The Mandatory Supervised Internship is part of subject for undergraduation of the course of Veterinary Medicine at the Universidade Federal Rural de Pernambuco (UFRPE). The student completed his total workload of 420 hours from 12 August to 25 October and was carried out at two poultry companies, Cobb Vantress in Guapiaçu-SP and G3 Agroavícola in Riacho das Almas-PE. The internship was directed to the poultry production area. In both companies visited it was possible to see daily, the management and rules of biosecurity. The internship aimed to aggregate aspects of biosecurity and management-level technologies that can be applied in Poultry Farms so the bird can achieve its genetic potential, as well as to know Grandparents Farms and Hatchery in order to deepen knowledge of the poultry pyramid. The internship makes a great contribution at the practical learning level, thus being a discipline of the UFRPE Bachelor of Veterinary Medicine course of extreme importance for the development and deepening of theoretical and practical knowledge for the students.

Modern societies are increasingly concerned about the impact of food processing on the environment. The poultry industry has faced problems with the marketing of laying hens due to their lower sensory quality compared to chicken meat, generating environmental pollution and disposal costs. The objective of this study was to prepare hamburger from chicken meat enriched with oat bran. Three formulations were prepared, T1 with 5% of its weight added of oat bran and 5% of fat, T2 with addition of 10% of bran and T3 with addition of 10% of fat. The burgers were evaluated for physical-chemical, physical and sensory aspects. Only the results regarding the lipid content presented significant differences for p <0.5, the hamburger elaborated with the T3 treatment, presented the highest percentage of lipids (8.14 g / 100 g). Aa and pH were statistically the same for all formulations. The treatments did not differ in relation to the evaluated color parameters, and after being baked they presented darker coloration than the raw samples. For the texture analysis, the T3 treatment obtained a lower yield (71.18%) compared to the other treatments T1 (83.98%) and T2 (84.63%). T1 treatment presented the best results in sensory evaluation and purchase intention (4.49), indicating the possibility of insertion of the product in the market.

Today, Brazil is the largest exporter of chicken meat in the wolrd and also the second biggest productor. The state of Pernambuco was responsible for 1,02% of slaughters. In 2018, the production of eggs has achieved 39.923.119.357 units. Inside this, 99,74% was destined to inside market. In the last few years the coturniculture has presented a nice development, fitting into new production technologies. The veterinary has a important function in the development of aviculture, being responsible for the production following sanitary laws and ensuring a better productivity of the birds. The goal of this mandatory and supervised internship was report the current reality of the poultry production, participating in activities developed in several sectors of aviculture. Between 03/12/2019 and 04/23/2019, activities of factories of bird food, bromatology labs, hatchery, egg matrix and cut chicken farms in the Mauricéa Alimentos do Nordeste LTDA company were followed. Between 05/02/2019 and 06/03/2019 the experience was on the commercial stance farm Ovo Novo and Ovinho Novo, respectively manufacturers of commercial eggs and quail eggs. Both are part of the J. Florêncio Avicultura LTDA. company and, even in different segments, have convergence in biosecurity and quality production.

The search for the threat of growth promoters for poultry feed, the search for substitute products that enable them to act on current antimicrobials, maintaining intestinal strength and the health of other organs, provide good nutrient absorption efficiency and good production rates. Probiotics, prebiotics, symbiotic and biological, and the prominent and close, are the perspective of alternatives to their positive action on animal health. Moringa is a fast growing plant with adaptation in tropical climates, it has several uses and it is in state of animal nutrition, having appeared some studies on the importance of vegetal nutrition, limiting the amino acids for the birds. Moringa oil also has therapeutic components, which are found largely under the health and performance of animals. The present study was about the effect of Moringa oleifera Lam oil on the liver of Japanese quails. A total of 120 birds with 18 weeks of age, distributed in a completely randomized design, housed in galvanized wire cages with dimensions of 33 x 30 x 18 cm (depth x width x height), equipped with drinking fountains and glass fountains were arranged on three floors, mounted on a ladder. The experiment was conducted at the Bird Research Laboratory (LAPAVE), located in the Animal Science Department of the Federal Rural University of Pernambuco. The experiment had five treatments, of 0; 0.5; 1; 1.5; 2.0% Moringa oleifera oil in the removal of soybean oil. At 36 weeks old, quail were sacrificed and the liver collected 4 birds from each treatment, ie 5x4 = 20 other organs, in order to look for signs of toxicity or improvement. The collected liver was preserved in 10% formalin solution, later these samples were taken to the animal histology laboratory where the histological slides were prepared. After the preparation of the laminae, a microscope was read where the lesions were described. We can observe that higher levels of soybean oil contributed to the presence of fatty liver, and that from 0.5% inclusion of Moringa oil we observed improvements in hepatic tissue, this effect is justified due to the presence of tocopherols, flavonoids and antioxidants present in the oil. With the present work we conclude that from the inclusion of 0.5% Moringa oleifera oil in Japanese laying quails feeding, it had an antioxidant effect against lipid peroxidation, increased ability to regulate membrane permeability of hepatocytes increasing its defense against the aggression of substances harmful to the organ that could cause greasy liver, thus also being able to highlight antinflammatory action with the increase of the activity of the cells of Kpuffer.

