    Análise das verificações oficiais de elementos de controle in loco realizadas pela ADAGRO na Região Metropolitana do Recife

    O Estágio Supervisionado Obrigatório (ESO) é a disciplina obrigatória do décimo primeiro período do curso de bacharelado em Medicina Veterinária da Universidade Federal Rural de Pernambuco (UFRPE). Tem por base a vivência prática de 420 horas, em determinada área da medicina veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de médico veterinário. Neste sentido, o presente relatório tem como objetivo principal demonstrar as principais atividades exercidas pela discente Louise Ebrahim Teixeira na Agência de Defesa e Fiscalização Agropecuária de Pernambuco (ADAGRO), sob orientação e supervisão, respectivamente, da professora Drª Maria Betânia de Queiroz Rolim e do Fiscal Estadual Agropecuário Flávio de Oliveira Silva; e como objetivo secundário, analisar, através de um levantamento de dados oficiais, as não conformidades mais frequentes observadas durante as VOECs in loco, realizadas pela ADAGRO na Região Metropolitana do Recife, durante o período do estágio. O ESO ocorreu no período de 14 de abril de 2025 a 02 de julho de 2025, na ADAGRO, órgão responsável pela execução das políticas de defesa agropecuária no Estado. A experiência do estágio proporcionou uma visão mais ampla acerca da importância do profissional médico veterinário na área de inspeção de produtos de origem animal, ao mesmo tempo que permitiu uma compreensão detalhada das atribuições e prerrogativas inerentes à atuação dos Fiscais Estaduais Agropecuários, bem como das competências designadas à ADAGRO no estado de Pernambuco, além do arcabouço legislativo que rege estas operações. A imersão nessa rotina foi fundamental, pois possibilitou uma percepção direta da realidade dos estabelecimentos inspecionados no território pernambucano, evidenciando os desafios intrínsecos enfrentados por estes e destacando o papel crucial das ações de regulamentação e fiscalização empreendidas por este órgão na garantia da segurança dos alimentos e, assim, da saúde pública.

    Análise de perigos e defeitos em lagostas inteiras congeladas destinadas à exportação: relato de experiência

    O Estágio Supervisionado Obrigatório (ESO) é a disciplina final e obrigatória do décimo primeiro período do curso de bacharelado em Medicina Veterinária da Universidade Federal Rural de Pernambuco (UFRPE). Essa etapa curricular consiste em uma vivência prática de 420 horas em uma subárea específica da medicina veterinária, com o objetivo de promover a imersão do estudante na área desejada e prepará-lo para o exercício profissional e a obtenção do título de médico-veterinário. Neste contexto, o presente relatório teve como propósito apresentar as atividades desenvolvidas pela estudante Eduarda Pimentel Gomes, sob orientação da professora Dra. Maria Betânia de Queiroz Rolim e supervisão dos médicos-veterinários Flávio Oliveira Silva e Tatiane Ribeiro Freire. O objetivo secundário foi descrever a experiência no beneficiamento de lagostas inteiras congeladas destinadas ao mercado externo, abordando os principais perigos e defeitos encontrados. O ESO foi realizado no período de 14 de abril a 25 de maio de 2025, na Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO), em Recife, PE; e de 28 de maio a 2 de julho de 2025, na Carapitanga Indústria de Pescados LTDA, no município de Jaboatão dos Guararapes, em Pernambuco. O estágio permitiu compreender a relevância do médico-veterinário na inspeção de alimentos de origem animal e na saúde pública, destacar o impacto das boas práticas de fabricação e do fluxo higiênico-sanitário na inocuidade dos alimentos obtidos de animais, e reforçar o papel do médico-veterinário como responsável técnico em estabelecimentos alimentícios.

    Aproveitamento de soro de leite proveniente da produção de queijos (relato de experiência)

    The Obligatory Supervised Internship (OSI) is the compulsory subject of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It is based on the practical experience of 420 hours in a certain sub-area of veterinary medicine, whose focus is to make the student able to exercise his/her function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report is to demonstrate the main activities carried out by the student Sayoanara Germano Barreto, under guidance and supervision, respectively, by teacher Maria Betânia de Queiroz Rolim; Veterinary Doctor George Pires Martins and Veterinary Doctor Felipe Pereira de Melo; and as a secondary objective, report on the use of whey from cheese production. The OSI took place from August 30th to November 16th, 2021, being part held at the Fazenda Polilac and the other part held at Farmatech Consultoria em Alimentos, both located in Garanhuns – PE. The internship allowed the elucidation of the role of the veterinary professional as a consultant and technical manager, as well as in the quality control of their products.

