    The objective of this work is to report all the activities carried out in the Obligatory Supervised Internship (ESO), in the fish processing company COMPESCAL - COMÉRCIO DE PESCADO ARACATIENSE LTDA, located in the city of AracatiCE, in the months of May and June 2019. In the stages of the shrimp processing Litopenaeus vannamei, in two forms, whole shrimp and headless shrimp, as well as the processing of the lobster Scyllarides brasiliensis (lobster shoe), Panulirus laevicauda (green Cape lobster) and Panulirus meripurpuratus (red lobster). From the arrival of the raw material in the reception sector, until the finalization of the process known as expedition. The laboratory analyzes were also followed, as the company checks the hygiene of the salon and its employees regarding Good Manufacturing Practices (GMP), verification of the quality control of the fish and other knowledge that a food company has to to offer.

    The use of marine resources for various purposes has been used by society since the earliest times, consuming fish is among FAO's recommendations as an ideal for high-protein food. Faced with technological innovations and growth of industries, the beneficiation has much to add, from the moment the population proposes products that are easy to prepare, or semi-ready, which saves time at the time of preparation. This report describes some of the beneficiation activities at the company Qualimar Pescados, where shrimps, fish andlobsters are processed, these fish according to the type of processing can offer different types of final products. And it also discusses the standards of quality, marketing and other knowledge that a food industry has to offer.

    Análise das condições de comercialização de crustáceos e moluscos de mercados públicos e supermercados da cidade do Recife

    At the Metropolitan Region of Recife the commercialization of molluscs and crustaceans is quite frequent and it is concentrated at supermarkets, smal markets and public fairs. This work intends to acssess the hygienic-sanitary conditions and price progression of those establishments. Unscheduled visits were made in ten different locations during the months of July and September in order to collect informations. Among those visited, seven of them were within the requirements established by the legislation, but three made several mistakes regarding sanitary conditions, being two of them being totally careless in relation to the involved high hygiene practices, presenting food without refrigeration, with foreign matter inside the packaging, product deformed colours, and presence of odors that denoted the deterioration of the food sold. At the establishments that were in accordance with what the standards recommend, there has a greater volume of products offered and a greater security of finding the necessary quality to guarantee health and people's well-being. Regarding prices, most products did not change during the survey period, except for one that had an increase of 14%.

    The growth of the human population has led to the search for productive maximization in several food production chains. Among the proteins of animal origin fish have excellent biological value and are easily digested by the human body. On the other hand fish have biochemical characteristics that facilitate their colonization by microorganisms with pathogenic potential, thus making it necessary to adopt measures to combat the spread of Foodborne Diseases (DTA's). Seeking to verify the conditions of commercialization of fish in establishments at Metropolitan Region of Recife unscheduled visits were made between the months of July and September 2022, at 11 different market places. There, were carried out observing the practices related to the handling, storage and progression of fish. fish prices as well as the sanitary conditions of the environment where they were marketed. The places that were classified as fairs or public markets had the worst sanitary conditions, having several products with clear signs of deterioration, in addition to inappropriate environments for food handling. The establishments that were supermarkets met the legal requirements for the commercialization of fish, except in specific situations.

    The fish commercialization has great relevance in the local economic scenario, including in the metropolitan area of Recife, as it is a coastal city surrounded by large rivers and the sea, which makes it possible to obtain \ generation of fish, also having a wide range of breeding and producers of this means of production in the surroundings areas. Such products are usually sold in supermarkets, fairs and public markets and may present different hygienic\sanitary conditions that directly interfere with the health of the consumer. In order to evaluate these conditions in the hygienic and sanitary scope, as well as the quality of the products made available to society as a whole, a bibliographic review was carried out using research and academic publications carried out in recent years as a theoretical basis, as a subsidy and framework for this production. The criteria taken into account were the handling, hygiene care of the product, storage location, treatment and organization of establishments that sell these fish.

    Avaliação da qualidade do pão francês de massa congelada com diferentes combinações de melhorador de farinha de trigo

    The growth in the number of bakeries and the increase in the consumption of bread has contributed to new investments in this sector, such as the frozen bread market, which is on the rise. This new trend is attracting the attention of bakeries, allowing greater practicality, standardization of the product, cost reduction and increase in the shelf life of the dough. The mass freezing effect can be minimized through the use of better wheat flour and ingredients used, making it possible to improve the quality of the final product through its application. The present work sought to evaluate five formulations, being a standard, the French type of frozen dough, changing the content of the best flour; content of mixtures of enzymes (glucose oxidase - Gox, alpha amylase, phospholipase and hemicellulase), emulsifiers and oxidants, observing an interaction of these, in order to obtain breads within the quality standards; specific volume, shape, lash opening, loss of mass and bread yield. As a result, with the exception of the F5 or control application (F2, F3 and F4), which concentrate more flour oxidizing agents (ascorbic acid, ADA), emulsifiers (Datem and SSL) and enzymes (alpha amylase and gox) resulting in a greater specific volume of bread, being classified as very large, as well as the standard pattern. The lash opening was around 50 mm for all formulations, except for F2, which may have been influenced by the concentration of enzymes. For the shape of the loaves, all are spherical. There was no statistical difference in water loss and yield. It can be concluded that the breads selected from the four frozen pasta formulations studied include satisfactory values, in general, in relation to the recommended parameters, compared to the standard standard. In this way, a company has new formulations that can replace the best commercial. However, the adoption of the F5 application was suggested, due to the better specified volume.

