For this to happen, the fish industries hire the Veterinary Doctor to assume the position of Quality Technical Manager. The objective was to monitor the activities of the quality control sector of a fish processing unit under the supervision of the Veterinary Doctor, expanding knowledge in the inspection area, through the completion of the Mandatory Supervised Internship of the Veterinary Medicine course. Also, perform a literature review on some important points of the Quality Control team. The veterinarian and his Quality Control team are responsible for ensuring that the food is produced safely, based mainly on good manufacturing practices and on Hazard Analysis and Critical Control Points. Hygienic-sanitary procedures must be applied to personal hygiene, the work environment, utensils, equipment, handling of products and the entire production chain. In order to avoid any contamination and ensure that the food does not cause illness or any other harm to the consumer's health. Therefore, the quality professionals of the company Noronha Pescados performed several techniques that allowed the manufacture of a safe food, such as: temperature control in products, evaluation of organoleptic characteristics in fresh fish, Monier-Williams test in shrimp and others. Therefore, the important role of the company's Quality Control stands out, as it enables, through the insertion and monitoring of the control elements of the Self-Control Programs, the quality and integrity of the product. In this way, the literature review allowed the reiteration of some topics experienced in the internship, adding practical and theoretical knowledge, providing opportunities to observe the importance of the joint action of the veterinarian with the Quality Control team for the fish industry.
