During the period from March 2 to April 14, 2020 from Monday to Friday, from 8 am to 5 pm, complying with the 8-hour daily regime and from August 18 to October 7, 2020, from Monday to Friday, from 8 am to 8 pm 14 hours, following a 6-hour regime, the workload of 420 hours of the Supervised Obligatory Internship (ESO) was completed at the Agricultural Defense and Inspection Agency of the State of Pernambuco (ADAGRO / PE) and in a Fish Processing Unit and Fish Products in the City of Recife. At ADAGRO, the activities carried out by the team of State Agricultural Inspectors located at the Headquarters, located at the Cordeiro Animal Exhibition Park, are monitored, among which are the evaluation of projects, inspections and collection of collection. In the Fish and Fish Products Processing Unit auditors were carried out in order to monitor compliance with the Self-Control Programs, as required by Ordinance 05/2017 of ADAGRO for absolutes registered with the agency. Salmon fillet research was carried out once a week in accordance with the sampling plan of precedence level II of MAPA Circular Memorandum 02/2018, which is the official control of verifying parasites in fish, the result of which of the samples analyzed was 0%. Concomitant with the research on parasites, a survey was also carried out using a virtual form on the population's level of knowledge about the risks of consuming raw or undercooked fish. The total of 330 people surveyed from several Brazilian states, it was found that they are aware of the dangers of this consumption, even though they do not know the importance of the work of health surveillance and quality control of a company. In this way, the research of parasites in fish in the industry and the performance of health surveillance with the other inspection bodies is of great importance for public health. This is because, in addition to these helminths causing organoleptic changes in fish, they can cause serious harm to consumers and great harm to the health system, therefore, the role of veterinary inspectors in verifying products of animal origin (POA) is essential, to ensure that the food arrives with quality and safety to the population's table.