    Atualizações do Regulamento da Inspeção Industrial e Sanitária de Produtos de Origem Animal: 2017 a 2022

    The Estágio Supervisionado Obrigatório (ESO) is the compulsory subject of the eleventh period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE), which aims to increase the student's insertion in professional practice. It is based on the practical experience of 420 hours, in a certain subarea of veterinary medicine, whose focus is to make the student able to perform his/her function, through the acquisition of the title of generalist veterinarian. In this sense, the main objective of this report is to demonstrate the main activities carried out by the student Alexandre Corrêa de Castro Júnior, under the guidance of the professor Maria Betânia de Queiroz Rolim and supervision by Veterinary Doctors Glenda Mônica Luna de Holanda and Maria Betânia de Queiroz Rolim; and as a secondary objective, to evaluate the updates by Regulations for Industrial and Sanitary Inspection of Products of Animal Origin (RIISPOA), through a study between the most significant rules of Decree 10.468/2022 and previous decrees, systematizing them as different in the various sectors of Brazilian industrial agribusiness. The ESO took place from October 5th to December 10th, 2021, at the Agência de Fiscalização e Defesa Agropecuária do Estado de Pernambuco and from May 30th to June 8th, 2022, at the Laboratório de Inspeção de Carne e Leite - LICAL, in a remote. The internship allowed to experience in loco, the work of the veterinarian as an agricultural inspector and supervisory agent and complying with specific legislation on the inspection of products of animal origin, whether meat or dairy, among others. But it also allowed to experience, in a remote way, the scope of bibliographic research, where both areas contributed in a majestic way, to the veterinary medical training of the student.

    The Estágio Supervisionado Obrigatório (ESO) is a mandatorysubject for the eleventhsemester of the Bachelor's Degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on 420 hours of practicalexperience in a specificsub-areaofveterinary medicine, with the aim of qualifyingstudents to performtheirduties by obtaining the title of veterinarian. In this sense, the main objective of this report is to demonstrate the main activitiesperformed by student Eliabe Lieda Da Silva, under the guidance and supervision of Professor Dr. Maria Betânia de Queiroz Rolim; Sanitarian Maria Eugênia Farias Gama; and Veterinarian and Technical Manager Samantha Lopes De Barros, respectively. Itssecondary objective is to evaluate the good agricultural practicesadopted on rural properties that supplymilk to the FACO Dairy Industry. The ESO tookplace from April 1 to June 19, 2024, distributed in the EnvironmentalSurveillance of the Sanitary District VI of Recife - PE and in the Indústria de Laticínios FACO LTDA of Ribeirão - PE. The internshipallowed the possibility of being in different areas, experiencingexperiences and acquiringtheoretical and practical knowledge in the area of public health and inspection of products of animal origin, fundamental for training in veterinary medicine.

    Boas práticas no varejo alimentar: atuação do médico veterinário responsável técnico à prevenção da COVID-19 (relato de caso)

    The Compulsory Supervised Internship is a mandatory discipline for the veterinary medicine course at UFRPE, which is a moment of fundamental practical experiences in training. This report demonstrates how activities developed at Hipermercado Carrefour Comércio de Indústria LTDA, located in the North Zone of the city of Recife - PE, during the period from March 2 to June 26, 2020, totaling a total workload of 420 hours. This was supervised by veterinarian Sandra Souto de Araújo and supervised by Drª Mª Betânia Queiroz de Rolim. During the internship period at the World Health Organization, the state of contamination by the new Coronavirus (SARS-CoV-2) increased, declaring the COVID-19 pandemic, which brought many impacts to a society. In this context, the general objective of this work is to report the period experienced to fulfill the mandated supervised internship; and as a specific objective to focus on the role of the veterinarian as a technical officer in the prevention against COVID-19 in a retail establishment in the north of Recife. In view of the current scenario, a protocol was created through the company's crisis committee with protective measures in accordance with state and municipal decrees, in order to maintain the safety of employees and customers during the pandemic period. A check list was applied daily and audits were carried out in the perishable sectors, management, monitoring and compliance with determinations and adjustments, in compliance with ordinances and decrees required by the state government of Pernambuco and other federal requirements. The legislation brings restrictive measures to the exercise of economic activity by supermarkets and hypermarkets, located in the Municipality of Recife, there is no current course of the COVID-19 pandemic. When any item in disagreement was found, it was noted in a spreadsheet and action plans were carried out through training in the sectors on the non-compliance (s) found. ESO provided technical knowledge regarding the role of the veterinarian in charge of the retail technician, communicating the routine and imposed challenges of the COVID-19 pandemic, to promote the safe food trade and public health.

