The work was carried out in the caatinguinha village belonging to the group of villages of the Truká People (Island of Asunción), located in the city of Cabrobó -PE, pertaining to meso-region of Pernambuco and microregion of the Valley of the Francisco, at an altitude of 325 meters and distant 536.1 km from the capital Recife. In order to carry out and apply the questionnaire, we searched for data pertinent to the village in the Base of Indigenous Peoples, in order to know how many families lived in the place and what the places of delimitation as beginning and end of the village.The survey reported that there were 49 families inserted in the locality, of which only 16 were animals, and these families were interviewed, with the purpose of describing theanimal production in the village. Thus, the objective was to analyze the physicochemical and microbiological characteristics of curd cheese, with and without registration sold during the dry and rainy season in the city of Serra Talhada-PE. Twenty samples of rennet cheese were acquired at the different commercialization points of the city and in two different periods (dry and rainy), ten were registered cheese and ten without registration. A completely randomized design with 2x2 factorial design (two periods, rainy and dry and cheeses with and without registration) was used. The results were subjected to analysis of variance and Tukey test at 5%, using the Minitab version 16.2.3 program. In the physicochemical analyzes, the pH, acidity, fat, mineral matter and humidity did not differ statistically (p> 0.05 ), but there was a difference for the temperature (p <0.05), being the average of the cheese without and registered in the dry and rainy period of 19, 20, 8, and 13° C respectively. The protein presented statistical difference for the two studied variables (periods and registration), being the averages for the cheese with and without registration, in the dry and rainy periods of 20,43%, 21,20% 25,665 and 23,30%. . Of the cheeses registered, 90% of the analyzed samples, in the dry and rainy period, presented positive results for the presence of thermotolerant coliforms. For unregistered cheese, 100% of the samples were contaminated in both periods analyzed. For the presence of Salmonella, cheeses registered at 20% were contaminated with the bacteria. In the rainy season, 60% of the unregistered cheeses were positive, while 80% of the samples had contaminated cheeses. The result for Staphylococcus aureus analysis was negative in 100% of the samples in both periods analyzed. The rennet cheese sold in the municipality of Serra Talhada, presents contamination by microorganisms that can cause serious damage to the health of consumers, in addition to improper storage temperature.Item Padrão de segurança e soberania alimentar e nutricional das famílias agricultoras da comunidade Carnaúba do Ajudante – Serra Talhada (PE)(Universidade Federal Rural de Pernambuco (SEDE); Unidade Acadêmica de Serra Talhada; Administração, 2011) Silva, Fabiana Maria daAs ações de extensão são de fundamental importância para a sociedade como um todo, sendo parte constitutiva dos alicerces que fundamentam a Universidade, no tripé ensino-pesquisa-extensão. Assim, o Núcleo de Estudos, Pesquisas e Práticas Agroecológicas do Semiárido – NEPPAS, que tem por objetivo fortalecer a Agriculta Familiar e Camponesa de nossa região traz como proposta o presente projeto: realizar um diagnóstico do Padrão de Segurança e Soberania alimentar da comunidade de Carnaúba do Ajudante. A ação consistiu na elaboração e aplicação de um questionário sócio-econômico entre os agricultores e agricultoras com vistas a identificar o padrão de segurança e soberania alimentar das famílias. Foi identificado que todas as famílias encontram-se em insegurança alimentar e nutricional e não possuem soberania sobre o que consomem. Outros aspectos também foram levantados, como a questão do lixo, por exemplo. A partir desse levantamento, foram realizadas oficinas com o objetivo de melhorar a qualidade de vida dos agricultores e agricultoras, através de uma alimentação segura e saudável, além de conscientizar os mesmos sobre a importância de uma alimentação equilibrada, sem contaminação, sendo a mais natural possível além da própria preservação do meio em que vivem.
