    Aspectos culturais sobre o consumo de licor no Brasil: uma revisão bibliográfica

    According to Brazilian legislation, a liqueur is a beverage with an alcoholic strength of 15 to 50% by volume at 20°C and a percentage of sugar greater than 30g/L, made with potable ethyl alcohol of agricultural origin or simple alcoholic distillation of extracts or substances of plant origin, flavoring substances, flavors, dyes and other additives allowed in a complementary administrative act. The sales volume remains around 7 million liters per year, representing 2.9% of the Brazilian alcoholic beverage market, which makes the national consumer divide his attention between informally produced liqueurs and the big national and imported brands. Data indicate that the consumption of liqueurs in Brazil grows around 5% per year, a fact that motivates investment in this sector and increases market opportunities. Thus, the aim of this work was to evaluate the consumption of alcohol and especially liquor in Brazil and to understand the reasons that lead Brazilians to consume this product. The methodology used was bibliographical and documentary research, with a qualitative approach, with a descriptive and explanatory objective to elucidate motivations that lead to the consumption of liquor. Although the consumption of alcoholic beverages is high in Brazil, the consumption of liquor is still low, with its highest consumption being in the Northeastern states and only during the June festivities. Liquor is a drink consumed mostly by women, given its sweet taste. It was also noticed that, for respondents in two surveys, the price of the product is not something relevant at the time of consumption, but none of them reports to which social class the respondents belong. Since about 70% of the Brazilian population lives on up to 2 minimum wages, with 35.63% receiving up to one minimum wage, it is to be expected that cheaper drinks, such as beer or cachaça, are more consumed. Despite this, more research is needed, since the lacks researchs on the cultural and marketing causes of consumption of this drink.

    Avaliação higiênico-sanitária de um restaurante universitário localizado na Região Metropolitana do Recife - PE

    Since the beginning of the 20th century, profound changes have taken place in contemporary society. In order for the population to have a nutritious and quality diet, strict control is necessary through the legislation developed by the National Health Surveillance Agency (ANVISA) in the environments of the Food and Nutrition Units (UAN). The objective of the present work was to analyze the hygienic-sanitary conditions of a university restaurant located in the city of Recife/PE, taking as reference two checklists: the one of the Resolution of the Collegiate Board of Directors (RDC) nº 275, of October 21, 2002 and a prepared by the establishment itself. The methodology was a case study, with exploratory and descriptive purposes in a food production sector of a university restaurant, with operational procedures being evaluated from the observation "in loco". It was verified as main demands the emerging increase in the physical arrangement and the necessary improvement of the handlers for the zeal for hygienic care. Both checklists achieved a similar score, classifying the establishment in group 1, whose index demonstrates greater compliance with the verification items.

    The growing number of Japanese food restaurants in the northern part of the city of Recife, the breaking of paradigms regarding the taste of this gastronomic specificity, as well as its relationship with the consumption and eating habits of diners justifies the elaboration of this work, which aims to study the fads and food adaptations present in the habits of the population, related to the consumption of Japanese food, whether they really appreciate it or whether theyare influenced by marketing and culinary fads. In order to carry out data collection, the questionnaire was used, in addition to unsystematic and non-participant personal observation, based on these analyzes and for categorizing the data, graphs and tables were elaborated that enabled the results and discussions to be made feasible. . It was noted that there is a total adaptation of taste by Japanese food consumers and that there are also other factors that are associated with this frequency in restaurants. Another fact to be highlighted is the total possibility of the presence of a Home Economics professional working in the studied markets, with broad and active training in this area of research.

    Conhecimento e percepção de estudantes da UFRPE sobre alimentos probióticos

    Functional foods have become a global trend in the context of healthy eating and probiotics have proven to be important allies in this quest for better eating habits. With this growing market in mind, the research aimed to analyze the knowledge and perception of students at the Federal Rural University of Pernambuco (UFRPE) about probiotic foods. For this purpose, the study has a descriptive character, quantitative and qualitative approach and uses the Survey procedure. Data collection was carried out through the application of online forms prepared in Google Forms. The answers obtained showed that a significant number of students were able to correctly define probiotics, highlight the most important terms and correctly point out the benefits associated with these foods. However, they still do not consume it frequently enough to obtain the benefits offered by probiotics. The most mentioned motivations for consumption were related to the ease of finding products in supermarkets, academic readings, advertisements on social networks and medical or nutritional indication. Thus, it was found that students have a good level of knowledge and perception regarding probiotic foods, their benefits and terms related to the area, but still need to consume them in adequate amounts regularly.

