Therefore, it is necessary that the processing companies are qualified to guarantee the consumer a safe, quality food without fraud. Consequently, the Mandatory Supervised Internship was carried out at Carapitanga Indústria de Pescados do Brasil LTDA, with the objective of enabling the experience of the routine of the quality control sector of a fish processing establishment, promoting the acquisition of experience in the industrial environment and placing in practice knowledge acquired during graduation. Food security is a fundamental issue, not only related to the identification of species, but to all stages of the production chain. Above all, the contribution of food safety and quality control programs to the improvement of establishments that process animal products it’s of high importance.