    Influência do transporte e cuidados pós-colheita na comercialização de hortaliças na FAST - Feira Agroecológica de Serra Talhada

    Organic agriculture has become a very relevant alternative when it comes to the consumption of healthy foods and stands out for the quality with which the products arrive at the table of the consumer. With this, agro-ecological fairs are characterized as an important means of commercialization of these products. However, these foods have a high perishability in nature. Post-harvest losses become frequent when uncollected, sanitized, packaged, stored and transported to the place of sale in the proper form. It is worth mentioning that the wrong accommodation in transportation provides depreciation in the quality of food. Therefore, the present research was developed at the agro-ecological fair of the city of Serra Talhada-PE, aiming to describe the different forms of care in the harvest, post-harvest and transport processes, and the effects on the commercialization, having as specific list : the main vegetables produced and the post-harvest care and; to analyze the influence of the different types of transport,packaging / storage and exhibition used during the commercialization of the vegetables. Observations were made on the properties of each farmer, taking into account characteristics such as: harvesting, packaging and transportation. Already in the fair: the hygiene, the freshness, the kneading, and the consistency (wilt) of the products, were the criteria studied. During the harvesting process it was possible to verify that the forms of packaging and the types of vehicles used for transportation were the factors that most influenced the appearance of the products, contributing in the percentage of losses and consequently in damages to the producers. The exposure time and the local temperature during the fair operation were factors that contributed to the depreciation of the products sold.

    Feeding is one of the factors that most upsets animal production. As a result, the irregularity of food supply in the semi-arid region is one of the factors that preoccupies cattle ranchers in the region. In order to reduce such costs, the food can be produced on the property where the livestock is already exploited. An alternative widely adopted as a way of feeding is the use of native vegetation, this vegetation although adapted to the climatic conditions of the region, yet suffer from them, and one of them is the evapotranspiration that is the great barrier to be overcome. For this purpose, the mulching of the soil deserves attention. Thus, the objective was to evaluate the production and bromatological composition of Jureminha cultivated in the presence or absence of dead cover of Nim. Some of the data collected were evaluated in an experiment that was conducted in the period from January 20, 2016 to May 15, 2018. This test was carried out in the experimental field belonging to the Federal Rural University of Pernambuco, Academic Unit of Serra Talhada. The data used in this work were those obtained in 2017. In total, two cuts weremade, the first being May 31 and the second onAugust 08, 2017, where dry matter (DM) production was evaluated, mineral matter (MM) 33%; 32%, crude protein (CP) 21%; 9.6%, neutral detergent fiber (NDF) contents 54.8%; 67.5%, acid detergent fiber (FDA) 31.6%; 49.6% and Lignin 8.8%; 8.2% of the leaf andstem fractions respectively, besides the productive variables leaf mass 275.4,stem mass916.1, total mass 1191.5(kg DM / ha). To perform the statistical tests, theprocedures PROC UNIVARIATE, GLM and MIXED of the Statistical Analysis System (SAS) software program were used. The treatment had no significant response (P> 0.05), and the short exposure time to mulching (155 days) may be the response to this factor. It was also observed the loss of plant vigor and this is related to the cutting frequency adopted for the cut intensity equal to 40 cm.

    Qualidade do queijo e leite de vacas recebendo dietas com substituição do concentrado convencional por farelo de glúten de milho

    The Northeastern dairy farming is characterized by the constant pursuit of technological improvements in order to optimize resources and achieve profitable results, especially when considering the adverse conditions of the semi-arid region of Pernambuco, such as the seasonality of food supply, high temperatures, and the distance from major grain distribution centers for animal production. In this perspective, the objective was to evaluate the effects of substituting soybean feed, wheat, and corn feed with corn gluten feed in diets containing Mexican Elephant Ear cactus forage on the physicochemical, microbiological, and sensory characteristics of pasteurized whole milk and cheese curd. Eight Holstein cows with a lactation period of 70 to 90 days, an average body weight of 500 kg, and a milk production of 20 kg per day were used and distributed in a double Latin square design (4x4), according to the following treatments: 100% conventional concentrate (CC); 66% CC + 33% corn gluten feed (CGF); 33% CC + 66% CGF; 100% CGF. Milk samples were collected at 6:00 AM and 3:30 PM during data collection days for subsequent pasteurization, physicochemical evaluation, cheese production for each treatment, microbiological analysis, and sensory evaluation. For physicochemical analysis, Dunnett's test was conducted at a 5% significance level, and for sensory analysis, the Friedman test was used. No effect (P>0.05) of CGF on the physicochemical variables of pasteurized milk was observed, despite the positive quadratic behavior for crude protein and decreasing linearity for acidity. The moisture content of the cheese curd was the only variable that differed (P<0.05), showing a negative quadratic effect, 60.09% and 58.38% for the treatments with 33% and 66% substitution with CGF, respectively. The cheese curd produced met the microbiological standards in current legislation. The sensory attributes that differed (P<0.05) were moisture and strange flavor. The highest purchase intention corresponded to the treatment with 33% substitution (P<0.0001). It is concluded that substituting conventional concentrate with corn gluten feed in the diets of lactating cows, despite not differing in the fat content of pasteurized milk and the yield of cheese curd, promotes higher profitability at substitution levels of 33% and 66% with CGF.
