It is based on 420 hours of practical experience in a specific subarea of veterinary medicine, with the goal of preparing students to perform their duties upon obtaining the title of veterinarian. This report aims to demonstrate the activities carried out during the internship period, which took place from October 29, 2024, to January 17, 2025, under the supervision of veterinarian Plínio Marinho and guidance of Professor Dr. Maria Betânia de Queiroz Rolim. This work has, as a secondary objective, of reporting an experience in applying Good Manufacturing Practices in a large supermarket chain in Pernambuco, serviced by the company Plínio Marinho Consultoria, in the cities of Carpina, Arcoverde and Ouricuri. The internship provided an opportunity to better understand the theoretical foundations received during the course on Animal Products and Technical Responsibility, as well as to gain further insight into current sanitary legislation, sanitary flow, and hazard analysis and critical control points (HACCP).Item Relatório do Estágio Supervisionado Obrigatório (ESO) no controle de qualidade e segurança dos alimentos de supermercados em Pernambuco, Brasil. Based on the experience during ESO, the literature review highlights the veterinarian as a professional active in single health, such as his role in inspecting establishments that produce, handle and sell products of animal origin. Among the responsibilities of the veterinarian as Technical Manager, the need for technical and legislative knowledge stands out, which must be updated as needed, guiding employees during routine and periodic training, using Good Veterinary Practices as a basis for their actions. The internship took place between April 1 and June 14, 2024, at Plínio Marinho Consulting, located in Recife, PE, under the supervision of the technical manager, Veterinarian Plínio Marinho, and the guidance of Prof. Dr. Maria Betânia de Queiroz Rolim. The activities included hygiene and sanitary inspections of a large supermarket chain in Pernambuco, employee guidance on good food handling practices, analysis of non-conformities, and implementation of corrective measures in accordance with current legislation. These activities allowed for an in-depth understanding of the role of the Veterinarian in the food industry and commerce, highlighting the importance of ensuring the quality and safety of food offered to the final consumer. This is a mandatory supervised internship of the Bachelor of Veterinary Medicine Course, at UFRPE, in the quality control sector, with a focus on compliance to good manufacturing practices and food safety, in order to guarantee quality products to the final consumer, in addition to analyzing the non-conformities found during the visits, and their interference with the final quality of the food. The ESO internship took place at Nutreat Consultoria Nutricional, a company located in a commercial room in the Setubal neighborhood of Recife, PE, from November 14, 2022, to February 17, 2023, under the supervision of the technical responsible and Veterinary Doctor Ana Laura Barboza Pereira, and guidance from professor Doctor Elizabeth Sampaio de Medeiros. Among the activities carried out during the internship was the inspection of hygienic-sanitary conditions in food production, filling out the establishment's specific quality control data sheets, and guiding the employees on the correct hygiene and best practices in food handling, among others. The internship also provided insight into the role of veterinarians in the food industry.Item A importância do treinamento continuado em uma unidade de alimentação e nutrição(2019) Pereira, Maria da Conceição Silva; Silva, Celiane Gomes Maia da; Silva Júnior, Marcony Edson da; http://lattes.cnpq.br/2170347292305027; http://lattes.cnpq.br/3760947810306402The Daily Dialogue on Safety and Quality (DDSQ) underscores the importance of food hygiene and hazards that can be prevented and / or prevented. In addition to contributing to the adequacy of food processing and handling to avoid outbreaks by food poisoning, eliminating risks to the health of diners, providing the support of qualified, satisfied and stable staff, minimizing the operational costs of the Food and Nutrition Unit(UAN). DDSQ is a very effective tool for reducing outbreaks caused by Foodborne Diseases. Given the above, this studyaimed to evaluate the importance of continuing training applied to employees of a UAN, as well as to evaluate the methodology used for continuing training and identify strengths and weaknesses of the applied training, and propose improvements and updates for better use. of the activities. This was a qualitative observational and descriptive case study, conducted in a Food and Nutrition Unit (UAN) located in a University Restaurant (UK) in the city of Recife. The training took place through lectures and dialogues, with the direct participation of the handlers. The methodology was divided into 3 stages, first held in weekly daily meetings and a questionnaire was applied to know the socioeconomic profile. In the second moment, the reading of the DDSQ was performed and in the third, the topic was debated presenting and evaluating the learning of the collaborators. They were applied to 37 food handlers, of which 42.2% were female and 56.7% male. The average age was 31.2 years, ranging from 19 to 54 years for men and 39.3 years for women ranging from 29 to 52 years. The handlers consider the DDSQ as an important training instrument (78.3%). Reading the DDSQ is a strong point at UAN because of its importance in contributing to the prevention of food contamination during the different stages of preparation. Through this work it has been confirmed that it is undisputed that training programs (DDSQ) are recommendable and effective means to impart knowledge and promote attitude changes in food handlers.
