Item Os serviços e modos de atuação do médico veterinário no setor de alimentos - revisão de literatura(2019-12-11) Matias, Hellen Viana; Rolim, Maria Betânia de Queiroz; http://lattes.cnpq.br/5676854885081836; http://lattes.cnpq.br/4539175753210930The course completion work aimed to describe the activities experienced in the period from August 12, 2019 to November 22, 2019 at Consultechs Technical Consultancy, since the meat and fish platforms to the supermarkets chains in Recife (PE) and nearby municipalities. Inspections of products of animal origin were carried out, by accompanying veterinarians as technical responsible in the establishments above, The supervision was performed by the veterinary doctor of the company Consultechs, Márcia Belo. All the described actions are correlated with compliance with discipline 08525 - Compulsory Supervised Internship of the Bachelor Degree in Veterinary Medicine, Federal Rural University of Pernambuco - UFRPE, under the guidance of Professor Maria Betânia de Queiroz Rolim. The completion of the internship provided extensive knowledge of the duties of the veterinarian which acts as technical responsible in the food sector.Item Relatório de estágio supervisionado obrigatório descrição do processo de beneficiamento do camarão (Litopenaeus vannamei) na empresa Iscas Pescados Ltda, Paulista, PE(2019-02-14) Silva, Taylane Alves da; Moura, Andrea Paiva Botelho Lapenda de; http://lattes.cnpq.br/6414540974581675; http://lattes.cnpq.br/0875605507489301This report presents the practical, technical and laboratory activities developed during the Mandatory Supervised Internship carried out in the period from September 18 to December 5, 2018, divided between the Laboratories of Inspection in the Department of Veterinary Medicine of the Federal Rural University of Pernambuco, and with the Quality Control at ISCAS PESCADOS LTDA. The activities described were developed and monitored with quality control in the laboratory and in the processing room of the unit, covering all its operation, with emphasis on the shrimp product, where the species used was Litopenaeus vannamei, following the procedures from the reception to the packaging stage, respecting its control flow chart. This stage was able to bring the experience of the industry of fish processing, and in the laboratory on research of new technologies for the delay of the melanótic appearance in the shrimps and research of pathogenic microorganisms coagulase positive Staphylococcus and Salmonela spp., Promoting scientific technical knowledge referring to this determined area of practice of the Veterinary Practitioner related to food safety.Item Relatório do Estágio Supervisionado Obrigatório, realizado na Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco e na Empresa Noronha Pescados, localizadas em Recife-PE(2019-02-05) Santos, Merilene Maria dos; Moura, Andrea Paiva Botelho Lapenda de; http://lattes.cnpq.br/6414540974581675; http://lattes.cnpq.br/3596230432650532The purpose of this report was to describe the activities carried out between October 1 and November 30, 2018, at ADAGRO, and from 03 to 19 December 2018 at the company Noronha Pescados, both located in Recife, totaling 420 hours. This report has been divided into two distinct moments. The activities carried out at ADAGRO were aimed at monitoring the activities carried out by the team of state agricultural inspectors of the State Management of Animal Inspection, under the supervision of the State Veterinary Medical Examiner Dr. Glenda Monica Luna de Holanda. In the company Noronha Pescados, the activities carried out were aimed at monitoring the hygiene sanitary and technological control programs, being supervised by Simone Maria Floro dos Anjos Veterinary Medicine. The activities were carried out as a prerequisite of the discipline 08525 - Mandatory Supervised Internship of the Bachelor's Degree in Veterinary Medicine, Federal Rural University of Pernambuco, under the guidance of Professor Andrea Paiva Botelho Lapenda de Moura. The Mandatory Supervised Internship at ADAGRO-PE provided a better experience in the daily routine of inspection of animal products, observing the importance of the State Inspection Service (SIE) for the quality of the food produced. The Mandatory Supervised Internship at the company Noronha Pescados allowed a better experience in the daily routine of a fish industry, being able to better exert the theoretical knowledge obtained during the graduation of Veterinary Medicine and the importance of the performance of the quality control, allowing to evaluate the control points and critical in a fish production within an industry.