    Coleta de amostras de água de abastecimento e sua importância no controle de qualidade para os produtos de origem animal

    The Mandatory Supervised Internship (ESO) is a required element for the Bachelor's Degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It consists in a 420 hours internship in a specific field of veterinary medicine. It allows the student to perform their role in a supervised environment, as a final step in to become a veterinarian. This report aims to demonstrate the main activities developed by the student Roberta Vieira de Queiroz at the Pernambuco Agricultural Defense and Inspection Agency (ADAGRO), under the guidance of Professor Dr. Maria Betânia de Queiroz Rolim, supervision of the State Agricultural Inspector Dr. Glenda Mônica Luna de Holanda and Co-Supervision of Dr. Flávio de Oliveira Silva. This document also aims to describe procedures and methods applied during inspection actions performed by ADAGRO. The monitoring of water supplies will be emphasized due to its importance in food preparation and direct consumption by the population. The ESO took place from July 4, 2022 to September 15, 2022 at ADAGRO, an institution responsible for promoting agricultural defense, inspection and inspection. ADAGRO is an important institution in the inspection and regulation of establishments that produce, process, classify, store, transport or sell agricultural products. The internship allowed monitoring actions of Pernambuco’s inspection service in monitoring, inspecting, initial registration, registration renewing, collection of samples in addition to analysis of sketches of the establishments. Thus, with this practical experience, it was possible to verify and understand the importance of the veterinarian in food industry, either from the perspective of a state agricultural inspector or with the attributions of the Technical Responsible (RT), in order to ensure that safe and high quality animal products are made available to consumers.

    The Estágio Supervisionado Obrigatório (ESO) is the compulsory subject of the 11° of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE), of extreme importance for the formation of the student. It is based on practical experience of 420 hours, in a specific sub-area of veterinary medicine, whose focus is to enable the student to perform his/her function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report is to demonstrate the main activities carried out by the student Amanda Maria Moura da Silva, under the guidance and supervision, respectively, of the professor Dr Maria Betânia de Queiroz Rolim, the veterinarian and technical manager George Pires Martins and the doctor veterinarian and technical manager Tatiane Ribeiro Freire, and as a secondary objective, to compare the hazards identified in the hazard analysis system and critical control points of the process of processing of whole type A pasteurized milk from Polilac and the lobster processing chain Carapitanga. The ESO took place from June 27 to July 29, 2022, at the Indústria de Laticínios e Derivados Lácteos do Agreste Meridional Eireli – Fazenda Polilac, located on the BR-423 highway, in the rural area of the municipality of Garanhuns-PE and from August 1 to September 16, 2022, at Carapitanga Indústria de Pescados do Brasil Ltda, located in the municipality of Jaboatão dos Guararapes-PE. The ESO allowed the technical and practical knowledge in the area of inspection of food of animal origin, showing the role of the veterinarian in the quality control of the products and as technical responsible.

