Item Relatório de Estágio Supervisionado Obrigatório (ESO), realizado na Masterboi Ltda e no LICAL - UFRPE, no município de Recife - PE/Brasil: avaliação qualitativa da eficiência de peróxido de hidrogênio como medida de sanitização na indústria(2023-09-19) Medeiros, Anna Karolyne de Araujo; Medeiros, Elizabeth Sampaio de; http://lattes.cnpq.br/5998863169551704; http://lattes.cnpq.br/8329028352662293The present work aims to characterize the routine and activities carried out during the period referring to the Mandatory Supervised Internship (ESO), which took place between June 19, 2023 and August 31 of the same year. The internship was carried out under the supervision of veterinarian Kattarina Keylla Monteiro Borges de Oliveira and under the guidance and supervision of Prof. Dr. Elizabeth Sampaio de Medeiros, at the Meat and Milk Inspection Laboratory of the Federal Rural University of Pernambuco (LICAL/UFRPE) and at the Masterboi LTDA distribution center, both located in the city of Recife - PE. At LICAL, the laboratory routine was monitored, organization and verification of available culture media, preparation of materials used in research, in addition to microbiological analysis carried out on site. Among the activities carried out, there was monitoring of the daily activities of the industry, from the reception and analysis of raw materials, collection of samples for microbiological tests, monitoring of the manufacturing process of by-products and guaranteeing food quality, support in self-control procedures, inspection of meat products and storage chambers. The characteristics relating to the locations where the ESO took place are reported in this document, as well as a description of the activities carried out during the internship period. Subsequently, there is a study on the evaluation of the effectiveness of hydrogen peroxide as a sanitization measure in industry. High-quality food is an important factor in its consumption. The goal of this research was to verify if current legislation for slices of beef exposed in supermarkets of Camaragibe city is being enforced correctly. Especially in terms of temperature conditions in the beef storages according to the legislation, and to present suggestions to enhance these conditions to minimize the issues found. It has been selected a sample of five sale points, where was collected six pieces of beef from each supermarket. It has been considered two types of cuts (“patinho” and “peito”). Hence, in total 30 meat samples, which were packed using high-density polyethylene plastic, i.e., following the same conditions as offered to regular customers. To evaluate the temperature conditions, it was used a portable multi-function digital thermometer with a metallic rod and -50ºC to 300ºC measurement capacity. Two out of five sites had visible thermometers and exposed enough pieces in the glass case. In regards to the temperature conditions of the beef, only one site has followed the regulations of the “regulatory standard n° 4/2014 – DIVISA/SVS/SES”. Therefore, only six out of the 30 samples have followed the current regulations of ideal temperature for refrigerated meat. The results allowed us to identify the need for the enforcement of best practices, assessment systems, and training programs to employees, as well as the means to certify the production chain of refrigerated meat. Furthermore, the data of variables such as dollar, average income, IPCA, unemployment, soybean prices and its respective effects were analyzed on how it can impact the domestic price of the product. The methodology consists of using logarithmic-scale regression models of the variables, using the ordinary least squares method (OLS) for final estimates, using panel data collected from MAPA, CONAB, CEPEA and IBGE databases, related to their respective variable. The results indicated that beef exports to all countries show a positive effect on the formation of the final price, while the dollar showed an indirect negative correlation, in the time interval considered, from 2003 to 2020.
