    During the completion of the Mandatory Supervised Internship to complete the Bachelor's Degree in Veterinary Medicine, carried out under the guidance of Professor Dr. Andrea Paiva Botelho Lapenda de Moura and supervision of the Veterinary Doctor Plínio Rodolfo Goberto Marinho, where the objective was to monitor the routine of the quality team and food safety providing consultancy in 22 supermarkets located in Recife, Jaboatão dos Guararapes, Moreno, Ipojuca, Olinda and Gravatá, carrying out technical visits and preparing photographic reports according to observation of the production sectors, instructing employees, filling out documents for self-control spreadsheets and follow Good Manufacturing Practices in accordance with current legislation. Based on the experience during ESO, the literature review highlights the veterinarian as a professional active in single health, such as his role in inspecting establishments that produce, handle and sell products of animal origin. Among the responsibilities of the veterinarian as Technical Manager, the need for technical and legislative knowledge stands out, which must be updated as needed, guiding employees during routine and periodic training, using Good Veterinary Practices as a basis for their actions. Manufacturing, production and management systems such as Hazard Analysis and Critical Control Points, carrying out corrective measures that reduce contamination of the production process, also reducing the occurrence of DTA.

    This work aimed to report the activities carried out during the Supervised Internship of the Bachelor's Degree in Veterinary Medicine at UFRPE, focusing on the quality control sector and the application of good manufacturing practices and food safety. The internship took place between April 1 and June 14, 2024, at Plínio Marinho Consulting, located in Recife, PE, under the supervision of the technical manager, Veterinarian Plínio Marinho, and the guidance of Prof. Dr. Maria Betânia de Queiroz Rolim. The activities included hygiene and sanitary inspections of a large supermarket chain in Pernambuco, employee guidance on good food handling practices, analysis of non-conformities, and implementation of corrective measures in accordance with current legislation. These activities allowed for an in-depth understanding of the role of the Veterinarian in the food industry and commerce, highlighting the importance of ensuring the quality and safety of food offered to the final consumer. The internship experience was essential for consolidating the theoretical knowledge acquired throughout the course, in addition to enabling the practical application of good practices in food production and commercialization.

    The Mandatory Supervised Internship is a required course in the 11th semester of the Veterinary Medicine Program at UFRPE, with a total workload of 420 hours. Its purpose is to provide students with practical experience necessary to develop the essential skills and competencies needed to become qualified veterinarians. The internship was completed at Produmar Exportadora de Produtos do Mar LTDA and in the Imaging Diagnostics Department at Veterinarii Recife from April 1 to June 19, 2024, under the supervision of veterinarians Ana Carolina Baptista Freitas Braga and Yannike Lourenço Maciel, and under the guidance of Professor Dr. Andrea Paiva Botelho Lapenda de Moura. The internship provided hands-on experience in animal product technology and imaging diagnostics, successfully fulfilling the objectives of the Mandatory Supervised Internship.

    The Estágio Supervisionado Obrigatório (ESO) is a mandatory subject of the 11º period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). Its aim is to provide 420 hours of practical experience in a specific area of veterinary medicine, focusing on making the student capable of performing their role by obtaining the title of veterinarian. In this sense, the main objective of this report was to demonstrate the main activities carried out by the student Andreza Carmen de Souza Santos França de Moura under the guidance and co-guidance respectively of the professor Dr. Daniel Friguglietti Brandespim and the professor Dr. Maria Betânia de Queiroz Rolim; and as a secondary objective, to characterize the profile of complaints in food establishments and the actions of the health surveillance of Sanitary District V in the city of Recife-PE, from November 2023 to April 2024. The ESO took place from April 1, 2024, to June 14, 2024, initially at the Health Surveillance in DS V of the Recife city, under the supervision of veterinarian Dr. Raissa Ivna Alquete de Arreguy Baptista and co-supervision of nurse Ilma Cristina Silva do Nascimento; and the second part at Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO) located in Recife, under the supervision of Agricultural State Inspector Dr. Glenda Mônica Luna de Holanda and co-supervisors the Agricultural State Inspectors Marcus Antônio de Souza Medeiros and Roberto de Albuquerque Wanderley. In this way, the internship highlighted, in both parts, the importance of the veterinarian as a health professional to promote food safety and public health.

