco (UFRPE), has a workload of 420 hours and is aimed at the professional qualification of students in the final period. The work was divided into two chapters, with Chapter 1 describing the ESO location and the activities performed, while Chapter 2 is a literature review entitled “Interpersonal relationship between the Veterinarian in charge of technical matters and employees in a supermarket warehouse”. With the growth in demand for products of animal origin, both in wholesale and retail trade, whether for industrialized or “in natura” products, the importance of ensuring quality control at all stages of the production chain is increasingly recognized. To make this happen, supermarkets hire Veterinarians to assume the position of Technical Manager of the establishment, as this professional is the best suited to evaluate and decide whether products of animal origin are suitable for human consumption, ensuring food safety and public health. The objective of this report was to describe the activities developed in the quality department of a supermarket chain, based mainly on Good Manufacturing Practices. Hygiene and sanitary procedures must be applied to personal hygiene, the work environment, utensils, equipment, product handling and throughout the production chain, in order to avoid any contamination and ensure that the food is safe and does not cause harm to the health of the consumer. In this context, the veterinarian plays a crucial role in managing the employees of the establishments. In addition to their technical knowledge, they need to apply interpersonal skills to promote a good organizational environment, ensuring that the activities are carried out appropriately and effectively. This not only contributes to the safety and quality of the products, but also helps to increase sales and the success of the organization. It can therefore be concluded that mental health, interpersonal relationships, the organizational climate and people management in a company are crucial to the results achieved and the guarantee of safe food.

    Boas práticas de fabricação (BPF) em estabelecimentos de produção de alimentos: impacto na qualidade e segurança do alimento

    This report aims to describe the experiences and activities developed during the Mandatory Supervised Internship (ESO), carried out from November 1, 2024, to January 22, 2025, under the orientation of Prof. Dr. Elizabeth Sampaio de Medeiros and co-orientation of Prof. Dr. Maria Betânia de Queiroz Rolim. The internship was conducted at the Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO) and a Fish Processing Unit (FPU), both located in Recife-PE. At ADAGRO, under the supervision of veterinary Dr. Flávio de Oliveira Silva, activities included periodic visits, permanent inspections, preliminary assessments, and sample collection for laboratory analysis in various establishments across the Recife Metropolitan Region. At the FPU, under the supervision of veterinary specialist Ana Magna de Carvalho Almeida Lins, tasks involved reading and studying the Self-Control Programs (SCP), filling out technical spreadsheets, monitoring the processes of receiving and shipping products and evaluating raw materials. The internship reinforced the importance of veterinary professionals in promoting public health and ensuring the quality of animal products, highlighting their contribution both as inspectors in the public sector and as quality control agents in the industry.

    The Mandatory Supervised Internship (ESO) is part of the curriculum of the undergraduate course in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It is a mandatory curricular component, of the eleventh period, carried out as a partial requirement to obtain the Bachelor's degree in Veterinary Medicine. In this sense, the aim of this report was to describe the main activities carried out at Carapitanga Indústria de Pescados LTDA, from April 1, 2024 to June 14, 2024, comprising 8 hours a day, thus meeting the requirement of the requested workload. 420 hours. The internship was carried out under the guidance of Prof. Dr. Andrea Paiva Botelho Lapenda de Moura and supervision of the Technical Responsible Veterinary Doctor (RT) and Quality Coordinator, Tatiane Ribeiro Freire. As a secondary objective, we aimed to elucidate the importance of Good Manufacturing Practices (GMPs) with an emphasis on research data on hygiene swabs and employee hygiene habits. The stage provided deepening and acquisition of new routine knowledge of the veterinarian, thus enabling knowledge of legislation in a fish processing unit.

    This compulsory internship report seeks to detail the activities carried out at Carapitanga Indústria de Pescados do Brasil LTDA between April 1 and June 14, 2024, as a requirement for fulfilling the Compulsory Supervised Internship, course in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE), under the guidance of Prof. Dr. Andrea Paiva Botelho Lapenda de Moura and the supervision of veterinarian Tatiane Ribeiro Freire, the establishment's technical manager. The activities include receiving, processing, packaging, storing and dispatching fish (shrimp, fish and lobster). These processes are the responsibility of the company's Quality Control department, which is responsible for managing, guaranteeing and maintaining the integrity, attributes and excellence of the products, in order to ensure safety for the end consumer. These activities were extremely important for gaining knowledge about the role and importance of the veterinarian as technical manager in the fish industry.

    The Estágio Supervisionado Obrigatório (ESO) is the mandatory discipline of the eleventh period of the Bachelor-s Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on the practical experience of 420 hours, in a certain sub- area of veterinary medicine, whose focus is to make the student able to perform their function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report was to demonstrate the main activities carried out by the student Alydyanny Waleska Rodrigues de Araújo Cavalcanti, under the guidance and supervision, respectively, of the professor Dr Maria Betânia de Queiroz Rolim and of the veterinarians and technicians in charge Felipe Pereira de Melo and Raquel de Araújo Vieira; and as a secondary objective, to report the elaboration of mozzarella cheese in a dairy processing unit with registration in the Sistema Brasileiro de Inspeção de Produtos de Origem Animal (SISBI-POA). The ESO took place from July 1, 2023 to August 1, 2023, at ValeLac Indústria de Laticínios Eireli located in Pedra-PE, and from August 3, 2023 to August 16, 2023 at the company Nutreat Consultoria Nutricional, located on commercial room in the district of Setúbal, Recife, PE. The internship allowed the practical experience of the performance of the veterinarian, as a technician in charge, in a unit for the processing of milk and dairy products with registration in the SISBI-POA, as well as his performance in a supermarket, putting into practice the manual of good practices.

