    The purpose of this work is to describe the activities carried out during the mandatory supervised internship (ESO), a required course for the completion of the Veterinary Medicine degree at the Federal Rural University of Pernambuco. The internship was conducted in the sectors of Mauricéa Alimentos LTDA, Estrada de Limeira Grande, S/N – km 02 Rural Zone, Carpina-PE, under the guidance of Prof. Dr. Érika Fernanda Torres Samico Fernandes Cavalcanti, from April 3, 2024, to July 14, 2024. During the internship, it was possible to participate in the routine of 5 different sectors of the company: the Feed Factory, the Breeding Unit, the Hatchery, the Integrated Farms, and the Slaughterhouse. This allowed for a comprehensive view of broiler chicken production, from feed to slaughter, observing all stages and the veterinarian's role in each. In all sectors, the necessity and effectiveness of biosecurity measures promoted by the company's employees were notable, demonstrating how crucial this factor is for poultry farming, animal production, and biosecurity. This makes it an extremely relevant topic to be addressed in chapter 2.

    The poultry industry has grown a lot since the 20th century, currently Brazil is the second largest producer of chicken meat in the world. Even with existing developments, difficulties with the presence of mycotoxins are still a reality. This report presents the activities developed during the Mandatory Supervised Internship (ESO), which was carried out between October 5th and December 21st, 2023 at the company Mauricéa Alimentos do Nordeste LTDA, comprising a workload of 420 hours. The objective was to describe the activities experienced at ESO, experiencing the day-to-day life of the feed factory, the hatchery, the breeder farm, the integration and the slaughterhouse, highlighting the challenges and solutions inherent to the sector. As well as the related work brings a literature review on mycotoxins and the use of adsorbents in the composition of poultry feed. ESO is extremely important for the training of a professional, making it possible to unify the knowledge obtained at the university with the day-to-day experience of professionals in each sector.

    The present work reports on the activities that were carried out during the Estágio Supervisionado Obrigatório (ESO) at Guarabira Alimentos LTDA. (Guaraves), from October 2, 2023, to December 22, 2023, in the city of Guarabira–PB, with a workload of 420 hours. The Brazilian industrial poultry farming is one of the main sectors of Brazilian agribusiness, with the country currently being the world's largest exporter of chicken meat and the second-largest producer. The internship aimed to monitor the activities of the broiler chicken production chain through practical management activities in heavy breeders' farms, incubation management for one-day chick production, regular visits to broiler farms for health analysis and batch management, chick reception and collection, commercial egg farms, commercial egg processing centers, and slaughterhouses. The management of fertile eggs is a complex task with various layers in its production chain, starting from the breeder farm, focusing on the management of breeding birds, especially in fumigation and egg storage. The refrigerated handling of the egg room ensures a reduction in the initial batch mortality rates, proposed case report, part of an interventional analysis in the management of a heavy sow farm, aiming to seek the ideal management to reduce the initial mortality of the flock. The internship provided hands-on experience in the routine of the poultry production chain, aiming for a successful outcome in all possible stages. The ESO significantly contributes to the professional development of the student through practical experiences used in the professional routine, preparing them for various day-to-day situations.

    As part of the curriculum for the bachelor's degree in Veterinary Medicine, ESO in essence aims to provide practical experience in the professional field. In this work, the activities aimed at industrial poultry were reported, experienced in the companies Guaraves-PB and Ovo Novo-PE, being carried out at two different times, starting on June 27th to August 17th, 2022, in Guaraves, contemplating 300 hours ; the remaining 120 hours were completed at the company OvoNovo, from August 22 to September 12, 2022, thus totaling 420 hours of practical activities. Due to the practical activities carried out in the companies, it is possible to highlight the need to know industrial poultry farming, to form a complete professional but with great responsibility and pride in the finished product; highlighting in the second chapter of this work, the handling in the initial phases as an influence on the results obtained at the end of the batch. Thus, the focus of the work was to show through results how important a management work is especially in the initial days of the batch, seeking the environment for the ideal development of the bird.

    The Mandatory Supervised Internship is part of subject for undergraduation of the course of Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). The student completed his total workload of 420 hours from 12 August to 25 October and was carried out at two poultry companies, Cobb Vantress in Guapiaçu-SP and G3 Agroavícola in Riacho das Almas-PE. The internship was directed to the poultry production area. In both companies visited it was possible to see daily, the management and rules of biosecurity. The internship aimed to aggregate aspects of biosecurity and management-level technologies that can be applied in Poultry Farms so the bird can achieve its genetic potential, as well as to know Grandparents Farms and Hatchery in order to deepen knowledge of the poultry pyramid. The internship makes a great contribution at the practical learning level, thus being a discipline of the UFRPE Bachelor of Veterinary Medicine course of extreme importance for the development and deepening of theoretical and practical knowledge for the students.

    Today, Brazil is the largest exporter of chicken meat in the wolrd and also the second biggest productor. The state of Pernambuco was responsible for 1,02% of slaughters. In 2018, the production of eggs has achieved 39.923.119.357 units. Inside this, 99,74% was destined to inside market. In the last few years the coturniculture has presented a nice development, fitting into new production technologies. The veterinary has a important function in the development of aviculture, being responsible for the production following sanitary laws and ensuring a better productivity of the birds. The goal of this mandatory and supervised internship was report the current reality of the poultry production, participating in activities developed in several sectors of aviculture. Between 03/12/2019 and 04/23/2019, activities of factories of bird food, bromatology labs, hatchery, egg matrix and cut chicken farms in the Mauricéa Alimentos do Nordeste LTDA company were followed. Between 05/02/2019 and 06/03/2019 the experience was on the commercial stance farm Ovo Novo and Ovinho Novo, respectively manufacturers of commercial eggs and quail eggs. Both are part of the J. Florêncio Avicultura LTDA. company and, even in different segments, have convergence in biosecurity and quality production.

    This report presents the activities carried out during the Mandatory Supervised Internship, which was held from October 15, 2018 to February 12, 2019 at the Animal Diagnostic Laboratory (LADA) and Mauricéa Alimentos do Nordeste Ltda. The main activities carried out at LADA were poultry necropsy, ELISA Enzyme Immunosorbent Assay, Rapid Agglutination Serum (SAR) test, antibiogram, raw material mycotoxin screening, microbiological water analysis and Salmonella spp egg screening. At Mauricéa Alimentos, the main activities were monitoring production management in feed production, bromatology laboratory, as well as monitoring the management in hatchery, poultry farms and broiler chicken. In LADA activities, the evaluation of maize samples for poultry was also performed, with the purpose of performing Mycotoxin detection by ELISA. Given the above, it is important to further analyze and study the damage generated by the presence of mycotoxins in cereals intended for animal and human consumption.