The purpose of this work is to describe the activities carried out during the mandatory supervised internship (ESO), a required course for the completion of the Veterinary Medicine degree at the Federal Rural University of Pernambuco. The internship was conducted in the sectors of Mauricéa Alimentos LTDA, Estrada de Limeira Grande, S/N – km 02 Rural Zone, Carpina-PE, under the guidance of Prof. Dr. Érika Fernanda Torres Samico Fernandes Cavalcanti, from April 3, 2024, to July 14, 2024. During the internship, it was possible to participate in the routine of 5 different sectors of the company: the Feed Factory, the Breeding Unit, the Hatchery, the Integrated Farms, and the Slaughterhouse. This allowed for a comprehensive view of broiler chicken production, from feed to slaughter, observing all stages and the veterinarian's role in each. In all sectors, the necessity and effectiveness of biosecurity measures promoted by the company's employees were notable, demonstrating how crucial this factor is for poultry farming, animal production, and biosecurity. This makes it an extremely relevant topic to be addressed in chapter 2.

A avicultura é uma atividade econômica de grande importância no mundo, e tem como objetivo principal a produção de carne e ovos a partir da criação de aves. Esta atividade envolve diversas etapas: matriz, incubatório, frangos de corte, aves de postura, fabricação de ração e abate e processamento dos produtos para consumo humano. O objetivo do estágio foi acompanhar os manejos de produção avícola realizados na empresa Ferraz Avícola, tendo sua sede no munícipio de Belo Jardim – PE. Dentre as atividades realizadas no período do estágio se destaca os manejos das matrizes para produção de ovos férteis e saudáveis; no incubatório foi realizado a incubação dos ovos férteis, acompanhar todo o processo da seleção dos ovos para incubação até os nascimentos dos pintainhos e pintainhas; na fábrica de ração foi realizado o acompanhamento de produção, desde a seleção de matérias primas até o produto final (ração); nos frangos de corte foi realizado alojamentos dos pintainhos e pintainhas e várias visitas técnicas nas granjas dos integrados; nas poedeiras foi realizado e acompanhado os manejos de produção diários realizado nas poedeiras e nas codornas de postura. Em síntese, o estágio foi de grande importância, pois agregou conhecimento prático na área de avicultura, adquirir novos conhecimentos em cada setor, onde foi possível fazer uma interligação de todas as matérias profissionais que tive durante o curso e por fim tive contato com vários funcionários da empresa, adquirindo experiência na gestão de pessoas.

As part of the curriculum for the bachelor's degree in Veterinary Medicine, ESO in essence aims to provide practical experience in the professional field. In this work, the activities aimed at industrial poultry were reported, experienced in the companies Guaraves-PB and Ovo Novo-PE, being carried out at two different times, starting on June 27th to August 17th, 2022, in Guaraves, contemplating 300 hours ; the remaining 120 hours were completed at the company OvoNovo, from August 22 to September 12, 2022, thus totaling 420 hours of practical activities. Due to the practical activities carried out in the companies, it is possible to highlight the need to know industrial poultry farming, to form a complete professional but with great responsibility and pride in the finished product; highlighting in the second chapter of this work, the handling in the initial phases as an influence on the results obtained at the end of the batch. Thus, the focus of the work was to show through results how important a management work is especially in the initial days of the batch, seeking the environment for the ideal development of the bird.

O presente trabalho relata as atividades desenvolvidas no Estágio Supervisionado Obrigatório (ESO) realizado na empresa Mauricéa Alimentos do Nordeste LTDA, abordando o funcionamento da cadeia produtiva da avicultura de corte. O estágio foi conduzido no período de 06 de janeiro a 04 de março de 2025, abrangendo setores como laboratório de controle de qualidade, fábrica de rações, granja de matrizes para produção de ovos férteis, incubatório, granjas de frango de corte integradas e abatedouro. Durante a experiência, foram acompanhados processos de produção e análise de qualidade das matérias-primas e dos produtos finais, além da supervisão do manejo sanitário e nutricional das aves. O estágio possibilitou a aplicação prática dos conhecimentos adquiridos na graduação em Zootecnia, promovendo o aprimoramento técnico e profissional do estagiário. A vivência proporcionou uma visão ampla da avicultura industrial, destacando a importância do controle de qualidade, bem-estar animal e eficiência produtiva para o sucesso da atividade avícola.