    The Estágio Supervisionado Obrigatório (ESO) is a discipline of the eleventh period of the Bachelor of Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE), with a workload of 420 hours. During the internship, the student João Paulo Brito da Costa, did na internship at the company Carapitanga Indústria de Pescados LTDA, under the guidance of Doctor Elizabeth Sampaio de Medeiros and supervision of Veterinary Doctor Tatiane Ribeiro de Freire. The activities took place from May 30 to August 11, 2023, with a workload of 40 hours per week in the Quality Control sector. The objective of the internship was to acquire practical knowledge in the inspection of food of animal origin, especially fish, with a focus on the Quality Control sector. Several activities such as laboratory analysis, temperature control, control of chemical residues, evaluation of organoleptic properties, etc. were carried out, collaborating to consolidate the importance of knowledge in quality control that the veterinarian must have.

    The present work aims to characterize the routine and activities carried out during the period referring to the Mandatory Supervised Internship (ESO), which took place between June 19, 2023 and August 31 of the same year. The internship was carried out under the supervision of veterinarian Kattarina Keylla Monteiro Borges de Oliveira and under the guidance and supervision of Prof. Dr. Elizabeth Sampaio de Medeiros, at the Meat and Milk Inspection Laboratory of the Federal Rural University of Pernambuco (LICAL/UFRPE) and at the Masterboi LTDA distribution center, both located in the city of Recife - PE. At LICAL, the laboratory routine was monitored, organization and verification of available culture media, preparation of materials used in research, in addition to microbiological analysis carried out on site. Among the activities carried out, there was monitoring of the daily activities of the industry, from the reception and analysis of raw materials, collection of samples for microbiological tests, monitoring of the manufacturing process of by-products and guaranteeing food quality, support in self-control procedures, inspection of meat products and storage chambers. The characteristics relating to the locations where the ESO took place are reported in this document, as well as a description of the activities carried out during the internship period. Subsequently, there is a study on the evaluation of the effectiveness of hydrogen peroxide as a sanitization measure in industry. The internship period made it possible to align theoretical knowledge with practical knowledge, through practical experience, thus getting to know the routine in the area of Food Inspection of Animal Origin and Industrial Quality Assurance.

    Relato de experiência: importância dos procedimentos operacionais padronizados no combate e prevenção de pragas

    The Estágio Supervisionado Obrigatório (ESO) is the obligatory discipline of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE) and aims to describe all the activities of the student, lived in the experience of the internship of 420 hours. The ESO was held at Carapitanga Indústria de Pescado do Brasil LTDA, located in Jaboatão do Guararapes - PE. At the company, the steps taken were: product deglazing; receipt of fish; improvement; packaging; transport and processing, complying with the provisions of its HACCP (hazard analysis and critical control points); and temperature control throughout the production process. All actions were monitored by Carapitanga's Quality Control (CQ) team. ESO supervision was carried out by Veterinary Doctor Tatiane Ribeiro Freire, QC Coordinator. The activities were carried out from November 8, 2022 to March 3, 2023, during the Mandatory Supervised Internship discipline, under the guidance of professor Dr Maria Betânia de Queiroz Rolim. The internship is of great importance, as it provides technical experience in the face of the responsibility of the responsible technician, a veterinarian, in the fish processing industry, under the control of the Federal Inspection Service.

    The present work has as general objective to report the period experienced in the fulfillment of the subject 08525 - Compulsory Supervised Internship (ESO) of the Bachelor's Degree in Veterinary Medicine and as specific objective to describe the activities and procedures performed by the quality control team in the production sector at Carapitanga Indústria de Pescados Brasil. The ESO took place from April 05, 2021 to June 17, 2021, at Carapitanga Indústria de Pescados Brasil LTDA, located in Jaboatão dos Guararapes (PE), under the supervision of the Veterinarian Tatiane Ribeiro Freire. All the activities were performed during the course 08525 - Compulsory Supervised Internship of the Veterinary Medicine Course of the Federal Rural University of Pernambuco (UFRPE), under the supervision of Professor Elizabeth Sampaio de Medeiros. The ESO provided ample technical knowledge about fish inspection, from the means of cultivation to the shipment of the final product; of the methods of action employed by the quality control team in all the stages related to good manufacturing practices. In this context, it was possible to understand the importance of the Veterinarian acting as technical responsible, being the main responsible for the implementation of the Autocontrol Programs and the fulfillment of the Good Manufacturing Practices - GMP, in a fish processing industry, under the control of the Federal Inspection Service - SIF.
