    The Mandatory Supervised Internship (ESO) is part of the curriculum of the undergraduate course in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It is a mandatory curricular component, of the eleventh period, carried out as a partial requirement to obtain the Bachelor's degree in Veterinary Medicine. In this sense, the aim of this report was to describe the main activities carried out at Carapitanga Indústria de Pescados LTDA, from April 1, 2024 to June 14, 2024, comprising 8 hours a day, thus meeting the requirement of the requested workload. 420 hours. The internship was carried out under the guidance of Prof. Dr. Andrea Paiva Botelho Lapenda de Moura and supervision of the Technical Responsible Veterinary Doctor (RT) and Quality Coordinator, Tatiane Ribeiro Freire. As a secondary objective, we aimed to elucidate the importance of Good Manufacturing Practices (GMPs) with an emphasis on research data on hygiene swabs and employee hygiene habits. The stage provided deepening and acquisition of new routine knowledge of the veterinarian, thus enabling knowledge of legislation in a fish processing unit.

    The Mandatory Supervised Internship is a required course in the 11th semester of the Veterinary Medicine Program at UFRPE, with a total workload of 420 hours. Its purpose is to provide students with practical experience necessary to develop the essential skills and competencies needed to become qualified veterinarians. The internship was completed at Produmar Exportadora de Produtos do Mar LTDA and in the Imaging Diagnostics Department at Veterinarii Recife from April 1 to June 19, 2024, under the supervision of veterinarians Ana Carolina Baptista Freitas Braga and Yannike Lourenço Maciel, and under the guidance of Professor Dr. Andrea Paiva Botelho Lapenda de Moura. The internship provided hands-on experience in animal product technology and imaging diagnostics, successfully fulfilling the objectives of the Mandatory Supervised Internship.

    The Mandatory Supervised Internship (ESO) is a compulsory course in the eleventh period of the Veterinary Medicine bachelor's program at the Federal Rural University of Pernambuco (UFRPE). It is based on 420 hours of practical experience in a specific subfield of veterinary medicine, aiming to make the student capable of performing their duties upon acquiring the title of veterinarian. In this context, the main objective of this report is to demonstrate the primary activities carried out by the student Amisterdam Roque da Silva Filho, under the guidance and supervision of Dr. Maria Betânia de Queiroz Rolim, veterinarian Pedro Generino da Silva Júnior, and veterinarian Márcia Maria de Souza Belo. The secondary objective is to report on the inspection of vacuum-packed beef in a supermarket distribution center. The ESO took place from April 1 to May 10, 2024, at the company Noronha Pescados, and from May 13 to June 14, 2024, at the Arco-mix supermarket distribution center. The internship provided practical learning of the skills necessary for proficiency in the profession as a technical supervisor.

    This compulsory internship report seeks to detail the activities carried out at Carapitanga Indústria de Pescados do Brasil LTDA between April 1 and June 14, 2024, as a requirement for fulfilling the Compulsory Supervised Internship, course in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE), under the guidance of Prof. Dr. Andrea Paiva Botelho Lapenda de Moura and the supervision of veterinarian Tatiane Ribeiro Freire, the establishment's technical manager. The activities include receiving, processing, packaging, storing and dispatching fish (shrimp, fish and lobster). These processes are the responsibility of the company's Quality Control department, which is responsible for managing, guaranteeing and maintaining the integrity, attributes and excellence of the products, in order to ensure safety for the end consumer. These activities were extremely important for gaining knowledge about the role and importance of the veterinarian as technical manager in the fish industry.

    This work is a supervised internship report carried out at Indústria PRODUMAR - Companhia Exportadora de Produtos do Mar, located in the city of Natal, Rio Grande do Norte, as an integral part of the Mandatory Supervised Internship discipline of the Veterinary Medicine course, referring to the area of quality analysis of fish and was carried out between the months of October 2023 and February 2024, totaling 420 hours, under the supervision of Veterinary Doctor Ana Carolina Baptista Freitas Braga and guidance from Prof. Andrea Paiva Botelho Lapenda de Moura. The objective of the internship was to acquire knowledge, professional experience in quality control and food safety, as well as technical responsibility to work in the fish industry. An experience was carried out in the laboratory where it was possible to carry out laboratory tests, training for new hires and organization of quality control spreadsheets. In its second part, the Report presents a Bibliographical Review on the Classification of Tuna for commercial purposes, in which it is possible to conclude that tuna fishing is extremely important for Brazil, mainly for the state of Rio Grande do Norte.

