The present work had as general objective to report the period experienced to the fulfillment of the discipline 08525 - Mandatory Supervised Internship (MSI) of the Bachelor's Degree in Veterinary Medicine; and as a specific objective, describe the procedures adopted by the health surveillance of Paulista - PE, in view of the irregularities observed in a commercial establishment in the city. The ESO took place during the period from March 2, 2020 to May 20, 2020, at the Secretaria de Saúde de Paulista, located in Paulista (PE), under the supervision of Superintendent Fábio Diogo da Silva; and at the Agência de Defesa e Fiscalização Agropecuária do Estado de Pernambuco (ADAGRO), located in Recife (PE), under the supervision of the State Agricultural Inspectorate Drª Glenda Mônica Luna de Holanda. All activities were carried out during the course 08525- Mandatory Supervised Internship of the Bachelor's Degree in Veterinary Medicine, from the Universidade Federal Rural de Pernambuco (UFRPE), under the guidance of Professor Drª Betânia de Queiroz Rolim. The ESO provided technical knowledge about the inspections carried out by the health surveillance of the Secretaria de Saúde de Paulista; and the laws frequently used to act, in the sector of artisanal products, of the State Agricultural Inspectors of ADAGRO. In this context, it was possible to understand the importance of the actions of the municipal health surveillance and of the defense and agricultural inspection of the state, which provide the commercialization of innocuous, safe and quality food.
