The objective of this major field of study essay is to describe the internship environment and activities done during the academic discipline Estágio Supervisionado Obrigatório (ESO). This is a mandatory supervised internship of the Bachelor of Veterinary Medicine Course, at UFRPE, in the quality control sector, with a focus on compliance to good manufacturing practices and food safety, in order to guarantee quality products to the final consumer, in addition to analyzing the non-conformities found during the visits, and their interference with the final quality of the food. The ESO internship took place at Nutreat Consultoria Nutricional, a company located in a commercial room in the Setubal neighborhood of Recife, PE, from November 14, 2022, to February 17, 2023, under the supervision of the technical responsible and Veterinary Doctor Ana Laura Barboza Pereira, and guidance from professor Doctor Elizabeth Sampaio de Medeiros. Among the activities carried out during the internship was the inspection of hygienic-sanitary conditions in food production, filling out the establishment's specific quality control data sheets, and guiding the employees on the correct hygiene and best practices in food handling, among others. The internship also provided insight into the role of veterinarians in the food industry.
