Item Levantamento sorológico de Leptospira spp. em cães (Canis familiaris) atendidos no Hospital Veterinário Universitário (HVU) da UFRPE, Pernambuco, Brasil(2024-07-12) Correia, Dhebora Silvério; Cavalcanti, Erika Fernanda Torres Samico Fernandes; http://lattes.cnpq.br/5256493441853885; http://lattes.cnpq.br/0954918162437676Under the guidance of Prof. Dr. Érika Fernanda Torres Samico Fernandes, the present work aims to report and discuss the activities developed during the Estágio Supervisionado Obrigatório (ESO), an essential subject for the completion of the Veterinary Medicine course at the Universidade Federal Rural de Pernambuco (UFRPE). During the period from April 1, 2024, to April 30, 2024, the internship was carried out at the UFRPE Infectious Diseases Laboratory, with an emphasis on microbiology, infectious diseases of bacterial etiology and a special focus on the study and laboratory diagnosis of leptospirosis. The experience also made it possible to write a scientific article focused on the serological survey of Leptospira spp. in dogs (Canis familiaris) treated at the Hospital Veterinário Universitário of UFRPE, located in the Metropolitan Region of Recife. Then, from May 15, 2024, to June 28, 2024, the internship continued at the Laboratory of Inspection and Technology of Milk and Derivatives at the Universidade Federal da Bahia (UFBA), where it was possible to experience a routine focused on physical-chemical and microbiological analysis of milk and dairy products, in addition to research activities aimed at studying mastitis in ruminants, also aiming to promote technical assistance to the dairy industries and rural producers in the State of Bahia. The course load completed in the ESO discipline made it possible to combine theory with practice, expanding learning about laboratory practices applied to infectious diseases and the inspection of dairy products of animal origin, thus strengthening academic training with an emphasis on Preventive Veterinary Medicine, a professional area of great relevance in the context of One Health.Item Importância do fluxograma operacional e sanitário dos entrepostos de carnes em supermercados(2019-12-12) Silva, Thayná Milena Siqueira Sousa; Medeiros, Elizabeth Sampaio de; http://lattes.cnpq.br/5998863169551704; http://lattes.cnpq.br/4525803618871640From August 12 to November 18, 2019, Monday to Friday, from 1 pm to 7 pm, fulfilling the regime of 6 hours per day comprehending 30 hours per week, and fulfilling the 420 hours of the Compulsory Supervised Internship (CSI). The CSI was performed at a hypermarket located in the North Zone of Recife - PE. The structure of the site has six perishable food sectors such as: Meat products warehouse, fishmonger, sausage, horti-fruti, bakery and a cafeteria. During the CSI period, daily audits were carried out in the establishment's perishables sectors to monitor the length of what is required by the Good Manufacturing Practices Manual required by Collegiate Board Resolution (RDC) No. 216 and No. 275 from the National Health Surveillance Agency of Brazil (ANVISA), during the audits a checklist was applied containing such points: Hygienic-sanitary conditions; application of the GMP manual; temperature (products, displays and cameras); labeling; traceability; shelf life; product quality and Integrated Pest Control. Thus the sectors were visited twice a day to apply the checklist containing the above topics, when any item was in disagreement, was noted in the checklist and then executed the action plans, which consisted of: training in the nonconformity found, explaining to employees the correct way to carry out a given process and emphasizing the importance of performing them correctly to ensure a safe food for the consumer. For the elaboration of the tables we used the descriptive statistics in the data obtained through the application of the checklists. Through the tables it can be noted that in all sectors evaluated it was necessary to apply action plans more frequently in relation to sanitary conditions and GMP. This can be easily explained, as both are points of analysis that closely depend on human resource management. Although training is carried out on a monthly basis, on topics that cover each item evaluated in the checklist in detail, it is often difficult for sector managers to release the minimum number of employees required to attend the training. This is due to the production demands of the store. This point has been widely requested in the company, as it is known that the full operation of the GMP manual basically depends on its application by the employees.Item Elaboração de folder para educação sanitária no serviço de inspeção do estado Pernambuco(2019-12-13) Silva, Marcelo José Ferreira Batista da; Medeiros, Elizabeth Sampaio de; http://lattes.cnpq.br/5998863169551704; http://lattes.cnpq.br/8757095515712705The Agency for The Defense and Agricultural Supervision of the State of Pernambuco (ADAGRO-PE) aims to plan, develop, coordinate and execute programs to promote health regulations, such as health education. During the period of the Mandatory Supervised Internship (ESO) the monitoring of work was carried out in the supervision of establishments such as meat warehouse in supermarkets, dairy factory and in fish processing units and fish products located in the city of Recife and its metropolitan region. ADAGRO's inspection actions were motivated by monitoring, surveys, initial registration, registration renewal, sample collection and complaints. In the inspections of the establishments, inspections were carried out on site and documentary in order to verify the compliance with the sanitary requirements before the state inspection service. Among the actions foreseen in the work developed by ADAGRO, health education is an initiative that aims to guide consumers to understand and differentiate a clandestine product from a registered product, thus ensuring the consumption of an innocuous product. As a tool for gaining this knowledge, the elaboration of a folder came with efforts to ensure that consumers can see a product of quality animal origin.
