    Obtenção e caracterização físico-química e nutricional de concentrado proteico oriundo de resíduos de filetagem de saramunete, Pseudupeneus maculatus (Bloch, 1793)

    The aim of the present study was to obtain and characterize the protein concentrate of saramunete filleting waste, Pseudupeneus maculatus. Two types of saramunete protein concentrate (CPS) were developed, type A and type B, which can be differentiated by color and odor, evaluating yield, pH, water activity, chromatic coordinates, volatile nitrogen bases, humidity, protein, fat and ash.. The type A saramunete protein concentrate showed lower yield, despite being more acidic (lower pH) and higher L* value (brightness), lower a* value (red/green) and higher b* value (yellow/blue) than CPS type B. The water activity, moisture percentage and volatile nitrogen bases of CPS were low and with no difference between treatments. CPS type A had a higher percentage of protein, indicating better protein quality. Furthermore, it presented a lower amount of lipids, indicating that it is less susceptible to lipid oxidation. Therefore, type A CPS is a good way to add value to saramunete waste as it presents a good CPS yield, appreciable physical-chemical characteristics and nutritional aspects compatible with other fish protein concentrates, having potential for use in food products.