    The Mandatory Supervised Internship (MSI) is the compulsory subject of the eleventh period of the bachelor’s degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE). It was realized from June 27, 2022 to September 08, 2022 at Animalis veterinary surgery and clinic, located in Recife, Pernambuco. This subject is based on a pratical experience of 420 hours, in a specific area of veterinary medicine, whose focus is to make the student able to exercise theirfunction by acquiring the title of veterinary doctor. This report aims to demonstrate the main practical activities developed by the student Erika Caroline Souto de Lima, with the guidance and supervision, respectively, of the professor Dr Maria Betânia de Queiroz Rolim and the veterinary doctor Lais Julia Clímaco da Silva, in small animals medical clinic’s area; and also describe the clinic’s structure and functioning and a clinical case of heartworm disease in a canine of the Shih Tzu breed, on which was held a discussion about the findings, treatment and the finals considerations. The internship allowed the observation and understanding of the role and importance of the veterinary doctor in public health both to investigate health disorders that affect small animals, provide treatement and better life qualitty to them, as to guarantee the safety of theirs tutors, since it is a zoonosis.

    Elaboração de queijo mussarela e suas análises

    The Obligatory Supervised Internship (ESO) is the compulsory subject of the eleventh period of the Bachelor's Degree in Veterinary Medicine at the Federal Rural University of Pernambuco (UFRPE), being indispensable. It is based on the practical experience, of 420 hours, in a certain subarea of veterinary medicine, whose focus is to make the student able to exercise his/her function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report is to demonstrate the main activities carried out by the student Silas Rafael and Silva, under the guidance and supervision, respectively, of Mrs. Maria Betânia de Queiroz Rolim and the veterinarian and technical manager (RT) Ana Erundina de Luna Moraes Leite; and as a secondary objective, to report the production of mozzarella cheese and its analyses. The ESO took place from April 12, 2021 to June 30 of that same year, at Indústria de Laticínio LETA Ltda, an establishment in the food sector aimed at the dairy market. The milk and dairy processing unit features Federal Inspection Service (SIF) since 2017, and the head office is located at Av. Projetada, 20 – Industrial Park, in the municipality of Bom Conselho, a city in the Agreste region of Pernambuco, which is responsible for preparing, producing and shipping a diversified line of dairy products. Currently, the company acts as Grupo Bom Tempo, being responsible for the manufacture of dairy products and dairy products composed of the Leta, Frutigutti and Puro DO Leite brands. The internship allowed us to understand the importance of the joint work between the veterinarian, as technical responsible, and professionals from the Federal Inspection Service (SIF), in milk and dairy establishments, which aims to offer quality dairy products, innocuous and safe for human consumption.

Tem por base a vivência prática de 420 horas, em determinada área da medicina veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de médico veterinário. Neste sentido, o presente relatório teve como objetivo principal demonstrar as principais atividades exercidas pela discente Ingrid Cavalcanti do Nascimento Batista, sob orientação e supervisão, respectivamente, da professora Drª Maria Betânia de Queiroz Rolim; da médica-veterinária e responsável técnica Tatiane Ribeiro Freire e da médica-veterinária Kallyane Lira de Araújo. Apresenta como objetivo secundário relatar sobre a elaboração do queijo de coalho e suas análises. O ESO ocorreu no período de 14 de abril de 2025 a 22 de maio de 2025, na Carapitanga Indústria de Pescado do Brasil Ltda., localizada no município de Jaboatão dos Guararapes-PE, e no período de 26 de maio de 2025 a 04 de julho de 2025 na Indústria de Laticínios Bomtempo LTDA (Frutigutti), localizada na Rodovia AL-220, S/N, Lote 19, Quadra B, Polo multisetorial, Distrito Pé leve, Limoeiro de Anadia-AL. O estágio obrigatório permitiu conhecer o papel do médico veterinário no controle de qualidade e na responsabilidade técnica, de forma prática, na área de inspeção de produtos de origem animal.

In this sense, the present report has as its main objective to demonstrate the main activities performed by the student Gerlânia Farias dos Santos in the area of Small Animal Clinical Medicine, from November 08, 2022 to December 19, 2022, at the Hospital Veterinário da Universidade Federal Rural de Pernambuco, located in the city of Recife and Small Animal Surgery Clinic, from January 02, 2023 to February 03, 2023, at the Hospital Veterinário da Universidade Federal Rural de Pernambuco, located in the city of Recife. The ESO had orientation and supervision, respectively, of the professor Dr. Maria Betânia de Queiroz Rolim and the Veterinarian Dr. Paula Gabriela da Silva Cardoso and the Veterinarian Dr. Robério Silveira de Siqueira Filho; and as secondary objective, report on staphilectomy and rhinoplasty for treatment of brachycephalic syndrome in a pug dog - Case report.

