    This paper reports the period experienced in the fulfillment of the discipline 08525 - Mandatory Supervised Internship, of the Bachelor's Degree in Veterinary Medicine, held from March 2 to June 12, 2020, at Tudo do Mar Pescados, located in Recife – PE, Brazil, under the supervision of the company's Technical Manager, Veterinary Doctor Rômulo Diniz Sobreira. All activities were carried out under the guidance of Prof. Dr. Elizabeth Sampaio de Medeiros. The general objective was to describe the steps supervised and monitored by the student as a Quality Control intern at the company, and the specific objective, to describe the use of elasmobranch meat, also commercialized in the industry chain.