    Experimentação utilizando como contexto alimentos e alimentação: uma abordagem para o ensino de Química

    Chemistry classes are seen by many students as boring or difficult to understand, generating disinterest and discouragement in the study of this science. One way of reversing this situation is the insertion of contextualization and experimentation in chemistry teaching, as a way of bringing scientific knowledge closer to students' daily lives, as well as arousing greater interest from experimental activities. Having foods and feeding as this focus, it emerges as the main theme for an experimentation activity, since they are treated at all levels of education and are part of everyone's life. That way, this study was carried out in a municipal school in Recife - PE, with students from the 6th to the 9th grade of elementary school and had the general objective: To develop and carry out an experimentation activity in the teaching of chemistry, seeking to promote the awareness of students of a school in the city of Recife on the quality of food and healthy eating practices, in order to contextualize chemical knowledge with everyday life. The research, classified as qualitative and of the pedagogical intervention type, was carried out with 22 students participating in the Science Club of the Science and Technology Laboratory of the school, in three meetings, each lasting 60 minutes. In the first methodological moment, the students' previous conceptions about the concepts of foods, healthy eating and food quality were collected; In the second stage, a dialogic expository class was held, seeking to introduce students to the chemistry present in this theme; And in the third and last stage, the importance of food quality was discussed and an experimental activity was performed on the physical-chemical analyzes used to attest to the quality of the milk consumed by the students. Data collection was made from questionnaires applied during the pedagogical intervention, as well as observations of the class during classes. It was noticed with the answers to the questionnaires, that at the beginning of the activity, most students did not have knowledge about the composition of foods, but that in general they had a balanced diet due to the number of meals eaten in the full school. During the execution of the activity, especially in the experimentation part, the class showed a lot of interest in studying the subject and because it was something that was part of their daily life, there was great participation and acceptance of the class, thus concluding that contextualization and experimentation are essential and in fact great allies for the teaching of chemistry. In the end, it was found that there were advances in the answers given by the students and it is hoped that with this activity, the participating students have awakened to issues related to healthy eating, food quality and how chemistry is present in the most diverse situations around us,not just limited to what is studied in the classroom.

    Relato de irregularidades observadas em estabelecimento comercial de Paulista - PE

    The present work had as general objective to report the period experienced to the fulfillment of the discipline 08525 - Mandatory Supervised Internship (MSI) of the Bachelor's Degree in Veterinary Medicine; and as a specific objective, describe the procedures adopted by the health surveillance of Paulista - PE, in view of the irregularities observed in a commercial establishment in the city. The ESO took place during the period from March 2, 2020 to May 20, 2020, at the Secretaria de Saúde de Paulista, located in Paulista (PE), under the supervision of Superintendent Fábio Diogo da Silva; and at the Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO), located in Recife (PE), under the supervision of the State Agricultural Inspectorate Drª Glenda Mônica Luna de Holanda. All activities were carried out during the course 08525- Mandatory Supervised Internship of the Bachelor's Degree in Veterinary Medicine, from the Universidade Federal Rural de Pernambuco (UFRPE), under the guidance of Professor Drª Betânia de Queiroz Rolim. The ESO provided technical knowledge about the inspections carried out by the health surveillance of the Secretaria de Saúde de Paulista; and the laws frequently used to act, in the sector of artisanal products, of the State Agricultural Inspectors of ADAGRO. In this context, it was possible to understand the importance of the actions of the municipal health surveillance and of the defense and agricultural inspection of the state, which provide the commercialization of innocuous, safe and quality food.

    As a curricular competence for the undergraduate degree in Veterinary Medicine, the ESO's essence is to provide the student with practical experience in one or more specific areas concerning the area of preventive veterinary medicine. In this work, the activities carried out in monitoring the ADAGRO-PE and VISA inspectors of the municipality of Olinda were reported, which provided the technical knowledge of the way of acting and the prerogatives of the two bodies in relation to public health. The ESO was experienced at two different times, namely, from February 14 to March 28, 2022, at the Agricultural Defense and Inspection Agency of the State of Pernambuco, covering 210 hours, the remaining 210 hours were completed in the field activities with the Health Surveillance of the municipality of Olinda, from March 29 to May 6 of this year, thus making a total of 420 hours of practical activities. From the numerous activities monitored, the approach to the PACs that were supervised by the ADAGRO team in establishments of animal products in the state of Pernambuco can be highlighted as the second chapter of this work. PAC are a set of good practice procedures with the objective of guaranteeing the production of safe and quality food, being a management tool that will involve the elaboration, application, registration, verification and review of processes carried out by the company. Thus, the focus on this theme was to address the tools that the Inspection uses to audit establishments of products of animal origin, ensuring their safety, paying attention to the main non-conformities of the inspected PACs, so that a profile of these establishments was drawn, showing the four Self-control programs that were repeated in more than one establishment inspected with non-conformities, in addition to showing the close relationship that self-control programs have between them and the control tools, not being possible to observe them in isolation, as well as their importance in production of products of animal origin.