    The Estágio Supervisionado Obrigatório (ESO) is a discipline of the eleventh period of the Bachelor of Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE), with a workload of 420 hours. During the internship, the student João Paulo Brito da Costa, did na internship at the company Carapitanga Indústria de Pescados LTDA, under the guidance of Doctor Elizabeth Sampaio de Medeiros and supervision of Veterinary Doctor Tatiane Ribeiro de Freire. The activities took place from May 30 to August 11, 2023, with a workload of 40 hours per week in the Quality Control sector. The objective of the internship was to acquire practical knowledge in the inspection of food of animal origin, especially fish, with a focus on the Quality Control sector. Several activities such as laboratory analysis, temperature control, control of chemical residues, evaluation of organoleptic properties, etc. were carried out, collaborating to consolidate the importance of knowledge in quality control that the veterinarian must have.

    The Estágio Supervisionado Obrigatório (ESO) is the obligatory discipline of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE) and aims to describe all the activities of the student, lived in the experience of the internship of 420 hours. The ESO was held at Carapitanga Indústria de Pescado do Brasil LTDA, located in Jaboatão do Guararapes - PE. At the company, the steps taken were: product deglazing; receipt of fish; improvement; packaging; transport and processing, complying with the provisions of its HACCP (hazard analysis and critical control points); and temperature control throughout the production process. All actions were monitored by Carapitanga's Quality Control (CQ) team. ESO supervision was carried out by Veterinary Doctor Tatiane Ribeiro Freire, QC Coordinator. The activities were carried out from November 8, 2022 to March 3, 2023, during the Mandatory Supervised Internship discipline, under the guidance of professor Dr Maria Betânia de Queiroz Rolim. The internship is of great importance, as it provides technical experience in the face of the responsibility of the responsible technician, a veterinarian, in the fish processing industry, under the control of the Federal Inspection Service.

    Relato de experiência: beneficiamento de camarão na indústria de pescado

    The Estágio Supervisionado Obrigatório (ESO) discipline has 420 hours, and is a component of the mandatory curriculum for the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco. The activities were carried out in Carapitanga Indústria de Pescado do Brasil Ltda, under the guidance and supervision, respectively, of Professor Dr. Maria Betânia de Queiroz Rolim and Quality Coordinator/Technical Manager Tatiane Ribeiro Freire; with the objective of completing the Veterinary Medicine course, demonstrating the main activities performed by the student Daniela de Souza Simões Santos and reporting the experience with the processing of shrimp. The ESO took place with a workload of six hours a day, during the period from February 12, 2022 to May 27, 2022. The internship allowed an innovative experience for the student; where it was possible to observe the entire process in a fish processing industry, from the moment of reception to the moment of dispatch; in accordance with the requirements of the Federal Inspection Service, providing the routine and technical knowledge of a technically responsible veterinarian.

    The present work had as general objective to report the period experienced to the fulfillment of the discipline 08525 - Mandatory Supervised Internship (ESO) of the Bachelor's Degree in Veterinary Medicine; and as a specific objective to describe the quality control flowchart in the fish industry. The ESO took place during the period from August 17 to October 30, 2020, at Noronha Pescados LTDA, located in an industrial complex in the neighborhood of Várzea, Recife, PE. Under the supervision of the technical and veterinary officer Simone Maria Floro dos Anjos, and under the guidance of Professor Elizabeth Sampaio de Medeiros. ESO made it possible to acquire technical and practical knowledge of the fish industry, showing the importance of self-control programs. Among the activities carried out during the internship was the receipt of fish, processing, packaging, storage and shipping, and it is also possible to understand the role of the Veterinary Doctor in the fish industry.

    In the food industry, especially seafood, it is extremely important to identify marine species through the production cycle and product processing. Therefore, it is necessary that the processing companies are qualified to guarantee the consumer a safe, quality food without fraud. Consequently, the Mandatory Supervised Internship was carried out at Carapitanga Indústria de Pescados do Brasil LTDA, with the objective of enabling the experience of the routine of the quality control sector of a fish processing establishment, promoting the acquisition of experience in the industrial environment and placing in practice knowledge acquired during graduation. Food security is a fundamental issue, not only related to the identification of species, but to all stages of the production chain. Above all, the contribution of food safety and quality control programs to the improvement of establishments that process animal products it’s of high importance.