Tem por base a vivência prática de 420 horas, em determinada subárea da Medicina Veterinária, cujo enfoque é tornar o discente apto a exercer sua função, mediante aquisição do título de Médico Veterinário. Neste sentido, o presente relatório teve como objetivo principal demonstrar as principais atividades exercidas pela discente Gabriela Cibele Nascimento da Silva, sob orientação e supervisão, respectivamente, da professora Drª Maria Betânia de Queiroz Rolim e da Nutricionista Suzana Maria de Oliveira Guerra Costa; e como objetivo secundário, relatar os fatores que afetam a inocuidade dos alimentos de origem em estabelecimento comercial de alimentação. O ESO ocorreu no período de 21 de novembro de 2024 a 07 de fevereiro de 2025, na Nutreat Consultoria Nutricional LTDA. O estágio permitiu compreender a vivência do Médico Veterinário como responsável técnico na indústria alimentícia, colocando em prática os conhecimentos adquiridos na universidade como as boas práticas de fabricação e manipulação e legislação vigente.

    The Estágio Supervisionado Obrigatório (ESO) is the mandatory discipline of the eleventh period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on the practical experience of 420 hours, in a certain subarea of veterinary medicine, whose focus is to make the student able to perform his/her function, through the acquisition of the title of veterinarian. Therefore, the main objective of this report is to demonstrate the main activities carried out by the student André Emidio da Silva, under the guidance and supervision, respectively, of Professor Maria Betânia de Queiroz Rolim and Narayana de Araújo Silva. The secondary objective was, to report a case report of IVF and FELV in a cat. The ESO occurred from 14/02 to 27/05 of 2022, at Clínica Veterinária Saúde PET, located in the Neighborhood of Peixinhos, Olinda-PE. The ESO allowed for improvement in the area of small animal medicine, being essential for the training of the general practitioner veterinarian and personal development.

    Frequência de dermatopatias caninas e felinas atendidos no setor de dermatologia veterinária no HOVET-UFRPE durante o Estágio Supervisionado Obrigatório

    The Obligatory Supervised Internship (ESO) was carried out at the Veterinary Hospital of the Federal Rural University of Pernambuco (HOVET - UFRPE), located in Recife / PE, in the area of Veterinary Medical Clinic of Small Animals, from March 12 to May 27 of 2019, under the direction of Prof. Dr. Maria Betânia de Queiroz Rolim, totaling 420 hours. During this period, visits to the small animal medical clinic (CMPA) and veterinary dermatology were followed. The objective of this report was to describe the infrastructure, the operation and the activities performed at the internship site, to expose the casuistry followed in the care of the CMPA and the veterinary dermatology, as well as to report the frequency of canine and feline dermatopathies treated in the dermatology sector in HOVET-UFRPE during the obligatory supervised internship. A total of 660 cases were attended, of which 517 general and 143 dermatological cases. The most frequent dermatopathies were allergic dermatitis 44,05%, with allergic dermatitis to ectoparasite bite (ADEB) 55,55%, atopic dermatitis (AD) 34,92% and food hypersensitivity (FH) 9,52%, followed by bacterial dermatopathies 20,27% and parasitic 16,78%. A good anamnesis, associated with the correct physical evaluation and dermatological approach, with the help of complementary exams is necessary for an accurate diagnosis of the dematopathies, thus guaranteeing a better quality of life to the animals.