    The Daily Dialogue on Safety and Quality (DDSQ) underscores the importance of food hygiene and hazards that can be prevented and / or prevented. In addition to contributing to the adequacy of food processing and handling to avoid outbreaks by food poisoning, eliminating risks to the health of diners, providing the support of qualified, satisfied and stable staff, minimizing the operational costs of the Food and Nutrition Unit(UAN). DDSQ is a very effective tool for reducing outbreaks caused by Foodborne Diseases. Given the above, this studyaimed to evaluate the importance of continuing training applied to employees of a UAN, as well as to evaluate the methodology used for continuing training and identify strengths and weaknesses of the applied training, and propose improvements and updates for better use. of the activities. This was a qualitative observational and descriptive case study, conducted in a Food and Nutrition Unit (UAN) located in a University Restaurant (UK) in the city of Recife. The training took place through lectures and dialogues, with the direct participation of the handlers. The methodology was divided into 3 stages, first held in weekly daily meetings and a questionnaire was applied to know the socioeconomic profile. In the second moment, the reading of the DDSQ was performed and in the third, the topic was debated presenting and evaluating the learning of the collaborators. They were applied to 37 food handlers, of which 42.2% were female and 56.7% male. The average age was 31.2 years, ranging from 19 to 54 years for men and 39.3 years for women ranging from 29 to 52 years. The handlers consider the DDSQ as an important training instrument (78.3%). Reading the DDSQ is a strong point at UAN because of its importance in contributing to the prevention of food contamination during the different stages of preparation. Through this work it has been confirmed that it is undisputed that training programs (DDSQ) are recommendable and effective means to impart knowledge and promote attitude changes in food handlers.

    Merenda escolar: uma questão de saúde e cidadania

    Hábitos alimentares saudáveis aprendidos na escola são levados por toda a vida e para que isso aconteça é necessário que sejam implantadas estratégias para a promoção de uma alimentação saudável nas escolas, permitindo a formulação de ações e atividades de acordo com a realidade de cada local, tendo a escola como protagonista deste processo, na viabilização e apoio à implantação das mesmas. Desse modo, torna-se fundamental a realização de projetos de orientação alimentar saudável, dos quais uma merenda escolar de qualidade é fundamental para a melhoria do estado nutricional e, consequente, qualidade de vida, com maior rendimento e benefício, despertando nos alunos mudanças em seu comportamento alimentar, atingindo toda a família. Assim, o Projeto de Extensão: “Merenda Escola: uma questão de Saúde e Cidadania” tem como proposta desenvolver um trabalho de intervenção através de oficinas de alimentação e saúde, de manipulação de alimentos e implantar orientação a família, considerando a perspectiva do Programa Nacional de Alimentação Escolar – PNAE.

    Obesidade infantil: uma visão interdisciplinar

    Overweight is already a problem that affects 1/5 of the child population and can result in a future generation of obese as obese children become obese adolescents and 80% of them reach adulthood also with obesity. There are several factors that generate this serious problem, among them are the influence of the media, poor eating habits, sedentary lifestyle, genetic factors and / or the combination of these and other elements.The objective of this monograph was to carry out a bibliographic survey on the subject of childhood obesity, with emphasis on the influence of the media, the perception of parents and the importance of the school.Searches were conducted using online databases such as Google ScholarandScientific Electronic Library Online (Scielo).From the works used in this research it was observed that the influence of the media and advertisements on the eating behavior of children and adolescents, as well as the time spent with television, internet and electronic games, is great.The family plays a very important role with regard to children's eating habits, as it is often the eatinghabits that it offers that will define which foods will be part of the child's taste.The school also has a great responsibility in the nutritional question, it is their duty to offer a nutritionally rich and diversified snack, both parties must work in tune to achieve the desired result.Therefore, it is essential that there be professional follow-up for the diagnosis of overweight or obesity in children and guidance on the most appropriate treatment. Parents and caregivers should be aware of the problem and should seek effective and sustainable strategies in the individual, family, school, community and other spaces where the child is inserted, so that the adoption of healthier living habits facilitated and promoted.