Este relatório descreve as atividades desenvolvidas durante o Estágio Supervisionado Obrigatório (ESO) na Mauricéa Alimentos do Nordeste LTDA. O estágio focou no funcionamento da cadeia produtiva avícola e foi realizado de maio a julho. Durante esse período, os participantes trabalharam em vários departamentos da empresa, incluindo o laboratório de controle de qualidade, fábrica de ração, granja de matrizes para ovos férteis, incubatório, granjas integradas de frangos de corte e abatedouro. As atividades envolveram o monitoramento dos processos de produção e a análise da qualidade das matérias-primas e dos produtos finais. Além disso, eles observaram e supervisionaram as práticas de manejo sanitário e nutricional das aves. O estágio permitiu a aplicação prática dos conhecimentos adquiridos durante a graduação em Ciência Animal, contribuindo significativamente para o desenvolvimento técnico e profissional do estagiário. The present work reports on the activities that were carried out during the Estágio Supervisionado Obrigatório (ESO) at Guarabira Alimentos LTDA. (Guaraves), from October 2, 2023, to December 22, 2023, in the city of Guarabira–PB, with a workload of 420 hours. The Brazilian industrial poultry farming is one of the main sectors of Brazilian agribusiness, with the country currently being the world's largest exporter of chicken meat and the second-largest producer. The internship aimed to monitor the activities of the broiler chicken production chain through practical management activities in heavy breeders' farms, incubation management for one-day chick production, regular visits to broiler farms for health analysis and batch management, chick reception and collection, commercial egg farms, commercial egg processing centers, and slaughterhouses. The management of fertile eggs is a complex task with various layers in its production chain, starting from the breeder farm, focusing on the management of breeding birds, especially in fumigation and egg storage. The refrigerated handling of the egg room ensures a reduction in the initial batch mortality rates, proposed case report, part of an interventional analysis in the management of a heavy sow farm, aiming to seek the ideal management to reduce the initial mortality of the flock. The internship provided hands-on experience in the routine of the poultry production chain, aiming for a successful outcome in all possible stages. The ESO significantly contributes to the professional development of the student through practical experiences used in the professional routine, preparing them for various day-to-day situations.

O Estágio Supervisionado Obrigatório (ESO) tem como finalidade integrar os conhecimentos teóricos adquiridos ao longo da graduação com as práticas profissionais vivenciadas em campo. O estágio foi realizado em duas empresas de destaque no setor avícola, inicialmente na Globoaves São Paulo Agroavícola Ltda em Cascavel-PR, com 220 horas no período de 22 de abril de 2025 a 30 de maio de 2025, tendo como o acompanhamento das atividades relacionadas a biosseguridade em granjas de matrizes pesadas nas fases de recria e produção, manejo alimentar, hídrico, cama aviária, iluminação, controle de ambiência, programa vacinal, coleta de ovos férteis, seleção de aves matrizes pesadas, descarte de resíduos e coleta de materiais biológicos para monitoramento sanitário. Além disso, foi possível o acompanhamento de atividades de rotinas do incubatório como a recepção e classificação de ovos, processos de incubação, transferência, vacinação (in ovo e spray), nascimento, classificação e transporte de pintinhos, embriodiagnóstico, teste de densidade e fertilidade de ovos, perda de umidade de ovos e coleta de materiais biológicos para monitoramento sanitário. A segunda parte do estágio foi realizada na empresa MercoLab Laboratórios Ltda em Cascavel-PR, com 200 horas no período de 02 de junho de 2025 a 08 de julho de 2025, realizando o acompanhamento de atividades nos setores de produção de meios de cultura, necropsias, microbiologia geral, micotoxicologia, histopatologia, sorologia e biologia molecular. Além disso, foi possível relatar um caso de tifo aviário em poedeiras comerciais no Oeste do Paraná, descrever diagnóstico laboratorial e reforçar a importância da biosseguridade e vacinação em granjas comerciais. Objetivou-se com esse relatório apresentar com aprofundamento a rotina de grandes empresas brasileiras atuantes nos setores de produção avícola e diagnóstico laboratorial, com ênfase na produção de ovos férteis, pintinhos de um dia, sanidade avícola, diagnóstico laboratorial e relato de caso, contribuindo significativamente para a formação técnica e profissional do médico veterinário.
