    The objective of this work is to report all the activities carried out in the Obligatory Supervised Internship (ESO), in the fish processing company COMPESCAL - COMÉRCIO DE PESCADO ARACATIENSE LTDA, located in the city of AracatiCE, in the months of May and June 2019. In the stages of the shrimp processing Litopenaeus vannamei, in two forms, whole shrimp and headless shrimp, as well as the processing of the lobster Scyllarides brasiliensis (lobster shoe), Panulirus laevicauda (green Cape lobster) and Panulirus meripurpuratus (red lobster). From the arrival of the raw material in the reception sector, until the finalization of the process known as expedition. The laboratory analyzes were also followed, as the company checks the hygiene of the salon and its employees regarding Good Manufacturing Practices (GMP), verification of the quality control of the fish and other knowledge that a food company has to to offer.

    Produção e composição bromatológica de Desmanthus pernambucanus (L.) Thellung cultivada na presença ou ausência de cobertura morta com folhas de Nim

    Feeding is one of the factors that most upsets animal production. As a result, the irregularity of food supply in the semi-arid region is one of the factors that preoccupies cattle ranchers in the region. In order to reduce such costs, the food can be produced on the property where the livestock is already exploited. An alternative widely adopted as a way of feeding is the use of native vegetation, this vegetation although adapted to the climatic conditions of the region, yet suffer from them, and one of them is the evapotranspiration that is the great barrier to be overcome. For this purpose, the mulching of the soil deserves attention. Thus, the objective was to evaluate the production and bromatological composition of Jureminha cultivated in the presence or absence of dead cover of Nim. Some of the data collected were evaluated in an experiment that was conducted in the period from January 20, 2016 to May 15, 2018. This test was carried out in the experimental field belonging to the Federal Rural University of Pernambuco, Academic Unit of Serra Talhada. The data used in this work were those obtained in 2017. In total, two cuts weremade, the first being May 31 and the second onAugust 08, 2017, where dry matter (DM) production was evaluated, mineral matter (MM) 33%; 32%, crude protein (CP) 21%; 9.6%, neutral detergent fiber (NDF) contents 54.8%; 67.5%, acid detergent fiber (FDA) 31.6%; 49.6% and Lignin 8.8%; 8.2% of the leaf andstem fractions respectively, besides the productive variables leaf mass 275.4,stem mass916.1, total mass 1191.5(kg DM / ha). To perform the statistical tests, theprocedures PROC UNIVARIATE, GLM and MIXED of the Statistical Analysis System (SAS) software program were used. The treatment had no significant response (P> 0.05), and the short exposure time to mulching (155 days) may be the response to this factor. It was also observed the loss of plant vigor and this is related to the cutting frequency adopted for the cut intensity equal to 40 cm.

    The use of marine resources for various purposes has been used by society since the earliest times, consuming fish is among FAO's recommendations as an ideal for high-protein food. Faced with technological innovations and growth of industries, the beneficiation has much to add, from the moment the population proposes products that are easy to prepare, or semi-ready, which saves time at the time of preparation. This report describes some of the beneficiation activities at the company Qualimar Pescados, where shrimps, fish andlobsters are processed, these fish according to the type of processing can offer different types of final products. And it also discusses the standards of quality, marketing and other knowledge that a food industry has to offer.

    Influência do transporte e cuidados pós-colheita na comercialização de hortaliças na FAST - Feira Agroecológica de Serra Talhada

    Organic agriculture has become a very relevant alternative when it comes to the consumption of healthy foods and stands out for the quality with which the products arrive at the table of the consumer. With this, agro-ecological fairs are characterized as an important means of commercialization of these products. However, these foods have a high perishability in nature. Post-harvest losses become frequent when uncollected, sanitized, packaged, stored and transported to the place of sale in the proper form. It is worth mentioning that the wrong accommodation in transportation provides depreciation in the quality of food. Therefore, the present research was developed at the agro-ecological fair of the city of Serra Talhada-PE, aiming to describe the different forms of care in the harvest, post-harvest and transport processes, and the effects on the commercialization, having as specific list : the main vegetables produced and the post-harvest care and; to analyze the influence of the different types of transport,packaging / storage and exhibition used during the commercialization of the vegetables. Observations were made on the properties of each farmer, taking into account characteristics such as: harvesting, packaging and transportation. Already in the fair: the hygiene, the freshness, the kneading, and the consistency (wilt) of the products, were the criteria studied. During the harvesting process it was possible to verify that the forms of packaging and the types of vehicles used for transportation were the factors that most influenced the appearance of the products, contributing in the percentage of losses and consequently in damages to the producers. The exposure time and the local temperature during the fair operation were factors that contributed to the depreciation of the products sold.