    The Estágio Supevisionado Obrigatório (ESO) is the compulsory subject of the eleventh period of the bachelor's degree in Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). Through this it is possible to apply the knowledge obtained during the course in the practical performance of the professional area chosen by the student. It is based on the practical experience of 420 hours, in a certain sub-area of veterinary medicine, whose purpose is to make the student able to perform his/her function, by acquiring the title of veterinarian. In this sense, the main objective of this report is to demonstrate the activities carried out by the student in monitoring the laboratory routine corresponding to the Federal inspection programs of products of animal origin required by the Ministério da Agricultura, Pecuária e Abastecimento (MAPA) and carried out by the Laboratório Federal de Defesa Agropecuária (LFDA), experiencing procedures such as microbiological analyses, packaging of samples under analysis, quantitative evaluations, issuing reports and the disposal and cleaning of some materials, under the guidance and supervision, respectively, of Professor Dr. Maria Betânia de Queiroz Rolim and Federal Agricultural Tax Auditor and Technical Responsible of the Laboratório de Microbiologia dos Alimentos of the LFDA, Dr. Katarina Mendonça Ribeiro; and as a secondary objective, to investigate the prevalence of Salmonella spp. in chicken carcass in the Programa Nacional de Controle de Patógenos – PNCP/MAPA. The ESO took place from February 14 to May 26, 2022, in the Microbiologia dos Alimentos sector of the LFDA/PE, which is one of the six laboratories accredited to the national network linked to the Secretaria de Defesa Agropecuária, through the Coordenação-Geral de Laboratórios Agropecuários – CGAL/DTEC/SDA. The internship made it possible to acquire knowledge of current norms in the federal inspection of products of animal origin, both for the purpose of export and for consumption in the domestic market, and also measured the prevalence of an important pathogen in chicken carcass during the period that the Internship.

    Hipotireoidismo em cães – Relato de caso

    This report is the result of the Mandatory Supervised Internship in Veterinary Medicine in the Small Animal Clinical and Surgical Clinic area conducted at the Clínica Veterinária Arionaldo de Sá, located in Recife, from September 18, 2018 to December 7, 2018, as a partial completion requirement. With the objective of describing the casuistry followed and reporting a case of interest. During the internship period, it was possible to follow the activities of the general care routine, where a case of a dog with metabolic and systemic changes suggestive of hypothyroidism was selected. After clinical evaluation of the animal the suspicion of hypothyroidism was confirmed through the hormonal dosage of fT4, and hormone replacement therapy was prescribed as recommended in the literature. The Mandatory Supervised Internship in the chosen area proved to be an indispensable and very important moment for professional training, since it enabled the practice of the knowledge acquired during the course and the exchange of information and knowledge with experienced professionals.

    The EstágioSupervisionadoObrigatório (ESO) is a mandatory discipline of the eleventh period of the bachelor’sdegree in veterinary medicine at the Universidade Federal Rural de Pernambuco (UFRPE). It is based on the practical experience of 420 hours, in a certain area of veterinary medicine, whose focus is to make the student able to perform their function, through the acquisition of the title of veterinarian. In this sense, the main objective of this report was tocarry out monitoring of sanitary and industrial inspections in establishments of products of animal origin, in the Metropolitan Region of Recife, registered with the state inspection service; the specific objective was to report on the preparation of an educational folder on the importance of inspecting products of animal origin for unique health. The ESO was carried out at the Agencia de Defesae FiscalizaçãoAgropecuáriado Estado de Pernambuco (ADAGRO), under the guidance of professor Dr. Maria Betânia de Queiroz Rolim and supervision of the State Agricultural Inspector Dr. Glenda Mônica Luna de Holanda. The corresponding period was from may29th to august 9th, 2023. With the experience of ESO, professional and personal growth is notorious, whose experiences occurred in the practice of veterinary medicine theorized in important disciplines in the long years of graduation, as well as of citizenship in teaching and learning actions with people.

    The Mandatory Supervised Internship (ESO) is a compulsory course in the eleventh period of the Veterinary Medicine bachelor's program at the Federal Rural University of Pernambuco (UFRPE). It is based on 420 hours of practical experience in a specific subfield of veterinary medicine, aiming to make the student capable of performing their duties upon acquiring the title of veterinarian. In this context, the main objective of this report is to demonstrate the primary activities carried out by the student Amisterdam Roque da Silva Filho, under the guidance and supervision of Dr. Maria Betânia de Queiroz Rolim, veterinarian Pedro Generino da Silva Júnior, and veterinarian Márcia Maria de Souza Belo. The secondary objective is to report on the inspection of vacuum-packed beef in a supermarket distribution center. The ESO took place from April 1 to May 10, 2024, at the company Noronha Pescados, and from May 13 to June 14, 2024, at the Arco-mix supermarket distribution center. The internship provided practical learning of the skills necessary for proficiency in the profession as a technical supervisor.
