Originally, the state equations had underlying pure components. Because they were first mixed together, they were only used for mixtures of compounds and polar glassware. Industrial problems most often involve contact between the two phases or more in equilibrium. Consequently, the process of such processes is ideal for thermodynamic models and accurate to represent the balance between phases. The objective of this work was to implement a program to calculate the water vapor pressure in an electric power machine, using state-of-the-art technology. Peng-Robinson's EoS was selected because it was welcomed by area authors and compared with Antoine's equation to obtain optimum results of vapor pressure, benzoic acid, ethanol and acetic acid. The HACCP tool is a logical and direct control system based on the prevention of problems, allowing the identification of critical biological, physical and chemical points during the food production stages. The objective of this work was to elaborate and implement the HACCP plan for the production chain of Muçarela cheese from a medium-sized dairy industry, located in the city of Entre Rios de Minas, Minas Gerais. Work was started with a diagnosis in the prerequisite program which are (BPH) and (PPHO) through a checklist, which provided a significant report of nonconformities, distributed in the industry sectors under study. In order to evaluate the hygienic conditions, data analyzes were carried out by the industry with results of microbiological analysis of equipment and utensils, hands, aprons and gloves of the production and final product employees. At the end of this study an HACCP plan was drawn up, addressing the organizational chart of the company; the HACCP team; description and composition of the product; flowchart and description of the manufacturing process of Muçarela cheese; biological and chemical hazards and their preventive and corrective measures, as well as the determination of control points and the identification of critical control points. With the results obtained from the check list, it was possible to verify that GMP and PPHO are fully deployed, detecting 6% of nonconformities, for reasons that the industry is undergoing to expansion, and it is classified according to DRC 275/202 in group 1. In the hygienic conditions obtained by the results of the microbiological analyzes, it was verified that the microbiology sector is in adaptation and needs a planning for its full functioning, but it was verified that the final product is within the microbiological standards by the current legislation . Veterinarians perform important role in areas such as Public Health and Collective Health, which constitute an eminent field of interdisciplinary action, through the application of professional knowledge, aiming at the prevention of diseases and the health’s promotion and recovery. The present undergraduate thesis contains the activities descriptions developed in the Local Health Systems IV and the Food Processing and Analysis Laboratory (UFRPE), both in the city of Recife, Pernambuco. The objective of these internships was to accompany, to develop and to perform activities and actions, based in the professional and multiprofessional performances, within the competencies of internship’s places, through practical skills. In the first place was performed an experience in the Public Health Surveillance sector – which includes the Environmental Health Surveillance, the Epidemiological Monitoring, Surveillance of the Workers Health and the Health Surveillance – and in the Health Care (Public Health), through the local coordination of Expanded Family Health and Primary Health Care Center. In the Laboratory there was did the monitoring of practical classes and the development of a physical-chemical and microbiological study with pizzas sold on an avenue belonging to the territory of the Local Health Systems IV. The activities provided constructive moments, also promoting criticality, within the moral and ethical-professional precepts. Inspections of products of animal origin were carried out, by accompanying veterinarians as technical responsible in the establishments above, The supervision was performed by the veterinary doctor of the company Consultechs, Márcia Belo. All the described actions are correlated with compliance with discipline 08525 - Compulsory Supervised Internship of the Bachelor Degree in Veterinary Medicine, Federal Rural University of Pernambuco - UFRPE, under the guidance of Professor Maria Betânia de Queiroz Rolim.
